KIELBASA (SMOKED SAUSAGE) ROLL-UPS

I can't remember where I got this recipe. I just know they're quick and easy and I make them often! Try different mustard blends and add caramelized onion for extra flavor! :-) HINT: Slice each kielbasa chunk into 2-4 discs and lay them down (like fallen dominoes) before rolling them into the crescent roll. Then it's not quite as big of a bite!

1/4 cup light butter, melted
1 teaspoon Dijon-horseradish mustard
8 ounces Pillsbury Refrigerated Crescent Dinner Rolls
1 lb kielbasa (Lite) or 1 lb hillshire farm smoked sausage (Lite)
1 medium yellow onion, sliced thin and caramelized in (optional)
1 tablespoon butter (optional)

Steps:

  • Preheat oven 350 degrees.
  • Combine melted butter and mustard thoroughly.
  • Open package of rolls onto a sheet of waxed paper and separate into 8 pieces. (I use a pizza cutter along the perforated markings for this step.).
  • Brush each piece with the butter/mustard mixture. (You'll have some left-set aside for last step.).
  • Add caramelized onions. (Optional).
  • Cut sausage into 8 equal sections.
  • Place one sausage on each piece of dough on it's widest end. Carefully roll until the pointed end is on bottom. (Pinch and tuck sides in.).
  • Place pockets (seam side down) on ungreased baking sheet.
  • Brush tops with remaining butter/mustard mixture.
  • Bake 15-20 minutes or until golden brown in color.

12 slices bacon
1/2 lb pork sausage
8 ounces cream cheese
12 slices white bread

Steps:

  • Cut each bacon strip in half.
  • Cook bacon just until transparent; drain well and pat with paper towels to remove grease. If you are using the "ready-to-eat" bacon, you can skip this step.
  • Cook sausage in a skillet and drain well.
  • Mix cream cheese into sausage until well blended.
  • Trim the crust off of the bread and cut each slice in half.
  • Spread cream cheese mixture onto bread and roll up jelly-roll style.
  • Wrap each bread roll with a piece of the bacon and skewer with a toothpick.
  • Bake on an ungreased baking sheet at 350 degrees for 15 minutes.

There are a ton of these recipes out there, but mine includes delicious and spicy Italian sausage. Quick meal that the kids will love to help out with and of course, eat! Great with a bit of homemade garlic bread and a nice Caesar salad! Can be prepared up to 2 days ahead of time and stored in the fridge, just let it sit 30 mins at room temp. before baking.

12 lasagna noodles
2 cups ricotta cheese
1 egg
1/4 chopped fresh parsley or 1 1/2 tablespoons dried parsley
2 cups shredded mozzarella cheese, divided
8 ounces Italian sausage, casings removed
1 (28 ounce) jar of favorite marinara sauce

Steps:

  • Preheat oven to 375°F.
  • Cook noodles according to package directions.
  • Drain and rinse in cold water.
  • Mix ricotta, egg, parsley, and 1 cup mozzarella in a bowl, set aside.
  • Cook sausage in a skillet over medium heat until browned and crumbly; drain fat.
  • Spread 1/2 cup of sauce in a 9x13 baking dish.
  • Spread 3 tblsp of ricotta mixture on each noodle.
  • Top with sausage.
  • Roll up each noodle.
  • Arrange seam sides down in the baking dish.
  • Top roll-ups with remaining sauce and mozzarella.
  • Bake, loosely covered for 15 minutes.
  • Remove cover and bake for another 10 minutes or until cheese is brown and bubbly.

1 box Lasagna
1 tablespoon extra-virgin olive oil
3 teaspoons salt
1 small onion finely chopped
2-3 cloves chopped garlic
3-4 Sweet Italian Sausages
1 (10-ounce) package frozen spinach, thawed and squeezed dry
15 ounces ricotta cheese
1 large egg
1/2 cup grated Parmesan Regganio cheese
1 cup fresh chopped very fine mushrooms (Sautéed in butter and drained)
3 cups grated mozzarella cheese
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon ground black pepper
2 jars Bertolli Tomato and Basil spaghetti sauce

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9 x 13 casserole dish. Bring a large pot of water to a boil. Add the salt and the lasagna and cook until al dente, as per package, cool off with cold water and drain. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and garlic and cook, stirring, until very soft, 6 to 7 minutes. Add the sausage and cook, stirring, until cooked and browned, drain well. Remove from heat and season with salt and pepper. Chill. In a large bowl, combine the sausage mixture, spinach, ricotta cheese, egg, parmesan cheese, mushrooms and 1 cup of the mozzarella cheese. Add the spinach mixture, basil, oregano. Stir to combine thoroughly. In the prepared dish, add the Tomato Basil sauce. Spread about 2 tablespoons of the spinach-ricotta filling onto each cooked lasagna noodle and roll up tightly. Place on a cutting board seam side down and slice in the middle so that the curled edges will face up. Place the filled noodles in the prepared dish. top with the remaining Mozzarella cheese. 1 1/2 lbs sweet Italian sausage
2 cups cottage cheese
2 tablespoons flour
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon garlic powder
3 cups spaghetti sauce
10 (8 inch) white flour tortillas
2 cups mozzarella cheese, shredded

Steps:

  • Remove casing from sausage; cook sausage in skillet and drain off grease.
  • Stir in cottage cheese and add the flour.
  • Add the oregano, basil and garlic powder and 1/2 of the spaghetti sauce.
  • Divide the meat sauce mixture evenly among the 10 tortillas.
  • Roll up tortillas, seam-side down, and place in a 13x9 inch baking dish.
  • Pour remaining meat sauce over the tortillas.
  • Bake covered for 35 minutes at 350 degrees.
  • Uncover, sprinkle cheese on top and bake about 5 or 10 minutes more until the cheese melts.

