SAUTEED TILAPIA WITH ALMONDS AND CHERRIES
Another WW recipe. 4 Points Plus per serving. I used fresh peaches instead of cherries on my first try since that's what I had on hand. You can probably use nearly any fleshy fresh and ripe fruit. I served this with couscous cooked in apple juice and water, and broccoli.

Steps:
- Toast the almonds in a large nonstick skillet over medium low heat until aromatic and golden, shaking the pan often, about 4 minutes.
- Transfer to a bowl.
- Season fish with salt and pepper.
- Heat 2 tsp oil in skillet.
- Add fish. Cook until firm and lightly browned, about 2 minutes per side.
- Remove the fish to 4 serving plates.
- Heat remaining oil.
- Add onion. Cook until softened, about 2 minutes.
- Add vermouth. Cook 20 seconds.
- Add cherries, broth and thyme.
- Heat until simmering.
- Cook additional 30 seconds to reduce slightly.
- Divide sauce and almonds among the fish.
CRISPY ALMOND TILAPIA

- Preheat oven to 400°. Whisk together egg and hot sauce in a shallow bowl. In a separate shallow bowl, toss almonds, bread crumbs, lemon zest and seasonings., Halve fillets lengthwise; sprinkle with salt and pepper. Dip in egg mixture, then in almond mixture, patting to adhere; place on a greased or parchment-lined baking sheet. Steps:
- Mix flour, salt and pepper.
- Coat fish in flour mixture, shaking off the excess.
- In a large nonstick skillet, melt 1 1/2 tsp butter in 1 tsp of the oil.
- Cook the filets in batches over medium heat 3 to 4 minutes per side or until golden crisp; turning once.
- Transfer to a plate and cover with foil to keep warm.
- Repeat for each batch adding additional oil and butter as needed.
- Add remining 1 Tbsp butter and the almonds to skillet.
- Cook 2 minutes or until golden.
- Add capers and lemon juice cooking 1 minute or until heated through.
- Pour sauce over fish and serve immediately.
- (I like a lot of flavor and would double sauce if serving 4.).

This is a really easy, fast way to prepare tilapia fillets. My whole family loves it, even the babies! The basis for this recipe came from the back of the bag of frozen fillets.

Steps:
- Melt butter over medium-high heat in non-stick skillet.
- Add thawed fillets and salt and pepper to taste.
- Cook 2 minutes on each side, or until fish is opaque and flakes easily with fork.
- Remove fillets to a plate.
- Add almonds to skillet (a little more butter may be necessary), and toast lightly.
- Stir in lemon juice.
- Spoon almonds over fish and serve.
