SQUID SAUTE WITH TOMATOES AND GARLIC

1 1/2 pounds squid, cleaned
15 garlic cloves, peeled
1/2 cup olive oil
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 large tomatoes, peeled, seeded and diced
1 bunch cilantro, chopped

Steps:

  • Cut the squid into 1/4-inch rings. Wash, dry and place in a mixing bowl.
  • Puree the garlic with 1/4 cup of the olive oil in a blender until smooth. Pour over the squid. Add the salt and pepper, tossing to combine.
  • Heat a dry medium skillet over high heat. Then add a generous tablespoon of the remaining olive oil and heat until almost smoking. Pour in one-third of the marinated squid and saute about 30 seconds. Stir in one-third each of the tomatoes and cilantro and cook about 2 minutes longer, just until the tomatoes dissolve and the garlic colors slightly. Transfer to a platter, wipe out the skillet and repeat two times. Serve hot over rice or Spinach Pilaf.

1 pound cleaned squid
4 tablespoons extra-virgin olive oil
Kosher salt, as needed
1 jalapeño chile, thinly sliced and seeded if desired
2 garlic cloves, finely chopped
Lime juice, as needed
1/4 cup chopped mint
Crusty bread, for serving
Sliced avocado, for serving

Steps:

  • Rinse the squid under cool running water. Drain and transfer to a paper towel to dry completely. Cut the bodies into 1/2-inch rings and leave the tentacles whole. Pat dry again with paper towels.
  • Place a large skillet over high heat. Let the pan get very hot, for a good 5 minutes. Move the squid from the paper towels to a bowl, so that they don't stick before you add them to the pan. Add half the oil to the skillet. Sprinkle half the squid with salt, slide them into the pan along with half the chiles and cook without moving for 1 minute. Flip squid and stir in half the garlic; cook 1 to 2 minutes more, until squid is tender. Transfer to a plate. Repeat with remaining squid, garlic, chiles and oil. Make sure not to overcrowd the pan; if your skillet doesn't fit the squid comfortably, cook them in smaller batches.
  • Squeeze lime all over the squid and sprinkle with mint.
  • Top the crusty bread with sliced avocado if you like, and season avocado with salt and lime juice. Serve with the squid.

PERSONAL PAELLA WITH SQUID AND SCALLIONS



Personal Paella with Squid and Scallions image

Ask my Catalan friend Pep and my Catalan-wannabe friend Ted which of the three of us makes the best paella, and prepare to hear much wailing and gnashing of teeth. Then you'll hear many excuses about exactly how and why I, neither having the privilege of a) growing up in Spain (Pep) nor b) having written a newspaper story about paella after interviewing the Spanish cooking authority Penelope Casas (Ted), managed to mop the floor with both of them in a paella cook-off when I lived in Boston several years ago. What can I say? The crowd was the judge, and the choice was clear. Of course, paella is a renowned dish for groups: In Spain, cooks will put a gargantuan paella pan over a huge fire to feed dozens. But with the right pan (I love my trusty steel crepe pan), it's easy enough to make for one, too.

1 cup seafood stock or clam juice
Small pinch of crumbled saffron
1/4 teaspoon pimenton (smoked Spanish paprika)
4 to 5 ounces cleaned squid, bodies cut into 1/4-inch rings and tentacles halved lengthwise
Kosher or sea salt
Freshly ground black pepper
2 teaspoons extra-virgin olive oil
1/8 teaspoon red pepper flakes, or more to taste
2 scallions, white and green parts, thinly sliced
2 cloves garlic, minced
1/3 cup Arborio, Bomba, or other short-grain rice
4 large cherry tomatoes, quartered

Steps:

  • Preheat the oven to 400°F.
  • Combine the seafood stock, saffron, and pimenton in a small saucepan over medium heat and bring to a simmer; reduce the heat to very low and cover.
  • Lightly season the squid with salt and pepper. In an 8-inch cast-iron or other heavy skillet, heat 1 teaspoon of the olive oil over medium-high heat. When it shimmers, add the squid and cook, stirring frequently, just until the squid lose any translucence and exude their juices, 30 to 60 seconds. Transfer the squid to a plate and decrease the heat to medium.
  • Add the remaining 1 teaspoon of oil, then the red pepper flakes, scallions, and garlic and sauté until the scallion starts to soften, another 2 to 3 minutes. Add the rice and cook until the grains are well coated with the pan mixture, 1 minute.
  • Pour in the hot broth and bring to a gentle boil. Decrease the heat to medium-low. Taste the liquid and add salt to taste, then let it continue to gently bubble, swirling the pan occasionally, for 8 to 10 minutes, or until the rice has swelled and absorbed much of the liquid; it should still be slightly soupy.
  • Stir in the squid and tomatoes. Transfer the pan to the oven and bake, uncovered, for 10 to 15 minutes, until the rice is al dente, or mostly tender but with a little resistance in the center.
  • Remove the pan from the oven, cover with a lid or aluminum foil, and let it sit for about 5 minutes, until the rice is tender. Uncover and return it to the stovetop over medium-high heat and cook for about 2 more minutes, to brown the bottom of the rice.
  • Spoon it out onto a plate, and eat. Don't worry if it sticks. Just scrape it up and know that this is what the Spanish call soccarat, the crispy pieces that are considered a sign of a great paella.

