I found this recipe while looking for a quick and easy dinner with cooked ham. I use a small turkey ham from the meat department.

1 1/2 lbs ham steaks
1 (15 ounce) can pineapple rings
brown sugar
cinnamon

Steps:

  • Preheat the oven to 375 degrees F.
  • Slice ham into thick slices.
  • Place the ham steak in a shallow ovenproof pan and place the pineapple slices on top. Pour the pineapple juice over all.
  • Place the ham steak in the oven and bake for 20 minutes (uncovered).
  • After 20 minutes, remove the pan from the oven and turn the oven up to broil.
  • Baste the ham with the pan juices. Sprinkle a little brown sugar over the pineapple slices and dust with cinnamon.
  • Return to oven and broil for 3 to 5 minutes or until the pineapple is lightly browned. Serve each ham steak with a pineapple slice.

1 cup dark brown sugar
⅔ cup prepared yellow mustard
1 ½ pounds ham steaks
1 (20 ounce) can pineapple rings in juice, sliced

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Mix dark brown sugar and mustard together in a bowl. Place ham on a broiling pan rack. Spoon mustard mixture over both sides of the ham.
  • Broil in the preheated oven until browned on one side, about 5 minutes. Flip, pour on pineapple juice from the can, and continue to broil for about 5 minutes more, adding pineapple rings on top in the final 2 minutes of cooking. Watch carefully as it cooks fast.

1 lb 33% reduced-sodium ham (1 slice, about 1/2 inch thick)
1 tablespoon lemon juice
2 teaspoons brown sugar
1 teaspoon Dijon mustard
1/8 teaspoon ground ginger
1/2 cup pineapple juice
1 teaspoon cornstarch

Steps:

  • Trim fat from ham.
  • Lightly score ham slice in a diamond pattern using a sharp knife.
  • Place in an 11 x 7 inch baking dish.
  • Combine next 4 ingredients in a bowl, stirring well with a whisk; spread mixture over ham.
  • Cover with heavy-duty plastic wrap and vent.
  • Microwave at HIGH 4 minutes or until thoroughly heated.
  • Remove ham from dish, and cut into 4 equal pieces; set aside, and keep warm.
  • Combine pineapple juice and cornstarch in a 1-cup glass measure; stir well.

1 tablespoon unsalted butter
1 (1 1/4 lb) ham steaks, cut into 4 portions
1/2 cup orange juice
1 teaspoon Dijon mustard
2 cups cubed fresh pineapple or 2 cups canned pineapple

Steps:

  • In a large skillet over medium-high heat, melt butter. When foaming subsides, add ham and cook, turning once, until well browned on both sides, about 8 minutes total. Transfer ham to a plate and reduce heat to medium.
  • Pour orange juice into skillet and, with a wooden spoon, scrape up any browned bits on bottom of skillet. Stir in mustard and cook until liquid thickens slightly, about 3 minutes. Add pineapple and cook 2 minutes longer, then return ham to skillet and turn to coat with sauce.

1 2-inch thick ham steak (fully cooked)
1 large ripe pineapple
1/2 cup unsweetened pineapple juice
1/4 cup yellow mustard
2 tablespoons oil
2 tablespoons honey

Steps:

  • Mix together the pineapple juice, oil and 1 teaspoon of the mustard. Make cuts through the fat on the ham steak so it won't curl on the grill. Place ham in shallow baking dish and pour mixture over it. Let stand. With a pair of scissors trim the sharp points from the pineapple crown. Remove any dried spikes. With a sharp knife cut the pineapple lengthwise into 8 equal pieces. Lay out on a platter, skin down and drizzle with honey (you might need more than 2 tablespoons). Let ham and pineapple sit for about an hour. Preheat grill. Place ham on grill over a medium fire. Let grill about 10-15 minutes, brushing periodically with marinade. When browned on one side turn over. Place pineapple pieces on the grill. Continue grilling, brushing the ham with the marinade from time to time. Remove when pineapple has good grill marks and ham is heated through. Place on serving platter. Take remaining marinade and mix with remaining mustard until the mustard is dissolved into mixture. Pour over ham and serve.
