1 pound Italian sausage links, cut into 1-inch pieces
1 large onion, halved and sliced
1 medium green pepper, sliced
1 tablespoon canola oil
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 can (8 ounces) tomato sauce
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
Grated Parmesan cheese, optional

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook the sausage, onion and green pepper in oil over medium heat until sausage is no longer pink and vegetables are tender. Add the tomatoes, tomato sauce and seasonings; heat through., Drain pasta; toss with tomato mixture. Sprinkle with cheese if desired.

3 small zucchini, cut into 1/2-inch slices
1 medium sweet yellow pepper, julienned
1 cup sliced fresh mushrooms
2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup dry red wine or reduced-sodium chicken broth
1 can (28 ounces) Italian crushed tomatoes
1 can (14-1/2 ounces) fire-roasted diced tomatoes, undrained

4-1/2 teaspoons Louisiana-style hot sauce

2 cups parsley leaves
8 cloves garlic, peeled and smashed
1/2 cup olive oil
2 28-ounce cans crushed tomatoes
1 1/2 teaspoons oregano
1 teaspoon thyme
2 tablespoons kosher salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon hot red-pepper flakes
5 pounds sweet Italian sausage in casing, cut into 1-inch lengths
2 tablespoons kosher salt
2 bay leaves
4 pounds rigatoni
3/4 pound mushrooms, cut into 1/4-inch slices through the stem (4 cups)
2 1/2 pounds bell peppers (about 6 peppers in assorted colors), cut into 2-inch chunks

Steps:

  • Make the marinara sauce ahead of time. Place the parsley and garlic in the work bowl of a food processor and process until finely chopped.
  • Heat the oil in a large saucepan over low heat. Add the parsley and garlic and cook until the garlic is soft, about seven minutes. Add the tomatoes and spices. Bring to a boil, lower the heat and simmer for five minutes. Remove from the heat and reserve.
  • Place the sausage in a large, deep saute pan - in batches if necessary - and cook until well browned. As the sausages are done, place on paper toweling to drain. Reserve the sausages, and the saute pan with its fat.
  • To assemble, bring one very large pot or two large pots of water to a boil for the pasta. Add the salt and bay leaves.
  • Return the saute pan to the stove and heat the fat over high heat. Add the mushrooms. Cook, stirring, until the mushrooms are browned. Add the peppers and cook for five minutes, stirring well and scraping the brown bits from the bottom of the pan.
  • Cook the pasta with the boiling water until just done, but not mushy.
  • Stir the mushrooms, peppers and reserved sausage into the marinara sauce. Heat through.
  • Drain the pasta and toss with the sauce.

Steps:

  • Heat olive oil on medium-high heat in a large dutch oven.
  • Add half of italian sausage and saute until golden brown.
  • Remove cooked sausage and repeat with remaining sausage.
  • Remove all sausage and set aside.
  • Add chopped onions and minced garlic to pot. Turn heat to medium low and saute 5 minutes.
  • Add tomato paste and saute until onions develop nice golden color. Stir frequently and WATCH CAREFULLY to make sure the tomato paste doesn't burn.
  • Once the onions are golden, add the wine and stir, incorporating all of the brown bits from the bottom of the pan. Let simmer for 5 minutes.
  • Add all remaining ingredients and browned sausage to pot and stir well.
  • Turn heat to medium low and simmer 45 minutes.

15 ounce can Hunt's Tomato Sauce
1 teaspoon black pepper

15 ounces ricotta cheese
1/4 cup parmesan cheese, grated

Steps:

  • To prepare the Italian Sausage Marinara
  • Heat the olive oil in a large skillet, add the diced onions, cook 3-4 minutes then add the garlic and cook for an additional minute.
  • Add the sausage and cook through.
  • Add the red wine, tomato paste, diced tomatoes and tomato sauce.
  • Add the kosher salt, black pepper, fresh basil, parsley and oregano.
  • Reduce to low, cover and simmer 20-30 minutes.
  • To prepare the Three Cheese Manicotti
  • Bring a large pot of water to boil.
  • Add the manicotti shells and cook 4-5 minutes, drain, then set aside.
  • In a medium bowl, combine the ricotta, 1 cup mozzarella, parmesan, basil, parsley and oregano.
  • Place this mixture in a piping bag, or plastic bag with a cut corner.
  • Pipe the cheese mixture into the manicotti shells.
  • Pour half of the Italian Sausage Marinara in a casserole dish.
  • Layer the manicotti shells on top.
  • Pour the remaining sauce over the shells.
  • Top with the remaining cup of mozzarella cheese.
  • Place in the oven and bake for 20-25 minutes.

