5 red snapper whole
Olive oil as needed
Salt and pepper as needed
1 cup fresh lemon juice
Preserved lemons
4 lbs. potatoes
¼ cup pernod
1 lb. butter
½ cup heavy cream
½ cup chives
¼ cup sour cream
Salt and pepper as needed
3 lbs trimmed asparagus
2 tbsps. Butter
2 oz. olive oil
2 cups finely sliced scallions
Salt and pepper as needed

Steps:

  • Fillet the snapper and cut for 4 to 5 oz pieces leaving the skin on. Coat with olive oil and salt and pepper and grill fast until just done. Sprinkle with lemon juices and plate. Boil potatoes until tender and drain. Add pernod to hot pot burning off the alcohol. Add butter and heavy cream. Let butter melt and add potatoes mashing until smooth. Add sour cream and chives and season to taste. Serve. Add olive oil to hot pan and sauté scallions quickly. Add blanched asparagus and butter and cook until desired doneness season to taste and plate.

Red Snapper with Spicy Soy Glaze on Sauteed Vegetables and Sweet Potatoes image

2 medium carrots
1 yellow bell pepper
3 ounces snow peas (about 3/4 cup)
1 cup fresh coriander sprigs
a 3/4-pound sweet potato
3/4 cup Spicy Soy Glaze
2 teaspoons vegetable oil
four 4-ounce red snapper or grouper fillets with skin
2 cups thinly sliced Napa cabbage
1/4 cup thinly sliced red onion
1 tablespoon seasoned rice vinegar
Garnish: lime wedges

Steps:

  • Separately cut carrots and bell pepper into thin strips and diagonally cut snow peas into 1/2-inch pieces. Chop coriander. Peel sweet potato and, if desired, with a channel knife cut 4 lengthwise grooves (one every quarter turn). Cut potato crosswise into 12 slices (about 1/4 inch thick) and in a steamer set over 1 inch boiling water steam slices, in one layer if possible, covered, until just cooked through and tender but not falling apart, about 8 minutes.
  • Remove steamer from heat and season potato with salt and pepper. Keep potato warm in steamer, covered. In a small saucepan heat glaze and keep warm, covered.
  • Preheat oven to 275°F.
  • In a non-stick skillet heat 1/2 teaspoon oil over moderately high heat until hot but not smoking and sauté 2 fillets, skin sides down, pressing on fish with a metal spatula to help skin brown evenly, until skin is golden brown, about 1 minute. With spatula turn fillets over and sauté until golden, about 30 seconds more. Transfer fillets, skin sides up, to a non-stick baking pan and sauté remaining 2 fillets in 1/2 teaspoon oil in same manner. Bake fish in middle of oven until just cooked through, about 3 minutes.
  • While fish is baking, in a large non-stick skillet heat 1/2 teaspoon remaining oil over moderately high heat until hot but not smoking and sauté carrots until barely tender, about 2 minutes. Add remaining 1/2 teaspoon oil, bell pepper, and snow peas and sauté vegetables, stirring, until just tender, about 30 seconds. Add cabbage and onion and sauté, stirring, until just tender, about 1 minute. Immediately transfer sautéed vegetables to a bowl and toss with coriander, vinegar, and salt and pepper to taste.
  • Divide potato among 4 plates and top with sautéed vegetables. Put fillets, skin sides up, on vegetables and drizzle with some glaze.
  • Garnish plates with lime wedges and serve remaining glaze on the side.

Pan-Roasted Monkfish with Wild Mushroom Stuffed Yukon Gold Potatoes, Sauteed Spinach and Red Wine Sauce image

Four 3-ounce pieces monkfish, with bone
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon chopped fresh thyme
1 orange, zested
1 tablespoon olive oil, plus 4 tablespoons for browning fish
1 cup red wine
2 tablespoons unsalted butter
1 clove garlic, chopped
8 ounces wild mushrooms, chopped
2 medium Yukon gold potatoes, about 3 ounces each
Salt and pepper
2 cups red wine
1 tablespoon balsamic vinegar
1 tablespoon chopped shallots
1 bay leaf
1/4 cup reduced veal stock
1 tablespoon cold butter
Salt and pepper
1 bunch spinach
1 teaspoon olive oil
Salt and pepper

Steps:

  • In a small bowl, combine salt, pepper, thyme, orange zest, and olive oil. Add red wine and mix well. Place in plastic bag with monkfish, seal and marinate in the refrigerator for 24 hours.
  • Preheat the oven to 350 degrees F. Heat the butter in a nonstick pan. Add the garlic and saute in butter until lightly golden. Add mushrooms and cook until the water has evaporated. Season with salt and pepper and cool.
  • With an apple corer, make a hole lengthwise through the potato saving the core. Fill the potato with enough mushroom filling to pack the inside of the potato. Cut the ends of the cores off and use as caps to seal off the ends of the potato. Rub olive oil, salt and pepper on the potatoes. Wrap in foil and bake for 45 minutes.
  • Prepare sauce by reducing red wine, balsamic vinegar, shallots, and bay leaf until lightly thickened. Add the veal stock and bring to a simmer. Strain, whisk in cold butter and season with salt and pepper.
  • Remove fish from the marinade. Pat dry and season with salt. In a large skillet, heat 4 tablespoons olive oil until very hot over high heat. Add fish and brown on all sides. Finish cooking in the oven until fish is cooked through, about 8 to 10 minutes
  • Saute spinach with olive oil in a large pan until wilted and season with salt and pepper.
  • Place the spinach in piles in the center of 2 large plates. Place the fish around the spinach at the12 and 6 o'clock positions. Cut potatoes on the bias trimming the ends to lay flat and place at 9 and 3 o'clock positions. Pour the wine sauce over the fish and serve.

3 strip steaks, bone-in (or de-bone)
Salt and pepper
Vegetable oil, for sauteing
1 shallot, minced
1 ounce red wine
4 ounces chicken stock
2 teaspoons green peppercorns, in brine
1 ounce heavy cream
1/2 ounce butter
Sauteed Asparagus, recipe follows
Red-skinned mashed potatoes, recipe follows
15 stalks asparagus
1 1/2 cups sliced mushrooms
1 1/2 tablespoons butter
Salt and pepper
6 to 8 red-skinned potatoes
Several chives, finely chopped
1/2 stick butter
1/2 cup milk
Salt and pepper
1/2 cup chopped smoked salmon
1 bunch scallions, minced

Steps:

  • Sauteed Steak with a Green Peppercorn Sauce:
  • Season the strip steaks with salt and pepper. Heat oil in a medium saucepan and saute the seasoned steaks until they are cooked to medium-well done, with a small strip of pink on the inside. Remove the strip steaks and set aside. Wipe away the excess oil from the pan.
  • Over medium heat, sweat the minced shallots in the same saute pan until they become translucent. Add the red wine and reduce by 1/2. Add stock to the pan and reduce the mixture again by 1/2. Slowly add the green peppercorns and season lightly with salt and pepper. Continuously stir the sauce while adding in the heavy cream. Finish by adding butter to the sauce and reduce the temperature to low. Do not strain.
  • Serve with Sauteed Asparagus and Red-skinned Mashed Potatoes.
  • In a large pot, bring just enough water to cover the asparagus stalks, to a boil. Add the asparagus to the pot and cook for approximately 1 minute, just long enough to blanch the vegetables. Drain and set aside. In a saute pan, cook the sliced mushrooms in butter and season them with salt and pepper, to taste. Add the asparagus to the pan and saute until tender.
  • In a large pot, bring just enough water to cover the potatoes to a rapid boil. Lightly add salt to the water. Add the potatoes, with the skin still intact, to the water and cook them until they are fork-tender. Drain the water from the pot, leaving only the potatoes. Add butter, milk, and salt and pepper to the boiled potatoes and mash all of the ingredients together. Add the smoked salmon and the scallions to the potatoes and stir them throughout the mixture. Finish the potatoes with chives.

