AU GRATIN PEAS AND POTATOES

- In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 1 tablespoon drippings. In the drippings, saute onion until tender. , Layer with potatoes, salt, peas, 1 cup cheese and bacon. Reduce heat; cover and simmer until heated through, about 10 minutes. , Combine mayonnaise and milk until smooth; pour over bacon. Sprinkle with the remaining cheese. Remove from the heat; let stand for 5 minutes before serving.

SAUSAGE, POTATOES AND PEAS
This was first made for me by an older family friend. he says this is an old italian recipe. i don't know if it is or not, but everyone always likes it. i usually serve with crusty bread, although some people i've made this for like rice or pasta with it. that is too much starch for me, i know this recipe is not very healthy, but i still occasionally make it because family really likes it.

Steps:
- Spread sausage links, potatoes and peas in 13 x 9 baking dish.
- in saucepan over medium heat mix rest of ingredients until boullion cube is dissolved.
- pour over sausage, potatoes and peas.
- cover tightly with aluminum foil.
- bake in 350 degree oven 45 minutes to 1 hours.

- In a 4-quart saucepan cover potatoes with salted cold water by 1 inch and simmer 10 minutes, or until potatoes are tender when pierced with a sharp knife. Drain potatoes in a colander. Potatoes may be cooked 1 day ahead and cooled before being chilled in a sealable plastic bag. Bring potatoes to room temperature before proceeding.
- Shell peas if using fresh and trim sugar snap peas. In a large skillet heat oil over moderately high heat until hot but not smoking and sauté all vegetables, stirring frequently, until sugar snaps are crisp-tender and potatoes are heated through, about 4 minutes. Season vegetables with salt and pepper.