1 medium carrot, diced
4 cloves garlic, minced

1 dried bay leaf
2 teaspoons sugar
Kosher salt
1 pound bucatini pasta or thick spaghetti
12 ounces ricotta cheese, room temperature

Steps:

  • Heat butter in a large saucepan over medium-high heat. Once melted, add the onion and carrot and saute until golden, about 7 minutes. Add the garlic, oregano, and red pepper flakes and cook 1 more minute. Add the tomatoes with their juice, bay leaf, sugar, and 2 teaspoons salt and bring to simmer. Reduce heat to medium-low and continue to cook, stirring occasionally, about 30 more minutes.
  • Prepare pasta while sauce simmers. Bring a large pot of generously salted water to a boil. Add the pasta and cook according to the package directions until al dente, about 12 minutes. Drain.
  • Remove sauce from heat, remove bay leaf, and carefully blend, in batches, to break up large pieces. Mix sauce with pasta. Serve individual portions topped with a heaping tablespoon of ricotta and garnish with basil.
  • Cut each link evenly in half lengthwise. Heat a grill pan over medium-high heat until hot. Place the sausage cut side down and cook, turning on all sides for even browning, until cooked through, about 10 minutes. Serve as an accompaniment with the bucatini marinara.

THREE-CHEESE TORTELLINI WITH CREAMY ITALIAN SAUSAGE MARINARA

This is a dish I invented to try and get my picky-eater son to eat something other than macaroni and cheese, hotdogs, or hamburgers! He always thought regular marinara sauce was too "strong tasting"....I think it is just too acidic for him. However, he loves cheese and loves italian sausage. Much to my surprise, I have found that I love this dish as well. I prefer to make the sauce myself, but if you are pressed for time, substitute your favorite pre-made sauce and just add the italian sausage and cream. If you aren't a fan of italian sausage, substitute 1/2 the sausage for ground beef or ground turkey. The rosemary is optional. I like it, but some don't like the taste. If you don't have a picky eater, I would add some mushrooms and possibly some bell peppers. I think those would be nice with the dish.

20 ounces refrigerated three-cheese tortellini
1 lb Italian sausage, Casings Removed
1/2 small onion, finely diced
1 (28 ounce) can crushed tomatoes or 1 (28 ounce) can tomato puree
1 (6 ounce) can tomato paste
1/4 cup red wine (don't use cooking wine, use a tastey red wine you would drink!)
1 teaspoon sugar
1 teaspoon dried oregano leaves, crushed
1 teaspoon basil
1 1/2 teaspoons parsley flakes
1/8 teaspoon dried rosemary (optional)
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup heavy cream
1/8 teaspoon dried marjoram
1/4 cup water, depending on your simmering time
1/4 cup parmesan cheese, shredded
1/4 cup romano cheese, shredded

Steps:

  • In a large, heavy stockpot or dutch oven, brown the Italian sausage, breaking it up to the consistency you desire.
  • Add the onions and cook until they are soft. Drain the grease from the pot.
  • Add garlic, crushed tomatoes, tomato paste, water, basil, oregano, parsley, marjoram, sugar, salt, pepper, and rosemary (if desired). When adding the water, consider how long you will be simmering. The water helps to merge the flavors, but you do not want the sauce to be too thin. If you will be simmering your sauce for a shorter amount of time, add less water. Stir all these ingredients together and bring to a slow boil.
  • Stir in red wine.
  • Simmer on low for at least an hour. Then add the cheeses and the heavy cream. Stir well, until the cream and cheeses are well blended into the sauce. Stir occasionally while the tortellini is cooking to prevent the sauce from sticking and to prevent the cream from scorching.
  • Bring water to a boil in another pot for the tortellini. Add a little olive oil to prevent the tortellini from sticking. Once the water comes to a boil, add the tortellini. Cook according to the package directions.
  • I usually reserve some of the sauce for spaghetti for another day -- I add some sauteed mushrooms then. I try to ration the sauce to the amount of tortellini. If you like lots of sauce, use all the sauce. But if not, save some for another pasta dish. It freezes well. At my house, it never lasts long enough to freeze!

1 cup whole wheat bread crumbs
1 egg, slightly beaten

Steps:

  • Sauté onion over medium heat with olive oil in a large sauce pan for 2 to 3 minutes.