1 lb good sausage
2 pkg 8 oz cream cheese, softened
1 can(s) chopped green chilies (flat can)
1 small onion, minced (about 1 1/2 tbsp)
1 jar(s) chopped pimentos (small jar)
1 c grated cheddar cheese
1-2 dozen flour tortillas
salt and pepper to taste

Steps:

  • 1. Cook sausage, mashing into very small pieces. Drain. Combine with cream cheese until well mixed. Add all other ingredients and mix well. Warm tortillas a couple at a time in the microwave (don't leave long, they will be hard). Spread a heaping tablespoon of mixture on the warm tortilla and spread all over, roll up like jelly roll and place in pan, seam side down. Continue until all are rolled. I like to cover mine and refrigerate over night, they cut better. But if you don't have time that is ok. Slice into 3/4 inch slices and place on plate. Continue until all are sliced.

2 cups Mom's Best Toasted Cinnamon Squares Cereal
1/2 teaspoon Ground Cinnamon
10 slices Whole Grain Bread
10 pieces Fully Cooked Sausage Links
4 pieces Eggs
1/2 cup Low Fat Milk
1 teaspoon Vanilla Extract

Steps:

  • Crush Mom's Best Toasted Cinnamon Squares Cereal in food processor or blender. Mix cereal with cinnamon in shallow plate or bowl; set aside.
  • Slice the crusts off of the bread. Flatten the bread slices with a rolling pin.
  • Place a sausage link on one edge of the bread and roll up tightly. Repeat.
  • Mix eggs, milk and vanilla in a shallow container.
  • Pour 1 tablespoon oil into 12-inch nonstick pan and heat over medium heat.
  • Dip rolls into egg mixture, rolling gently to coat all sides, then dip into cinnamon-cereal mixture; place in heated pan.
  • Cook about 1 minute per side, turning quickly and carefully until golden brown on all sides. Continue to use oil as needed, while browning roll ups. Serve warm and enjoy!

1 cup chopped sweet onion
1 garlic clove, minced
1/2 teaspoon pepper, divided
8 large eggs
3 tablespoons whole milk
1/4 teaspoon salt
1 tablespoon butter
3/4 cup shredded sharp cheddar cheese
3 green onions, chopped
15 sheets phyllo dough (14x9 in.)
1/3 cup butter, melted

Steps:

  • In a large skillet, cook sausage, sweet onion, garlic and 1/4 teaspoon pepper over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain. Remove and keep warm., In a small bowl, whisk eggs, milk, salt and remaining pepper. In same skillet, melt butter over medium-high heat. Pour in egg mixture; cook and stir until almost set. 24 fresh asparagus, ends trimmed off
4 ounces cream cheese with chives and onions, softened
4 ounces blue cheese, crumbled
1 teaspoon purchased Dijon mustard
1 tablespoon mango chutney
12 bread slices, crust trimmed
1 cup roasted garlic and herb chicken, turkey or pork sausage, browned and crumbled
¼ cup butter, melted
paprika

Steps:

  • Preheat oven to 400 degrees. Steam asparagus until crisp-tender, let cool. Stir together cream cheese, blue cheese, mustard and chutney. Roll each bread slice with a rolling pin to flatten evenly to 1/8-inch thickness. Spread one side of each bread slice with 2 tablespoons cream cheese mixture and top with 1 tablespoon sausage. Place 2 asparagus spears in the middle of each prepared bread slice and roll up. Place each roll, seam side down, on a baking sheet and brush lightly with butter. 12 chipolatas
2 x 250g packs croissant dough
5 tbsp onion marmalade, chutney or jam
2 tbsp tomato purée
1 tbsp wholegrain mustard
1 egg , beaten
1 tbsp sesame seed

Steps:

  • Heat oven to 200C/180C fan/gas 6. Sit the chipolatas in a roasting tin and cook for 15 mins.
  • Meanwhile, pop open the crossiant packs and unroll. Mix the onion marmalade, tomato purée and mustard, and spread some over each dough triangle. When the chipolatas are done, set aside for 5 mins to cool while you line 2 baking sheets with baking parchment. Lay a sausage along the wide end of each triangle croissant and roll up, encasing the sausages. Arrange on the sheets, brush with beaten egg and scatter with sesame seeds. Bake for 10-15 mins, switching shelves halfway, so both sheets cook evenly, until golden.
