1 lb thin asparagus
2 garlic cloves, minced
20 kalamata olives, pitted and halved
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 cup water

Steps:

  • Trim tough stems from asparagus.
  • In a large skillet over medium heat, sauté garlic and olives in oil about 5 minutes.
  • Add asparagus, salt, pepper and the water.
  • Cover and cook over medium heat until asparagus is tender (3 to 5 minutes).

Extra virgin olive oil
1 pound asparagus, (trimmed, and cut into 3-inch pieces)
3 cloves garlic, (minced)
1 shallot, (chopped)
1 lemon, (zested and juiced)
1 teaspoon chile pepper flakes,
1 teaspoon za'atar
1/3 cup roasted red peppers (from a jar, drained, and chopped)
1/3 cup feta cheese, (more to your liking)

Steps:

  • Heat up ¼ cup olive oil over medium-high heat until just shimmering.
  • Add the asparagus and season with kosher salt and black pepper.
  • Cook for a couple minutes, tossing regularly, then add the shallots and garlic and cook for another 3 minutes or until the asparagus is tender and lightly browned.
  • Remove from the heat and add the lemon juice, zest, spices, roasted peppers and feta cheese. Serve immediately.

2 tablespoons extra-virgin olive oil
4 garlic cloves, minced
Pinch of dried crushed red pepper
1 pound asparagus, stalks cut into 1/2-inch lengths
4 tomatoes, peeled, seeded, chopped
1 cup chicken stock or canned low-salt chicken broth
1/4 cup thinly slices fresh basil
8 ounces penne pasta
2/3 cup freshly grated Parmesan cheese
1/4 cup chopped fresh Italian parsley
1/4 cup finely chopped fresh basil

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add garlic and red pepper; sauté until garlic is golden, about 2 minutes. Add asparagus, tomatoes, stock and 1/4 cup sliced basil. Cook until asparagus is crisp-tender, about 8 minutes. Season with salt and pepper. Remove from heat.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain. Transfer to large bowl.
  • Pour sauce over pasta. Add cheese, parsley and 1/4 cup chopped basil. Toss to coat. Season with salt and pepper.

  • Snap off the woody ends of 2 bunches medium asparagus; discard. Slice the spears diagonally into 2-inch pieces. Heat 3 tablespoons olive oil in a skillet over medium heat; add the asparagus and cook until tender but still bright green, about 2 minutes. Season with salt and pepper. Remove from the heat and toss with the juice of 1 lemon. Top with 1/4 cup toasted sliced almonds, and lemon zest to taste.

1 bunch asparagus, cleaned and trimmed
Olive oil, for coating the pan
1/2 shallot, finely diced
2 cloves garlic, minced
Crushed red pepper
Zest of 1/2 lemon

Steps:

  • Bring a large pot of water to a boil. Generously salt it so that it tastes like the sea. Prepare a separate large bowl of cold salted water for an ice bath.
  • Add the asparagus to the boiling water and allow to blanch for about 1 minute. Transfer the asparagus using tongs or a spider to the ice bath to shock. Remove from the bath and lay the asparagus on a paper towel to dry slightly.
  • Meanwhile, in a medium saute pan over medium-high heat, add olive oil to lightly coat. Add the shallot and cook until translucent, about 3 minutes. Then add the garlic and combine, cooking until tender and fragrant, about 1 minute more. Add the asparagus and saute until heated through. Season with salt and crushed red pepper. Toss with the lemon zest and plate. Serve as a side to your meal!

1 tablespoon extra-virgin olive oil
2 tablespoons lemon pepper

  • Preheat oven to 425 degrees F. Line baking sheet with aluminum foil.
  • On the baking sheet, place the asparagus and kalamata olives. Drizzle with olive oil and sprinkle with lemon pepper. Toss to coat. Roast for 10 to 12 minutes or until asparagus is crisp-tender.