4 tablespoons olive oil, divided
¼ cup Vidalia onion, diced
¾ pound bulk hot Italian sausage
8 large cloves garlic, minced, divided

1 teaspoon fennel seed
1 cup dry white wine
1 (24 ounce) jar Classico® Tomato and Basil Sauce
2 tablespoons minced fresh flat-leaf parsley

1 French baguette, sliced into 1/4 inch rounds
1 pinch Cracked black pepper
1 pinch Coarse sea salt

Steps:

  • Rinse clams in a strainer to remove any sand.
  • Heat the olive oil in a large pot (5-quart) over medium to low heat. Add the diced onions, stirring often, until the onions are translucent, about 5 minutes.
  • Add the sausage and garlic, red pepper flakes, and fennel. Cook until sausage is no longer pink, about 2 minutes. Drain oil.
  • Increase the heat to medium high. Pour in the wine and bring to a boil until it has reduced to about 3 tablespoons, approximately 5 minutes.

It gives this dish just the right "kick" to spice up your dinner, though feel free to add some red pepper flakes if you really like it hot! 2 tablespoons extra virgin olive oil
1 large yellow pepper, cut into thin strips
1 large red pepper, cut into thin strips
1 large yellow onion, cut into thin wedges
1 tablespoon fresh garlic, minced
1 lb andouille sausage, sliced into 1/2 inch pieces (I used Johnsville brand )
1 (22 ounce) can diced tomatoes, undrained
1 (6 ounce) can tomato paste
3/4 cup water
1 1/2 tablespoons italian seasoning
2 bay leaves
2 teaspoons paprika
1/4 cup sugar
salt and pepper

Steps:

  • In a large skillet over med-high heat, saute peppers and onion in the olive oil.
  • Once the vegetables are "crisp tender", add the garlic and sausage, sauteing for 1 minute, being careful not to let the garlic burn.
  • Add the diced tomatoes.
  • Whisk the tomato paste and water together and add to the skillet.
  • Add all the spices.

1 pound bulk pork sausage
1 (32 ounce) jar marinara sauce
1 green bell pepper, chopped
1 large onion, chopped
6 potatoes

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir pork sausage in the hot skillet until browned and crumbly, about 10 minutes; drain and discard grease.
  • Transfer sausage to a slow cooker and stir in marinara sauce, green bell pepper, and onion. Poke several holes in each potato with a fork and wrap potatoes in aluminum foil. Push potatoes into sausage mixture.
  • Cook on Low for 8 hours. Remove and unwrap potatoes, cut in half, and place into a serving bowl; serve sausage mixture over cooked potatoes.

1 pound turkey Italian sausage links, casing removed
1 medium onion, thinly sliced
1 medium sweet red pepper, julienned
1 medium green pepper, julienned

1 can (15 ounces) crushed tomatoes

5 tablespoons tomato paste
3 to 4 teaspoons sugar
1-1/2 teaspoons dried basil

2 tablespoon(s) olive oil
2 clove(s) garlic minced
1 medium shallot diced
1/4 cup(s) dry red wine
1 tablespoon(s) italian seasoning
3 ounce(s) tomato paste
28 can(s) crushed tomatoes
- salt to taste
11/2 cup(s) ricotta cheese
3/4 cup(s) grated parmesan
1 cup(s) shredded mozzarella
1 tablespoon(s) each fresh basil and parsley minced
1 package(s) puff pastry sheets thawed
1 medium egg beaten
1 tablespoon(s) water

Steps:

  • Add oil to large skillet. Saute shallots and garlic 2 minutes. Add wine and cook until almost all evaporated. Add sausage and break up into small pieces. A potato masher works good. Add the tomato paste, crushed tomatoes, Italian seasoning and salt. Simmer about 15 minutes.
  • Stir together the ricotta cheese, parm cheese, and mozzarella cheese. Stir in the fresh basil and parsley set aside.
  • Spray 8 small ramekins. Fill each ramekin half way up with cheese mixture. Top with sausage marinara mixture.
  • Roll out the puff pastry sheets using a ramekin cut out a round piece of dough about an inch larger than the diameter of the ramekin. Place the dough over the top of the ramekin pressing carefully down the sides.
  • brush with egg and water wash. Bake at 400 degree for about 30 minutes until dough is browned and no longer doughy.

We love the texture of khorasan wheat (often sold under the brand name Kamut). The long plump grains are chewy and buttery and go perfectly with marinara sauce. They're just as satisfying as a bowl of spaghetti but with a lot more fiber-11 grams per serving!