STIR-FRIED SQUID WITH BASIL AND GARLIC

A very, very fast dish, because the squid must be cooked only briefly to prevent toughness. So make your side dishes first; rice is the natural choice, and it will keep perfectly well over low heat while you stir-fry. Thai basil is so unlike Italian basil that they might as well be different herbs; not only does the Thai variety look different, but it is infinitely mintier. If you're using Italian basil, therefore, you might consider adding a small handful of mint leaves. See page 500 for information on Thai fish sauce (nam pla). If your squid hasn't already been cleaned, see page 98.

1 1/2 pounds cleaned squid, rinsed well
2 tablespoons peanut oil
1 tablespoon minced garlic
2 small fresh chiles, preferably Thai, stemmed, seeded, and chopped, or to taste, or crumbled dried chiles or hot red pepper flakes to taste
1/4 teaspoon ground coriander
1 tablespoon sugar
2 tablespoons nam pla
1 lime leaf, minced, if available
1/2 cup basil leaves, preferably Thai, roughly chopped if large
Salt to taste

Steps:

  • Dry the squid well with cloth or paper towels. Cut vertically through the group of tentacles if it is large; otherwise, leave whole. Cut the squid bodies into rectangles, diamonds, or squares, with no dimension greater than 1 inch. The pieces should be fairly uniform in size. Have everything else ready and at hand before you begin to cook.
  • Put a large nonstick skillet over high heat; add the oil and, when it shimmers, add the garlic, chiles, and coriander. Cook, stirring almost constantly, for 15 seconds. Raise the heat to high, add the squid, and cook, stirring occasionally, for about 3 minutes, just until it loses its raw look.
  • Lower the heat to medium and stir in the sugar, nam pla, lime leaf if you have it, and basil. Cook, stirring, for another few seconds, just until the basil wilts. Taste, add salt or more chile or nam pla if necessary, and serve.
  • Same technique, different ingredients: In step 3, stir in 1/4 cup water, 1 tablespoon go chu jang (page 591) or 1 tablespoon miso mixed with a pinch of cayenne, 2 tablespoons soy sauce, 1 tablespoon toasted sesame seeds (page 596), and 1 teaspoon dark sesame oil. Instead of basil, garnish with minced scallion.

1 1/2 to 2 pounds cleaned squid, in rings (cut tentacles in half if large)

1/2 teaspoon chili flakes, or to taste
1 teaspoon minced garlic
2 tablespoons minced basil
Juice of 1/2 lemon
About 1 cup freshly toasted coarse bread crumbs

Steps:

  • Put oil in a broad skillet over high heat; a minute later, add squid, salt, pepper and chili flakes; cook, stirring, until squid is opaque, about 60 seconds (do not overcook).
  • Add garlic, basil and lemon juice and stir for about 30 seconds. Turn off heat, add bread crumbs and serve.

CRISPY SQUID WITH GARLIC, CHILE, AND BASIL

4 eggs, lightly beaten
2 cups toasted bread crumbs
Kosher salt and freshly ground black pepper
1 pound small squid, cleaned, bodies cut into thin rounds, tentacles intact
1/2 teaspoon chile oil
2 cloves garlic, peeled and minced
3 yellow inner stalks celery, washed and sliced
1/2 lemon, halved lengthwise and sliced into thin half moons
1 quart frying oil
1/2 cup fresh basil leaves, stemmed, washed, dried and torn

Steps:

  • The lightly beaten eggs should be in one medium bowl and the bread crumbs in another. Season both the eggs and the bread crumbs with salt and pepper. Take the squid rings and tentacles and coat them with the egg. Remove and allow any excess egg to drip off, and then roll the pieces in the bread crumbs. Place them in a single layer on a baking sheet and refrigerate.
  • In a medium-size saute pan, heat the chile oil lightly. Add the garlic and season with salt and pepper. Take care not to brown the garlic but instead sweat it so that the liquid emerges and it becomes translucent. Add the sliced celery and stir to coat everything evenly. Cook for 1 minute. Stir in the lemon slices and set aside to cool.
  • Pour the oil into a heavy-bottomed pot (or alternatively, a deep fryer). Heat the oil slowly to 375 degrees F. Use a thermometer to monitor the temperature. Line a baking sheet with a kitchen towel to drain the squid once they are cooked.
  • When ready to serve, drop the squid, in small batches, into the oil. Fry until crispy, turning on both sides with a slotted metal spoon, about 3 to 5 minutes. Drain them on the lined baking sheet. Season immediately with salt and toss with the basil leaves. Serve the garlic sauce on the side or drizzle over top. Serve immediately.
