SAUTéED SHRIMP WITH GARLIC, LEMON, AND HERBS



Sautéed Shrimp with Garlic, Lemon, and Herbs image

This Sautéed Shrimp recipe cooks with chopped fresh garlic, lemon, and herbs then is smothered in a thick lemon juice and white wine sauce!

Number Of Ingredients 9

2 tablespoons extra-virgin olive oil
2 cloves garlic (finely chopped/minced (about 1 teaspoon))
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper ((optional, more or less depending on spice preference))
1 - 1.5 lb. jumbo shrimp (peeled and deveined, tail on or off depending on preference.)
1/4 teaspoon kosher salt (more if needed)
1/2 teaspoon black pepper
2 tablespoons lemon juice ((from about 1 lemon))
1/4 cup dry white wine (or chicken broth, or water in a pinch)

Steps:

  • Heat the oil (2 tablespoons) in a large skillet (I prefer nonstick for this recipe) over medium heat. Add the minced garlic (2 cloves/1 teaspoon), dried oregano (1 teaspoon), and crushed red pepper if using (1/2 teaspoon). Sauté until fragrant and garlic is a little toasted, but not burned (turn heat down to medium-low if necessary), about 2-3 minutes.
  • Meanwhile, pat shrimp dry and season with kosher salt (1/2 teaspoon) and black pepper (1/2 teaspoon).
  • Add the shrimp to the skillet and sauté over medium-high heat, until almost cooked completely though and opaque, about 2 minutes on each side.
  • Add the lemon juice and white wine (1/4 cup). Stir to coat the shrimp in everything, and continue cooking until liquid has reduced almost completely and thickened (about 2-3 minutes), coating the shrimp in a thick sauce. Transfer to a serving platter or individual plates, making sure to drizzle all the sauce from the skillet on top of the shrimp to serve.

1 lb shrimp, shelled & deveined
1/2-1 Tbsp all purpose greek seasoning
2 Tbsp preserved lemons, chopped
1 Tbsp mint, chopped
1 Tbsp italian parsley
2 Tbsp olive oil, extra virgin
2 garlic cloves, minced
1 tsp red pepper flakes
2 Tbsp butter

Steps:

  • 1. Combine shrimp, seasoning, preserved lemon, mint & parsley in a small mixin bowl. Mix
  • 2. Add olive oil, garlic and red pepper flakes to a large medium high heated skillet and saute for 30 seconds or so. Toss in shrimp and saute for 2-3 minutes. Add butter and continue to saute for an additional minute or until shrimp turns pink and begins to curl. **Do Not Over Cook"

1 lemon
3 pounds uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, chopped
2 ribs celery, chopped
2 cloves garlic, crushed and chopped
salt and ground black pepper to taste
1 sprig fresh rosemary, chopped, or to taste
¼ teaspoon dried basil
¼ teaspoon dried oregano
¼ teaspoon ground coriander
1 bay leaf
¾ cup white wine, or to taste
1 teaspoon Worcestershire sauce, or to taste

Steps:

  • Squeeze lemon over shrimp and set aside.
  • Heat olive oil over medium heat. Add onion, celery, and garlic. Season with salt and pepper and cook until tender, about 5 minutes. Stir in rosemary, basil, oregano, coriander, and bay leaf. Add white wine and Worcestershire sauce; cook until sauce is slightly reduced and flavors come together, 8 to 10 minutes.
  • Add shrimp to the sauce and cook until pink, 5 to 7 minutes more.

2 teaspoons olive oil
1 teaspoon garlic, minced
16 large raw shrimp, peeled and deveined
1 tablespoon dried tarragon or 1 tablespoon dried sweet basil leaves
1/4 cup dry white wine
16 small black Greek olives
1 cup fresh tomato, peeled, seeded and diced
2 tablespoons fresh lemon juice
3 tablespoons feta cheese, freshly grated
1/4 cup scallion, chopped
1/8 teaspoon black pepper, freshly ground

Steps:

  • In heavy 8-inch saucepan, quickly saute garlic in oil over medium heat.
  • Add shrimp and tarragon.
  • Cook, covered, 4-5 minutes, tossing once.
  • Add wine; cook, uncovered, a few seconds before adding olives, lemon juice, and tomatoes.
  • Cook a few minutes more to soften tomatoes, and mix in cheese and pepper.
  • Spoon onto 4 warmed ramekins. Sprinkle with scallionsand serve with brown rice or sourdough bread.

3 tablespoons olive oil
1 -2 tablespoon fresh minced garlic (or to taste)
1/4 cup minced onion
1 -2 teaspoon dryed chili flakes (or to taste)
3 (28 ounce) cans whole tomatoes, drained, and coarsely chopped
2 -3 tablespoons dry red wine (optional)
salt and pepper
1/4 cup grated parmesan cheese
1/2 cup chopped fresh parsley, divided
2 1/2 lbs medium shrimp, peeled and deveined (or more if desired)
1 1/2 cups crumbled feta cheese
2 tablespoons fresh lemon juice
black pepper

Steps:

  • Set oven to 400 degrees.
  • Grease a 13 x 9-inch baking pan, or a casserole dish.
  • Heat olive oil in a large Dutch oven over medium heat.
  • Add in the garlic, onion and chili flakes; saute for 1-2 minutes.
  • Add in the chopped tomatoes, red wine, 2-3 tablespoons grated Parmesan cheese (if using) and 1/4 cup parsley; mix and reduce heat, simmer for about 20 minutes.
  • Season with salt and pepper to taste.
  • Add in the shrimp; cook for 10 minutes.
  • Transfer the mixture into a prepared baking dish; sprinkle with 1/4 cup Parmesan cheese (the added Parmesan cheese for the topping is optional, you may just use the feta for the topping) and then with the 1-1/2 cups (or to taste) of feta cheese.
  • Bake for about 20 minutes.
  • Remove from oven, sprinkle with remaining parsley, 2 Tbsp lemon juice and black pepper.