1 cup khorasan wheat berries, such as Kamut, picked through for pebbles
1 pound hot Italian pork or turkey sausage links
2 tablespoons extra-virgin olive oil
2 cloves garlic, thinly sliced
Kosher salt
Small pinch crushed red pepper
1 tablespoon tomato paste
One 15-ounce can whole plum tomatoes (no salt added), crushed by hand, with juices
Small handful fresh basil leaves, plus more for garnish
2 tablespoons grated Parmesan

Steps:

  • Bring a medium saucepan filled two-thirds full with water to a boil. Add the wheat berries, and cook until the grains have plumped and are tender but still chewy, 55 minutes to 1 hour; strain. (The wheat berries can be cooked and refrigerated up to 2 days in advance.)
  • Squeeze the sausage out of the casings, divide into 20 pieces and roll into Ping-Pong-ball-sized meatballs.
  • Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add the meatballs, and cook, undisturbed, until golden brown and crispy on the bottom, about 3 minutes. Flip and cook the other side until brown and crispy, about 3 minutes more. Remove the skillet from the heat, and transfer the meatballs to a plate. They should be about 3/4 of the way cooked. Wipe out the skillet.
  • Put the remaining 1 tablespoon oil, garlic, 1/2 teaspoon salt and crushed red pepper in the skillet, and set over medium heat. Once the oil starts to shimmer, stir until the garlic is lightly golden, about 30 seconds. Add the tomato paste, and stir until the oil turns yellow, about 30 seconds. Add the tomatoes and their juices, the basil and 1/2 cup water, and bring to a boil. Lower the heat to medium-low, and simmer gently for 5 minutes. Add the meatballs, and continue to simmer until the sauce thickens and the meatballs are cooked through, 5 to 7 minutes more.
  • Stir in the wheat berries, and transfer to a serving dish. Sprinkle with the Parmesan and basil, and serve hot.

olive oil
12 oz turkey sausage, casings removed
2 cloves garlic, minced
1/2 c mascarpone cheese, room temp
1 c shredded Fontina cheese
2 T fresh thyme
1/3 c italian breadcrumbs
1/4 c grated parmesan cheese
salt & pepper
1/2 onion, cooked (reserved from marinara sauce below)
Marinara Sauce
1 onion, chopped
1 garlic clove
1 14 oz can Contadina tomato sauce
marsala wine
grated parmesan cheese
salt & pepper
oregano

Steps:

  • Cook onion with olive oil in sauce pan. Remove 1/2 of the onion and reserve for sausage stuffing. Add rest of ingredients for marinara sauce. Simmer. In large skillet heat olive oil and cook sausage med-high heat, untill cooked thru. Add garlic and reserved onions. Cook 1 minute. Remove pan from heat. Stir in mascarpone. Add thyme, breadcrumbs, parmesan cheese, 1/2 of the fontina, salt & pepper. Stir till combined. Heat grill pan. Pre-heat oven broiler. Brush mushrooms both sides with olive oil and season with salt & pepper. Grill stem side down for 3 mins. Turn over and grill for 2 mins untill tender. Transfer to baking sheet. Fill each mushroom with sausage mixture and 1/2 of the fontina. Sprinkle with grated parmesan. Broil till warmed thru and cheese is melted. Serve with marinara sauce spooned over each mushroom.

1 (24 ounce) bag Simply Potatoes Traditional Mashed Potatoes
2 cups flour
1 egg, beaten
3 (1 ounce) Land O Lakes garlic and herb saute express squares
1 (24 ounce) can hunt's italian sausage spaghetti sauce

Steps:

  • Combine pasta sauce and 1 land o lakes garlic and herb sauté express square in a medium pot and cook on medium heat for 10 minutes stirring occasionally. Turn heat down and continue to cook while preparing pasta.
  • In a large bowl or on counter top add potatoes and make a small well in the center of the potatoes. Set 1/4 cup of flour to the side for rolling the gnocchi. Add 1 3/4 cup of the flour and beaten egg to the well while folding the potatoes into the egg and flour well with both hands until dough forms.
  • After mixture is incorporated knead for 2 minutes and dust counter with flour. Turn dough out onto counter and knead for another minute or two. Roll gnocchi out on counter into long strips and cut into 1/2 inch pieces. Drop pasta into boiling water for about 3-4 minutes or until pasta begins to float atop water.
  • Once pasta is ready add remaining land o lakes squares to a medium saute pan or skillet and heat for 1 minute Add cooked pasta and cook for 1 minute then add sauce or and cook for 5 minutes. You can also add the sauce to the pasta after plating.

2 c marinara sauce
4 duck eggs
1/4 c fresh basil chopped
grated fresh parmesan

Steps:

  • 1. Add oil to a large skillet. Add the onion and garlic and cook 3 minutes. Stir in the sausage and cook until sausage is no longer pink. Add the Marinara sauce and bring to a simmer.
  • 2. Make 4 wells into the sauce and crack the eggs into the wells. Place a lid on the pan and cook until eggs are set
  • 3. Serve topped with basil and sprinkled with parmesan.
