CHEESY SAUSAGE EGG BREAKFAST TACOS

Steps:
- In a large frying pan, cook sausage until there is no pink and cooked thoroughly. Drain grease and add sausage to a medium oven safe bowl. Place in 170° oven to keep warm.
- In another frying pan, add about 1/4" of oil in bottom of pan. Heat over medium flame and once oil is hot, gently place potatoes and onions into pan. Sprinkle with garlic salt and pepper. Cook until potatoes are done and golden brown.
- Fry up the corn tortillas and place on a plate lined with paper towels and place in the oven until ready to fill.
- In the frying pan the sausage was cooked in, add eggs and scramble until done.
- To assemble the breakfast tacos, add a spoonful of potatoes in the bottom of the tortilla, followed by sausage, Jack cheese, scrambled eggs, Pepper Jack cheese then top with sour cream, avocados and tomatoes.

- Crack the eggs into a small bowl and whisk to combine.
- Heat the olive oil in a medium nonstick pan over medium heat until shimmering and add the beaten eggs, salt, and pepper. Using a rubber spatula, stir the eggs often until firm, roughly 3 minutes.
- Divide the eggs between the tortillas.
- Top each taco with pico de gallo, black beans, and cilantro.

- 1. Brown the sausage, crumbling it as it cooks. Drain off the grease.
- 2. Beat the eggs well. Pour into the skillet with the sausage.
- 3. Cook stirring often until the eggs are done.
- 4. Divide the sausage mixture evenly between the 6 torlillas, placing it in the center of each.
- 5. Sprinlke each with cheese. Add picante sauce if desired.
- 6. Roll each taco. Serve warm.

- Crumble the sausage into a skillet over medium-high heat. Cook and stir until evenly brown. Set aside.
- Heat one skillet over medium heat, and heat another skillet over high heat. The skillet over high heat is for warming tortillas. In a medium bowl, whisk together the eggs, milk, salt and pepper. Spray the medium heat skillet with some cooking spray, and pour in the eggs. Cook and stir until almost firm. Add the sausage, and continue cooking and stirring until firm.
- Meanwhile, warm tortillas for about 45 seconds per side in the other skillet, so they are hot and crispy on the edges, but still pliable.
- Sprinkle a little shredded cheese onto each tortilla while it is still hot. Top with some of the scrambled egg and sausage, then add hot pepper sauce and salsa to your liking.
