BAKED CHICKEN LEG QUARTERS

Chicken leg quarters are still fairly reasonable at the grocery store. Often, a single chicken thigh looks a little skimpy on a dinner plate. Leg quarters yield two or three extra bites, and they are visually very satisfying. Bonus: cooking with the bones included gives a lot of flavor. A simple, tasty seasoning blend makes prep a breeze.

2 teaspoons smoked paprika
2 teaspoons granulated garlic
½ teaspoon onion powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
5 (8 ounce) chicken leg quarters
⅓ cup melted unsalted butter

Steps:

  • Preheat the oven to 425 degrees F (218 degrees C). Line a sheet pan with aluminum foil.
  • Stir together smoked paprika, granulated garlic, onion powder, salt, and pepper in a small bowl.
  • Pat chicken leg quarters dry with paper towels. Gently lift the skin and sprinkle in 1/4 to 1/2 teaspoon of the seasoning blend, using a fingertip to spread the seasoning around under the skin. Brush both sides of each leg quarter with melted butter.
  • Evenly sprinkle remaining spice mixture on both sides of each quarter and set cut side up onto the prepared sheet pan.
  • Bake in the center of the preheated oven for 20 minutes. Turn the quarters cut side down using tongs and continue baking until chicken is no longer pink at the bone and the juices run clear, about 20 more minutes. An instant-read thermometer inserted near the bone should read 160 degrees F (71 degrees C).
  • Turn on the broiler and broil each side of the chicken leg quarters until skin is nicely browned, 3 to 4 minutes per side. Test for a final internal temperature with an instant-read thermometer of 165 degrees F (74 degrees C).
  • Transfer chicken leg quarters to a serving plate. Tent with foil and let rest for 5 minutes before serving.

I received this recipe from a booklet I purchased from a ladies hospital volunteer group many years ago. Simple recipes but good.

3 tablespoons butter
2 medium shredded zucchini
3 slices white bread, torn in small pieces
1 egg
1/2 cup shredded swiss cheese
3 lbs frying chickens, quartered
salt and pepper
2 tablespoons honey (approx.)

Steps:

  • To prepare the stuffing you will need a 2-qt. saucepan. Over medium heat melt your butter. Add the zucchini and cook only until tender, stirring frequently. Remove from heat and add bread, and stir in egg, cheese pepper and 1/2 teaspoons salt.
  • Preheat the oven to 400*
  • Loosen the skin on each quarter. This can easily be done by pushing your fingers between the skin and the meat to form a pocket. Spoon the stuffing into each pocket.
  • Place the chicken in a 13 x 9 pan.
  • Bake 50 minute or until fork tender.
  • To serve, remove onto a warm platter. Brush with honey and sprinkle lightly with salt.

1/2 pound bulk pork sausage
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup diced sweet red pepper
1 tablespoon butter
5 cups unseasoned stuffing croutons
1/4 cup minced fresh parsley
1-1/2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 to 2 cups chicken broth, divided
1 roasting chicken (6 to 7 pounds)

Steps:

  • In a large skillet, cook the sausage, onion, celery and red pepper in butter until sausage is no longer pink and vegetables are crisp-tender; do not drain. , Place croutons in a large bowl; add sausage mixture. Stir in the parsley, tarragon, poultry seasoning, salt and pepper. Stir in enough broth until stuffing is moistened and holds together. , Just before baking, loosely stuff chicken. Place with breast side up on a rack in a shallow roasting pan. Pour 1/2 cup broth around chicken. , Bake, uncovered, at 325° for 2-1/2 to 3 hours or until a thermometer reads 180° for chicken and 165° for stuffing, basting occasionally with pan juices.

This will be a family favorite after the first time you make it. The favors blend and is mouth-watering good.

6 boneless chicken breasts
1/4 lb bulk hot Italian sausage (or removed from casings)
2 ounces diced fresh mozzarella cheese
1/2 tablespoon olive oil
2 tablespoons minced onions
2 tablespoons fine seasoned breadcrumbs
1/2 cup white wine
salt and pepper
12 toothpicks

Steps:

  • 1. Place a small sauté pan over medium heat. Add oil. Add sausage and sauté, breaking up into small crumbles until cooked through. Add the onion and sauté a minute or two until softened. Remove to a bowl with all of the pan oil and stir in the breadcrumbs. When mixture cools, stir in the mozzarella. Eyeball the mixture into six portions.
  • 2. Cut slits into chicken breast, to create a pocket, be careful not to cut all the way through. Place a portion of stuffing into the chicken pocket, close with toothpicks. Repeat with the other five breasts.
  • 3. Place breasts in an oiled baking pan, leaving a little space in between each. Brush tops with a little olive oil. Pour white wine into the pan. Bake, 20-25 minutes, until chicken is just cooked through. Run under the broiler a minute if you'd like more color on the skin. Allow breasts to cool several minutes before slicing. Slice breasts on the bias and served topped with spoonfuls of juicy tomato vinaigrette.

4 chicken leg quarters
4 Italian sausages, sweet
1/4 cup breadcrumbs, any variety
1 egg
paprika (optional)
aluminum foil
cooking string

Steps:

  • with a filet knife carefully separate bone from the leg quarters.
  • be sure to pull the meat away from the bone as you do this and invert the meat like a sock.
  • once done flip meat around so it is in its original shape and set aside.
  • in a medium bowl remove skin from sausages and add breadcrumbs and egg and knead till combined.
  • stuff leg quarters with sausage intil chicken pieces appear as original shape before boning.
  • with needle and coking string carefully close thigh end of leg quarters and place in baking sheet.
  • spinkle with paprika or sazon for color/to taste.
  • cover with foil and bake in 350 Farenheit oven on middle rack for 30- 45 minutes.
  • recipe can be doubled.
