1 medium-size English cucumber
1 tablespoon butter
1/4 teaspoon salt
Chopped fresh dill, or parsley

Steps:

  • Peel cucumber, and cut into large chunks.
  • In a skillet, melt butter over medium heat. Add cucumber and salt, and cook, tossing occasionally, until tender, about 5 minutes. Serve sprinkled with dill or parsley.

Light, fresh French side dish I make frequently. Everyone asks what is this and how do you make it. Be careful not to brown your cucumbers. They should be translucent, not browned.

½ cup butter
3 cucumbers, halved lengthwise
1 tablespoon tarragon
½ teaspoon ground white pepper
salt to taste

Steps:

  • Scoop seeds out of cucumber halves using a spoon. Discard seeds. Slice cucumber into 1/2-inch bites.
  • Melt butter in a small skillet over medium-low heat; add cucumbers, tarragon, white pepper, and salt. Saute cucumber mixture until cucumber bits become translucent, 12 to 15 minutes.

Sauteed Cucumbers with Green Herbs image

Sautéeing cucumbers with green herbs is a surprisingly delicious way to prepare the produce.

2 medium cucumbers
Coarse salt
2 tablespoons unsalted butter
1 tablespoon mint or dill
Freshly ground pepper

Steps:

  • With a vegetable peeler, peel skin of cucumber in lengthwise strips, alternating and removing about half of the skin. Cut cucumbers in half lengthwise, and scoop out the seeds with a teaspoon. Cut each half lengthwise in 3 or 4 wedges, then crosswise into 2-inch lengths.
  • Bring a pan of salted water to a boil, add cucumbers, and simmer until almost tender, 3 to 5 minutes. Melt butter in a medium skillet over medium heat. Add cooked cucumbers, mint or dill, and pepper to taste. Cook until cucumbers are very hot, about 1 minute.

20 small pickling (Kirby) cucumbers
1/2 cup butter
4 medium-size onions, peeled and coarsely chopped
Salt to taste
1/2 cup plain yogurt, optional
1/2 cup chopped fresh parsley

Steps:

  • Wash and coarsely grate cucumbers into colander. Let stand until cooking time.
  • Squeeze water out of cucumbers.
  • Heat butter in skillet and saute onions until they soften. Add cucumbers and cook, stirring occasionally, until mixture is soft, about 5 minutes. Season with salt, if desired.
  • To serve, blend in yogurt, if desired; sprinkle with parsley.

2 tablespoons unsalted butter
2 thick, wild salmon fillets (6 to 8 ounces each)
Kosher salt or freshly ground black pepper
2 kirby cucumbers, peeled and diced into 1/4-inch cubes
2 garlic cloves, minced
2 tablespoons chopped fresh dill or cilantro
1 to 2 teaspoons fresh lemon juice, more to taste.

Steps:

  • 1. In a large skillet, melt butter over medium high heat and let cook until foam subsides and turns deep gold in color, about 3 minutes. 2. Season salmon with salt and pepper and add to pan, skin side up. Cook without turning for 3 minutes. Add cucumbers and a pinch of salt to pan around salmon and stir to coat with butter. Continue to cook, stirring cucumbers around in pan occasionally, until fish turns deep brown, about 3 minutes longer. Flip fish over (move cucumbers to the side to make sure fish skin makes contact with pan). Add garlic to cucumbers in pan and stir. Continue to cook fish until done to taste, 2 to 4 minutes longer. 3. Transfer salmon to plates. Stir dill and lemon juice into cucumbers in pan and let cook for 20 seconds longer. Taste and add more salt, pepper and lemon juice if necessary. Serve cucumbers and butter sauce over fish. Yield: 2 servings.

Sautéed Salmon With Brown Butter Cucumbers image

A gorgeous salmon fillet needs little more than a sprinkling of salt and pepper and a few minutes of gentle sautéeing in melted butter. You could stop there and serve the fish with salad and a crusty piece of bread. Or you could go one quick step further and add minced garlic, chopped cucumber and dill to the pan. The cucumber turns nutty in the pan's brown butter, with a tender exterior that remains crunchy in the middle - a nice contrast to the silky salmon. Wild salmon, which is costlier than farmed fish, is worth the price for its sweet, smooth texture and brilliant color. Be sure not to overcook the fillets, which should be soft and barely opaque.
