ROASTED SAUSAGE AND POTATO SUPPER

This will become a firm family favourite as it can be cooked in one dish and is so quick and easy to put together. Choose your favourite type of local, British sausage for this recipe - my family loves leek and sage.

Number Of Ingredients 9

2 tbsp olive oil
2 large onions, sliced lengthways into wedges
2 red peppers, deseeded and diced
2 garlic cloves, chopped
1 tbsp chopped fresh thyme leaves
500g/1lb 2oz baby new potatoes, halved
12 sausages, pricked with a fork
200ml/7fl oz white wine
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7.
  • Place all the ingredients except the wine in a large, resealable freezer bag. Seal the bag shut and shake well to coat everything in the oil. Alternatively, put everything in a large bowl and turn the ingredients until they are fully coated in the oil.
  • Tip into a large roasting tin, spreading the ingredients out into one even layer and ensuring that the sausages aren't covered by any of the vegetables. Season well with salt and pepper. Roast for about 30-35 minutes until golden-brown.
  • Remove from the oven, turn the sausages over and toss the vegetables in the cooking juices. Pour in the wine and return to the oven for a further 20 minutes or until browned and the sausages are cooked and the potatoes tender.
  • Serve hot with a dollop of mustard on the side.

SAUSAGE & LENTIL ONE-POT

1 tbsp olive oil
400g pack sausage
1 onion, finely chopped
1 garlic clove, crushed
1 red pepper, sliced
250g lentil (we used puy lentils)
150ml vegetable stock
125ml red wine or extra stock

Steps:

  • Heat oil in a pan, cook the sausages until browned, then remove. Tip in remaining oil, onion, garlic and pepper, then cook, about 5 mins more until softened. Add lentils and sausages to the pan with the stock and wine, if using.
  • Bring up to the boil, then simmer for 20 mins until lentils have softened and sausages are cooked through. Serve with plenty of crusty bread.

Use sausages as the base for this easy summer traybake. It's packed with artichokes, new potatoes, butter beans, tomatoes and fresh pesto, and is delicious with crusty bread

1 red onion , cut into wedges
4 new potatoes , thinly sliced
6 canned or jarred artichokes , halved
100g cherry tomatoes
4 spring onions , halved lengthways
2 pork sausages , cut into chunks
1 tsp fennel seeds
1 small lemon , cut into wedges
½ tbsp olive oil
400g can flageolet or butter beans , drained and rinsed
150ml low-salt vegetable stock
2 tbsp fresh pesto
crusty bread , to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 4. Toss the red onion, potatoes, artichokes, tomatoes, spring onions, sausages, fennel seeds and lemon wedges together in a baking tray or 20 x 20cm baking dish. Drizzle over the oil and season to taste (you won't need a lot of salt, as the sausages can be quite salty).
  • Roast for 20 mins, then add the beans and stock. Roast for 35 mins more, then remove from the oven, swirl through the pesto and serve with crusty bread, if you like.

8 sausages
2 x 400g packs ready-to-roast vegetables
3 garlic cloves, bashed in their skins
2 tbsp olive oil
1 tsp smoked paprika
2 x 250g pouches puy lentils
1 ½ tbsp sherry or red wine vinegar
1 small pack parsley, roughly chopped

Steps:

  • Heat grill to high. Put the sausages in a large roasting tin and grill for 8-10 mins until browning, then switch the oven on to 200C/180C fan/gas 6. Remove the tin from the oven and add the vegetables and garlic, then drizzle over the oil and toss in the paprika and some seasoning.
  • Roast for 30-35 mins more until the sausages and veg are mostly tender, then stir through the lentils and vinegar. Return to the oven for 5 mins until everything is heated through. Squeeze the garlic cloves out of their skins and stir the garlic into the lentils, then season to taste, stir through the parsley and serve.

1 cup dried lentils
½ cup chopped onion
8 ounces fully cooked kielbasa or Polish sausage, sliced
1 teaspoon ground cumin

Lincolnshire sausage & lentil simmer image

A one-pot hearty stew to share with friends and family - you can make ahead and freeze it if you prefer

1 tbsp vegetable oil
130g packet cubed pancetta or dried bacon
2 packets Lincolnshire pork, or other good sausages
2 onions, roughly chopped
1 large carrot, chopped into small pieces
4 garlic cloves, roughly chopped
3 sprigs fresh rosemary
300g Puy lentils
850ml/1½pts hot chicken stock
1 tbsp white wine vinegar
400g can chopped tomatoes
2 tbsp chopped flatleaf parsley
green winter salad with a mustardy dressing, to serve

Steps:

  • Heat the oil in a large casserole or very large sauté pan with a lid. Add the pancetta and sausages and sizzle for 10 minutes, turning the sausages occasionally until nicely browned and sticky. Scoop the sausages out on to a plate.
  • Add the onions, carrot and garlic to the pancetta and continue to cook for 3-4 minutes until the onions soften. Return the sausages to the pan and add the rosemary, lentils, stock, vinegar and tomatoes, then season with salt and pepper. Bring to the boil and simmer rapidly for 5 minutes, then lower the heat, cover and simmer for 45 minutes, stirring every so often until the lentils are tender. (It can now be chilled and frozen for up to 1 month.) Check the seasoning, scatter over the parsley and serve from the pan with a winter leaf salad.
