These rye slices topped with sausage and cheese are so easy and so delicious that they are sure to please. In fact, my husband loves them so much that I sometimes make them on regular-sized rye bread for dinner.

1 pound fresh, ground pork sausage
3 tablespoons minced onion
½ teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup process cheese sauce
16 ounces cocktail rye bread

Steps:

  • In a large skillet, cook sausage over a medium heat until it is browned and cooked through. Stir onion, garlic powder, black pepper, and process cheese into the skillet. Stir until the cheese is melted and the ingredients are well combined.
  • Spread 1 tablespoon of mixture onto each slice of cocktail rye. Serve warm.

A quick, easy, and basic recipe for patty melts. I used Jewish rye bread but any bread will work as long as it's rye. I double the cheese but feel free to use 1 slice per patty melt.

1 pound ground beef
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter
1 large onion, sliced
6 teaspoons mayonnaise
6 slices rye bread
6 slices sharp Cheddar cheese

Steps:

  • Season ground beef with salt and pepper and divide into 3 equal-sized balls. Shape each ball as close as possible to the shape of the bread. Make an indentation in the center of each patty with your thumb.
  • Melt butter in a skillet over medium heat and cook onion until soft and translucent, 5 to 8 minutes. Remove from the skillet and divide into 3 equal portions. Place beef patties into the same skillet and cook until desired doneness, 3 to 5 minutes per side.
  • Meanwhile, spread 1 teaspoons mayonnaise on one side of each slice of bread.
  • Place bread mayonnaise side-down in the skillet. Top with 1 slice of cheese, 1 beef patty, 1/3 of the onions, a second slice of cheese, and another slice of bread, mayonnaise side up. Cook bread until golden brown and cheese has started to melt, 3 to 4 minutes. Flip each sandwich over and cook an additional 3 to 4 minutes.

When we moved from the Midwest to Kentucky, we were invited to a neighborhood gathering, where this appetizer was served. Hanky panky-as it's often called around here-is traditionally served at Derby Day parties, but at our home it's become a year-round favorite.

1/2 pound lean ground beef (90% lean)
1/2 pound bulk pork sausage
1-1/2 teaspoons chili powder
8 ounces Velveeta, shredded
24 slices snack rye bread
Fresh parsley sprigs, stems removed

Steps:

  • In a large skillet, cook the beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add chili powder and cheese; cook and stir until cheese is melted. Spread a heaping tablespoonful on each slice of bread. Place on a baking sheet. , Bake at 350° for 12-15 minutes or until edges of bread begin to crisp. Garnish with parsley. Serve warm.
