CREAMY ORECCHIETTE PASTA WITH ITALIAN SAUSAGE AND BROCCOLINI
Little ear pasta, also known as orecchiette, in a creamy sauce with Italian sausage and broccolini. Serve with a salad and garlic bread for a hearty Puglia-style supper. Serve with salad, bread, and your favorite Italian red wine.

Steps:
- Bring a large pot of salted water to a boil. Add 1 tablespoon olive oil and orecchiette and cook, stirring occasionally, until tender yet firm to the bite, 8 to 10 minutes. Drain and set aside.
- Meanwhile, heat a large (10-inch) skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard most of the fat. Transfer cooked sausage to a bowl and return skillet to medium-high heat.
- Add bell pepper and green onion to the skillet. Saute until white of onion becomes translucent, about 5 minutes. Add broccolini and garlic; saute until broccolini is crisp-tender, about 3 minutes more. Set vegetables aside.
- Melt butter in a larger skillet over medium heat. Add half-and-half and Parmesan cheese, stirring constantly until bubbly, about 5 minutes. Add cream cheese, Italian seasoning, salt, and pepper. Cook until sauce begins to thicken, about 5 minutes more.
- Add cooked sausage and vegetables to the skillet. Stir in drained pasta. Serve immediately.

PASTA WITH SAUSAGE AND BROCCOLINI
This is a really flavorful, easy to make pasta dish. The broccolini is a hybrid vegetable of broccoli and Chinese Kale. It is more tender and sweet than broccoli and less fibrous. Most of it is edible from the stalks to the florets. It really makes the dish better than the usual broccoli or broccoli rabe.

Steps:
- Slice sausage into bite size pieces and cook in large saute pan until fairly well done.
- Remove sausage from pan and drain on paper towels.
- Meanwhile, rinse broccolini, remove and discard only the ends of the stalks.
- Cut the rest of the broccolini into 2" pieces.
- Wipe the saute pan clean and heat olive oil.
- Add garlic and onion and cook for 2 - 3 minutes.
- Add broccolini and cook for 3 more minutes.
- Add can of chopped tomatoes with juice and cook for 2 more minutes.
- Add cooked pasta and sausage, tossing well to combine with the rest of the ingredients.
- Serve with fresh grated Parmeggiano Cheese and enjoy!

Steps:
- Bring a large pot of lightly salted water to a boil; cook the rotini until tender yet firm to the bite, about 8 minutes; drain.
- Heat olive oil in a skillet over medium-high heat. Add onion, garlic, and red pepper flakes; cook and stir until onion begins to brown, about 4 minutes. Pour 1/4 cup wine into the skillet; scrape up any browned bits of food with wooden spoon.
- Stir sausage into onion mixture; pour remaining wine in gradually as mixture becomes dry. Cook until sausage is thoroughly browned; 7 to 10 minutes. Add broccolini; cook and stir until just tender, 2 to 3 minutes more. Add pasta; toss to combine. Stir in Parmesan, lemon zest, lemon juice, salt, and pepper. Top with additional Parmesan to serve.

- 1, Cook Pasta according to package directions. Reserve pasta cooking water Meanwhile , heat olive oil in a large saucepan over medium heat. Add sausage and cook, crumbling it with a spoon, until no trace of pink remains, about 7 minutes. Spoon off and discard any excess fat. Add the garlic and cook for 1 minute. Add the broth and red pepper flakes and bring to a boil. Add the broccolini, cover and cook until tender, about 3 minutes.Stir in butter and parmesan and cook , uncovered, until the sauce thickens slightly about 2 minutes. Add the drained pasta, salt and pepper and 1 cup pasta cooking water and toss to combine. Set aside for a few minutes before serving to allow pasta to absorb some of the flavorful liquid To serve, divide pasta among individual bowls with crusty bread if desired NOTE: You can use broccoli, broccoli rabe or swiss chard if you prefer
SAUSAGE & BROCCOLINI PASTA
Steps:
- -Bring a large pot of well salted water to a boil and cook pasta according to package. *Make sure to set aside one cup of the starchy water before draining. -Brown sausage in a large pan with the two cloves of minced garlic. Drain fat from pan when finished and add about 1 inch of water to the bottom, bring to a boil. -Add broccolini and put lid on pan to steam cook for 3-4 minutes. Cold shock broccolini in a bowl of ice water then chop off steams and cut in bite size pieces. -Return pasta, sausage and broccolini to pot and add a little heavy cream, starchy water, parmesan and red pepper flakes. *Keep adding little by little till you receive the desired consistency. -Add lots of parmesan! -Finish with some cracked fresh pepper and a touch of kosher salt.
