SWEET AND SAVORY SPICED NUTS

Steps:
- Preheat oven to 350°F with rack in middle. Lightly oil a 4-sided sheet pan.
- Whisk together sugar, spices, and 3/4 teaspoon salt in a small bowl. Whisk egg white in a medium bowl until frothy, then stir in nuts. Add spice mixture and toss to coat.
- Spread nut mixture in 1 layer in sheet pan. Bake, stirring once or twice, until dry and well toasted, about 20 minutes. Loosen nuts from pan, then cool completely.

SAVORY SPICED NUTS
After trial and error, finally came up with a nut recipe that was nicely spiced, and not greasy for the oil. These are wonderful snacking food, and great for serving with drinks.

Steps:
- Heat oven to 275 degrees.
- Whisk egg white and water until foamy.
- Toss with nuts, and pour into strainer.
- Strain for 3 minutes.
- Pour nuts into brown paper bag, and shake with spices until coated.
- Pour onto cookie sheet and spread out.
- Bake 15 minutes and stir.
- Lower heat to 225 degrees, and bake 1 hour, stirring a few times.
- Turn off oven and cool with door propped open.
- Store in airtight container.
SWEET & SAVORY SPICED NUTS
I found this recipe on familyfun.com They used pecans in the recipe, but I am sure you could sub any nuts you choose. They use a bit of canola or corn oil in the glaze, you could use a mild flavoured olive oil as well. These would be a great addition to any holiday goodie basket. They do say to avoid putting the nuts in plastic bags because the coating will rub off. The best method to package them would be in a small glass bowl wrapped with cellophane, or in a small decorative tin.

Steps:
- Toast pecans in a 350F oven for 6 minutes, or till they smell good & have started to change colour.
- Stir spice mix together.
- Combine glaze ingredients in a heavy pot, bring to boil over medium heat, whisk constantly.
- Stir nuts into glaze & continue stirring till all the nuts are shiny & the liquid is gone, about 1 or 2 minutes.
- Pour nuts in a mixing bowl, sprinkle on spice mix & toss to coat nuts.
- Spred on parchment lined cookie sheet and bake at 350F for 4 minutes.
- Watch carefully to make sure they don't burn.
- Cool & store in airtight container (but not a plastic bag).
SWEET AND SAVORY HOLIDAY PIE SPICED NUTS WITH BACON

- For the iced tea: Pour 8 cups boiling water over teabags in a heatproof pitcher and allow to brew, 3 to 5 minutes. Remove teabags and add sweetener to taste if using. Stir in 12 cups ice cubes until melted. Keep refrigerated until ready to use.
- For the holiday pie spice blend: Mix together the sugar, cinnamon, 1 1/2 teaspoons salt, allspice, ginger, cloves and nutmeg in a small bowl and set aside.
- For the nuts: Preheat the oven to 350 degrees F. Lightly oil a rimmed baking sheet.
- Put the egg white in a large bowl and whisk until frothy. Add the almonds, hazelnuts, peanuts and pecans and toss to coat in the egg white. Add the spice blend and toss to coat.
- Spread the nut mixture evenly out on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, then stir in the bacon and transfer to a large bowl. Serve with iced tea.

Steps:
- Preheat oven to 300 degrees F.
- Place nuts in a mixing bowl.
- Heat the oil in a small skillet with the rosemary until it becomes aromatic, then pour over nuts, and stir to coat evenly.
- Blend the sugar, cumin, chili powder, salt, black pepper, and red pepper together in a small dish and sprinkle over the nuts, and toss to coat well.
- Spread the nuts on a non-stick baking sheet and bake in the preheated oven for 15-20 minutes, or until the nuts are toasted, stirring nuts once during the cooking time.
- Allow to cool, then store in an airtight container.