1 pound baby red potatoes
1 pound fresh green beans, trimmed.
1 1/2 Tbsp extra virgin olive oil
1 clove garlic, minced.
freshly ground black pepper
3 Tbsp fresh chives (parsley or basil or rosemary works also, depending on your personal taste)
2 tsp onion powder
3 Tbsp chopped yellow onion (any onion will do in a pinch)

Steps:

  • 1. 1. Bring a large pot of water to a boil. Add the potatoes; cook about 20 minutes or until almost tender. Add the beans; cook about 3 minutes more or until tender. Drain well.
  • 2. 2. In a large skillet, heat the oil over medium heat. Add the garlic; cook and stir for 30 seconds. Add the potatoes, beans, onions, onion powder, and salt and pepper to taste. 1 1/4 pounds russet, Idaho or Washington potatoes
1 large sweet red pepper
Salt and freshly ground pepper to taste
3 tablespoons vegetable or canola oil
1/2 cup white onions thinly sliced
1 tablespoon butter
2 tablespoons finely chopped parsley

Steps:

  • Cut the potatoes into 1 1/4-inch cubes. Drop them in cold water to prevent discoloration.
  • Core and remove the seeds and the veins of the sweet peppers. Cut them into 1/4-inch cubes.
  • Drain the potatoes and add them to a saucepan with water to cover and salt. Bring to a boil and simmer for 1 1/2 minutes. Drain.
  • Heat the oil in a large, nonstick skillet. Add the potatoes, and cook over medium-high heat, shaking the skillet and stirring occasionally so that the potatoes cook evenly. Cook for about 5 minutes until they begin to brown.
  • Add the red peppers, onions, salt and pepper. Cook over medium-high heat for about 5 minutes, shaking the skillet until the potatoes are nicely browned.
  • Drain the potatoes into a colander. Return them to the skillet and add the butter. Cook for a few minutes, shaking and tossing the skillet. Sprinkle with parsley and serve immediately.

4 tablespoons extra-virgin olive oil
2 cloves garlic, crushed
1 tablespoon fresh thyme
Coarse salt and freshly ground pepper to taste

Steps:

  • Wash the potatoes and cut them into half-inch cubes. Heat the oil in a large cast-iron skillet and add the potatoes (you may have to use two pans or do them in two batches). Stir to prevent them from sticking; then let them brown.

4 to 6 Idaho, Washington or Yellow Gold potatoes, about 1 1/2 pounds
1 large sweet red pepper
2 tablespoons vegetable or corn oil
1/2 cup thinly sliced white onions
Salt and freshly ground pepper to taste
1 tablespoon butter
2 tablespoons finely chopped parsley

Steps:

  • Peel the potatoes, and cut them into 1/4-inch cubes. As the cubes are cut, drop them into cold water.
  • Cut away and discard the pepper core and the veins and seeds. Cut the pepper into 1/4-inch cubes.
  • Drain the potatoes, and add them to a small saucepan with enough water to cover and salt to taste. Bring to a boil, and simmer for 1 minute. Drain well.
  • Heat the oil in a large nonstick skillet, and add the potatoes. Cook, stirring and shaking the pan as necessary, for 5 minutes over medium heat.
  • Add the onions, red pepper and salt and pepper to taste. Cook, stirring and tossing, for about 4 minutes or until the potatoes are tender and browned.
  • Drain the oil, add the butter, and cook, tossing, for 1 minute. Sprinkle with the parsley, and serve immediately.

  • Wash all potatoes and slice into 1/8 - 1/4 inch slices.
  • Saute potatoes in oil for a few minutes to coat well.
  • Cover the pan and occassionally stir to allow the potatoes to brown.
  • Cook for about 20 minutes this way.
  • Add salt and pepper, and continue cooking for an additional 5 minutes with no lid stirring frequently.

This recipe is basically "home fries with heat". I LOVE the heat. This side dish, of course, can be served with anything but my favorite is to serve it with shish kebab. You can use either the really small new potatoes OR buy regular sized new potatoes and cut them into chunks as shown in my picture.

1-1/2 lb small red potatoes, scrubbed
1/2 tsp garlic powder (or 1 clove garlic, crushed)
1/3 c olive oil
1/2 tsp crushed dried red peppers (the kind that you shake onto pizza or spaghetti)
1 medium red bell pepper, seeded and sliced thin
1 Tbsp chopped scallion (optional)
1 tsp dried italian seasoning

Steps:

  • 1. In a medium saucepan, cover potatoes with water, bring to a boil and cook for 20 minutes or until tender.
  • 2. Saute garlic in olive oil over medium heat in a large skillet for 2 minutes.
  • 3. Add dried red peppers and red bell pepper slices. Saute 3 to 5 minutes until bell pepper is tender.
  • 4. Add potatoes to skillet and stir gently to heat and to coat completely with oil.
  • 5. Add Italian seasoning and toss.
  • 6. Serve sprinkled with scallions.
  • 7. Serve good and hot!
