1 tablespoon extra virgin olive oil
2 tablespoons butter
1 1/2 lbs cremini mushrooms, brushed clean with damp towel
salt and pepper
3 tablespoons fresh thyme leaves, chopped
1/2 cup dry red wine
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil and butter.
  • Add mushrooms and season with salt, pepper and thyme then cook 15 minutes until evenly browned and tender.
  • Add wine and deglaze the pan. Add parsley and transfer mushrooms to a serving dish.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 tablespoons butter, cut into small pieces
4 cloves garlic, chopped
24 small crimini mushrooms, wiped clean, halved
1 bunch kale, trimmed, stems removed and chopped
1/4 cup Marsala or other sherry
Salt and pepper

Steps:

  • Heat a medium skillet with extra-virgin olive oil and butter over medium to medium-high heat. When fat is hot, add garlic and mushrooms and place a lid which is too small for the skillet down into the pan, pressing and smothering the mushrooms. Cook 7 to 8 minutes, stirring once, then wilt the kale into the pan, turning it with tongs to combine with mushrooms. Smother the greens for 1 to 2 minutes, then deglaze the pan with Marsala and season the mixture with salt and pepper, to taste.

2 tablespoons olive oil
2 tablespoons butter, cut into pieces
4 garlic cloves, finely chopped
2 shallots, thinly sliced
1 1/2 lbs assorted mushrooms, thinly sliced
2 tablespoons fresh thyme
salt and pepper
3 tablespoons all-purpose flour
1/2 cup dry white wine
1 cup vegetable broth
1/2 cup half-and-half
8 slices bread, toasted
2 cups gruyere cheese, shredded

Steps:

  • Heat a large non-stick skillet over medium heat. Add the olive oil and butter.
  • Once butter melts, add the garlic and shallots, cook for 30 seconds and add mushrooms and combine.
  • Sprinkle thyme over mushrooms, stirring frequently until they brown; add salt and pepper to taste.
  • Sprinkle flour over the mushrooms and cook for 1-2 more minutes, stirring to evenly distribute.
  • Whisk the wine into the pan and cook it off for a minute, then whisk in the stock.
  • Thicken the stock for a minute, then add the half-and-half and simmer over low heat for 5 minutes.
  • Cut the toasted bread in triangle halves. Arrange 4 toast triangles on a dinner plate. Pour 1/4 of the mushrooms across each portion and top with Gruyere.

3 tablespoons extra-virgin olive oil
1/2 pound mixed mushrooms (cremini, shiitake - whichever look good to you)
1 pound Swiss chard, stemmed and coarsely chopped
Salt and freshly ground black pepper
1/2 lemon, juiced
2 tablespoons butter
A drizzle honey

Steps:

  • Heat the olive oil, 3 turns of the pan, in large skillet over medium-high heat. Coarsely chop mushrooms and add to the pan, toss for 2 to 3 minutes then add the greens to wilt. Season with salt and pepper. Dress greens with lemon juice then toss with butter as it melts to form a sauce. Drizzle a little honey over the greens and serve.

1 1/2 lbs portabella mushrooms
1 1/2 lbs cremini mushrooms
3 large shallots
1/2 cup unsalted butter
4 scallions (green parts only)
1/2 cup balsamic vinegar
5 tablespoons soy sauce
1/4 cup sugar

Steps:

  • Halve portabellas& cut both portabellas and creminis in 1/4" slices.
  • Chop shallots and cook half in half of the butter over moderate heat, stirring 1 min.
  • Add portabellas and salt& pepper to taste and cook, stirring occasionally, until liquid mushrooms give off is evaporated, about 15 mins.
  • Transfer to a bowl and keep warm, covered.
  • Cook remaining shallots in remaining butter and add cremini, salt and pepper until mushrooms give off is evaporated, about 10 mins.
  • Mix both mushrooms together and keep warm.
  • Diagonally cut scallions into thin slices.
  • In a bowl whisk together vinegar, soy sauce, and sugar.
  • Heat mushrooms over moderately high heat and add vinegar mixture.
  • Boil mixture 3 mins, or until liquid is reduced slightly, and stir in scallions.
