BAKED FISH IN FOIL WITH VEGETABLES



Baked Fish In Foil With Vegetables image

Number Of Ingredients 16

1 large fish fillet (I used walleye but any fillet is great!)
2 medium potatoes (wedges)
1 large carrot (sliced)
2 small peppers (red and green, cut in strips)
1 medium zucchini (sliced)
1 large tomato (sliced)
vegetable oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
juice from half a lemon
zest from half a lemon
3-4 garlic cloves (sloced)
medium or large baking sheet
aluminium foil
bamboo spatula
fork

Steps:

  • Pre heat oven to 475 F
  • Line a baking sheet with aluminium foil. Make sure you cover the surface evenly so the juice from the vegetables and fish won't spill out while cooking.
  • Place fish in the middle of the sheet.
  • Top with all vegetables.
  • Drizzle oil.
  • Add salt, pepper, lemon juice, lemon zest and garlic and mix well with your hands.
  • Wrap foil well and bake for 15 minutes.
  • Remove baking sheet from the oven, open the foil to expose the fish and return to oven. Bake for additional 5 minutes or until the fish gets a light golden crust.
  • Test with a fork as specified in the article above.
  • Enjoy your fish in foil!

1 ½ lb white fish fillet such as cod or halibut, ((1 to 1 ½ in thickness))
Kosher salt and ground black pepper
Extra virgin olive oil
Juice of ½ lemon (more for later)
8 ounces cherry tomatoes, (halved)
3 ounces pitted olives, (halved (I used a combination of kalamata olives and green olives) )
3 tablespoons minced red onion
4 to 5 garlic cloves, (minced)
1 tablespoon fresh thyme leaves
2 teaspoons dried oregano

Steps:

  • Heat the oven to 425 degrees F.
  • Pat the fish dry and season with salt and pepper on both sides. Brush a 9 ½ x 13-inch baking dish with a little extra virgin olive oil and put the fish in it. Squeeze ½ lemon juice all over the top of the fish.
  • In a medium mixing bowl, combine the tomatoes, olives, onions, garlic and spices. Add a very small pinch of salt and ground pepper. Add a generous drizzle (about 3 tablespoons extra virgin olive oil) toss to combine.
  • Pour the tomato and olive mixture over the fish.
  • Bake in the heated oven for 15 to 20 minutes (this will depend on the thickness of your fish).
  • Remove from the heat and serve.

1 1/2 lbs fish fillets (680 grams)
1/2 teaspoon sweet basil
1/2 teaspoon salt
1 ounce butter, melted (28 grams)
2 teaspoons lemon juice
1 cup soft breadcrumbs
1 cup cheese, grated
1 teaspoon parsley, chopped
2 tablespoons tomato sauce

Steps:

  • Place fish into a lightly geased baking dish.
  • Combine the breadcrumbs, cheese, basil, salt and parsley.
  • Stir together tomato sauce, lemon juice and melted butter.
  • Mix the crumb mixture into the melted butter mixture and spread evenly over the fish.
  • Cover with tinfoil and bake at 379 F (180 C ) for 30 minutes.

300g medium potatoes (about 3), thinly sliced
2 tbsp milk
40g mature cheddar , finely grated
1 tsp rapeseed oil
1 onion (160g), finely chopped
1 red pepper , deseeded and finely diced (270g)
2 tsp balsamic vinegar
1 tsp vegetable bouillon powder
400g can chopped tomatoes
½ x 30g pack basil , leaves picked and finely chopped
1 garlic clove , finely grated
280g pack skinless cod loins
100g frozen small Atlantic cooked prawns , defrosted
160g broccoli florets

Steps:

  • Boil the potato slices for 10 mins then drain, tip into a bowl and gently mix in the milk and half the cheese. Don't worry if the potatoes break up a little.
  • Meanwhile, heat the oil in a large frying pan and cook the onion until softened. Stir in the pepper and cook for 5 mins more. Spoon in the balsamic vinegar and bouillon powder, then stir in the tomatoes, basil and garlic. Lay the cod fillets on top, then cover and cook for 6-8 mins until the cod flakes when tested. Heat the grill to high.
  • Take off the heat, stir in the prawns and tip into a shallow baking dish, breaking up the cod into large chunks. Cover with the potatoes and sprinkle with the remaining cheese. Grill until golden. While it's grilling, steam or boil the broccoli to serve with the bake.

Have tried this with both salmon, cod and halibut, it was equally good with all. I often use wheat germ instead of breadcrumbs.

1 lb fish fillet (halibut, cod, haddock, pollock or even salmon, fresh or thawed)
1 egg
2 tablespoons milk
1 cup fine breadcrumbs
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 teaspoon Italian herb seasoning
1/2 teaspoon dry mustard
2 tablespoons olive oil or 2 tablespoons canola oil

Steps:

  • Preheat oven to 450f degrees.
  • Slice large fish fillets to size required.
  • Beat egg and milk together in a bowl.
  • Combine crumbs, salt, pepper, Italian herb spice and dry mustard in a bowl or on a plate.
  • Put oil on baking sheet and place in preheataed oven while coating fish.
  • Dip each piece of fish in egg mixture and then in bread crub mixture.
  • Press fish firmly into crumbs.
  • Place fillets on hot oil on baking sheet.
  • Flip immediately to ensure both side are oiled.
  • For half inch thick fillets, bake four minutes, turn and bake four minutes more.
