SPAGHETTI WITH SAUSAGE-MUSHROOM SAUCE



Spaghetti with Sausage-Mushroom Sauce image

Kosher salt
12 ounces spaghetti
3 teaspoons extra-virgin olive oil
3/4 pound sweet or spicy Italian sausage, casings removed
1 8-ounce package sliced mixed mushrooms
Freshly ground pepper
3 tablespoons tomato paste
1 teaspoon chopped fresh rosemary
1/4 cup heavy cream
Shredded Parmesan cheese, for topping (optional)

Steps:

  • Bring a pot of salted water to a boil. Add the spaghetti and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat 1 teaspoon olive oil in a large nonstick skillet over medium heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, about 5 minutes. Transfer to a bowl.
  • Add the remaining 2 teaspoons olive oil to the skillet and increase the heat to medium high. Add the mushrooms, season with salt and pepper and cook until lightly browned, 3 to 4 minutes. Stir in the tomato paste and rosemary and cook, stirring, 1 minute. Return the sausage to the skillet, then add the cream and 1 cup water; bring to a gentle simmer and cook until slightly thickened, 8 to 10 minutes. Season with salt and pepper.
  • Add the spaghetti to the skillet and toss with the sauce, adding some of the reserved cooking water to loosen, if needed. Top with shredded Parmesan, if desired.

4-6 sweet italian sausage
1/2 c sweet onion, sliced
2 clove garlic, minced
15 oz can of dice tomatoes w/oregano, basil & garlic, no salt added, pureed in food processor
2 slice bacon, diced
2 c mushrooms, sliced
1/4 stick unsalted butter
1/2 c parmesan cheese
1 lb dry pasta

Steps:

  • 1. Slice sausage links in 1/2" slices, place in skillet with diced bacon, onion and garlic and cook until browned. Drain off grease and add mushrooms, puree diced tomatoes, a few drops of lemon juice and a pinch of sugar and salt to taste. Allow to simmer for about 20 min.
  • 2. Cook pasta according to package directions. Drain pasta, add butter and stir until melted. Add 1/4 c parmesan and toss. Now add to sauce and toss well to coat. Garnish with Parmesan and Basil.

PASTA ALLA BOSCAIOLA

Pasta alla boscaiola, aka "Woodman's Pasta", is a classic Tuscan Italian sauce made with smoky bacon, earthy mushrooms, tomatoes and cream, creating the ultimate Italian comfort food!

6 slices thick cut bacon (diced)
1 pound fresh mushrooms (thinly sliced)
1 cup onion (thinly sliced)
3 cloves garlic (minced)
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
28 ounce can peeled whole tomatoes and their juices (puréed in a blender or food processor)
¾ cup dry white wine
½ teaspoon kosher salt
½ teaspoon black pepper
1 pound pasta noodles (pappardelle, fettuccine or tagliatelle)
1 cup heavy cream
½ cup peas
¼ cup fresh Italian parsley (chopped)
2 tablespoons parmesan cheese (grated)

Steps:

  • In a Dutch oven or large sauté pan on the stove, cook the chopped bacon over medium-high heat, stirring often, until browned, about 5-7 minutes.
  • Using a slotted spoon, transfer the bacon to a paper towel lined plate or bowl and set aside.
  • Add the mushrooms to the pan with the bacon fat and return to medium-high heat. Cook, stirring often, until mushrooms are browned, about 8 minutes
  • Add the onion, garlic, and thyme to the pan and sauté for 5-6 minutes
  • Add the puréed tomatoes and white wine.
  • Season with salt and pepper.
  • Bring to a simmer, then lower the heat to maintain a bare simmer.
  • Simmer for 10-15 minutes.
  • Meanwhile, bring a pot of salted water to a boil.
  • Add pasta and cook until al dente.
  • Drain pasta, reserving about one cup of the pasta-cooking water.
  • Add the cream to the pasta sauce along with the peas, drained pasta and cooked bacon.
  • Bring to a simmer, adding reserved pasta-cooking water as needed to thin the sauce, until the sauce reaches your desired consistency.
  • I recommend adding no more than 1-2 tablespoons of cooking water at a time.
  • After the sauce reaches your desired consistency, remove the pasta and sauce from the heat and stir in the parsley and cheese.
  • Serve additional parmesan cheese on the side for grating over the plated pasta.

Italian sausage and sauteed mushrooms make this three-cheese pasta bake special.

3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
One 28-ounce can whole plum tomatoes, crushed by hand
One 15-ounce can whole plum tomatoes, crushed by hand
4 large sprigs fresh basil, plus chopped fresh basil, for serving
3/4 pound sweet Italian sausage, casings removed
1 pound cremini or button mushrooms, sliced
1 pound dried rigatoni
3 cups shredded provolone
1 cup grated pecorino
1 cup fresh ricotta

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard the basil. Season with salt and pepper.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon. Add the mushrooms to the skillet and cook, stirring occasionally and reducing the heat slightly if necessary, until golden brown, about 6 minutes. Add the mushrooms to the bowl with the sausage.
  • Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and add it to the bowl.
  • Add the tomato sauce and half of the provolone and pecorino to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish and dollop spoonfuls of the ricotta on top. Top with the remaining provolone and pecorino. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving. Sprinkle with chopped basil.

MUSHROOM & SAUSAGE PASTA

4 sausages, skin removed and meat squeezed out
4 bacon rashers, diced
200g mushrooms, chopped
350g pasta shapes
50g parmesan, grated, plus extra shavings to serve
2 egg yolks
small bunch parsley, finely chopped
2 tbsp half-fat crème fraîche

Steps:

  • Dry-fry the sausage meat in a non-stick pan for 8-10 mins until browned, breaking it up with a wooden spoon, then remove and set aside. Fry bacon and mushrooms for 5-8 mins until golden, return the sausage meat and keep warm.
  • Cook the pasta following pack instructions. Make the sauce by beating together the Parmesan, egg yolks, most of the parsley and the crème fraîche. When the pasta is cooked, drain, reserving a ladle of the cooking water.
  • Combine the pasta and meat mixture over a low heat and add the sauce. Season and quickly mix, adding a splash of cooking water if it's a little thick. Spoon into bowls and eat with the extra Parmesan shavings and remaining parsley on top.

1 tbsp olive or sunflower oil
454g pack good-quality sausage , cut into chunky pieces
250g chunky chestnut mushroom , halved
500g pack cherry tomato
2 sprigs rosemary , leaves roughly chopped
handful flat-leaf parsley , chopped

Steps:

  • Cook pasta according to pack instructions. Heat the oil in a deep frying pan, then fry the sausages and mushrooms for 5 mins until golden. Add the tomatoes and cook for about another 3 mins on a high heat until the tomatoes pop and start to form a sauce. Season to taste, then add the herbs and drained pasta and stir well.
