Creamy Smoked Sausage Mac and Cheese image

Number Of Ingredients 7

1 (13-ounce) package Kiolbassa Polish Smoked Sausage, sliced
1 (16-ounce) block sharp cheddar cheese
1 (1-pound) box elbow macaroni
4 cups milk
6 tablespoons unsalted butter
6 tablespoons all-purpose flour
1 1/2 teaspoons salt

Steps:

  • Lightly brown the sausage in a large skillet over medium heat. Remove from the pan and drain on paper towels. Set aside.
  • Grate the cheese on a box grater. Set aside.
  • Cook the pasta according to the package instuctions and drain. Set aside.
  • Pour the milk into a microwavable container and heat until warm - about 2 1/2 minutes.
  • In a large stock pot or dutch oven, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually add the warm milk, whisking constantly until it has all been added. Cook, stirring very frequently to prevent scorching, until thick - about 5 minutes. Reduce the heat to low and gradually add the shredded cheese, stirring constantly until melted. Add the salt and mix well. Add the pasta and sausage to the pot and mix well. Add additional salt and pepper to taste. Serve immediately.

Sausage and 3-Cheese Mac and Cheese image

This was from a Rachel Ray show on TV and was sooo good. It is a bit time consuming though. I know it isn't low cal, but I would make it again and just try to cut back a little by substituting soy milk for the half and half, etc. Any pasta can be used, but a "short" pasta, like elbows, cavatappi works well.

1 lb pasta
2 tablespoons extra virgin olive oil
3/4 lb sweet Italian sausage
1 small yellow onion, chopped
4 large garlic cloves, chopped
3 tablespoons flour
1 cup chicken stock
3 cups milk or 3 cups half-and-half
1 pinch nutmeg
1 1/2 cups asiago cheese, grated
2 cups provolone cheese, grated
2 cups breadcrumbs (for stuffing)
4 tablespoons butter, melted
1/2 cup parmigiano-reggiano cheese, grated
1/2 cup flat leaf parsley, chopped (optional)

Steps:

  • Preheat broiler on high.
  • Place a large pot of water over high heat and bring up to a boil. Once boiling, add some salt and the pasta. Cook the pasta to al dente according to package directions. Drain and set aside.
  • While the water is coming up to a boil to cook the pasta, heat the olive oil in a large skillet over medium high heat.
  • Add the sausage and break it up it to little pieces as it starts to cook. Cook sausage until brown about 4-5 minutes. Remove sausage from the skillet and drain off all but about 3 tablespoons of the fat.
  • Return the skillet to the heat and add the onion and garlic, and season with a little salt and a lot of pepper.
  • Cook, stirring frequently, for 3-4 minutes or until the onions start to get soft. Sprinkle onions with the flour and continue to cook for about 1 minute.
  • Whisk in the chicken stock and milk, bring up to a simmer and season it with the nutmeg. Add the Asiago and provolone cheese, and stir until melted.
  • Add the drained pasta and cooked sausage to the cheese sauce. Stir to combine, then transfer to a baking dish.
  • In a bowl, combine the bread crumbs, melted butter, Parmigiano and chopped parsley. Toss to combine then sprinkle over the mac and cheese in the baking dish.
  • Place baking dish in the broiler and broil until the bread topping is nice and brown.

Kosher salt
1 pound elbow macaroni
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
1 red bell pepper, seeded and chopped
1 onion, chopped
2 1/2 cups half-and-half
1/4 teaspoon cayenne pepper
Two 8-ounce packages cream cheese, at room temperature
One 8-ounce block sharp Cheddar, grated
1 cup grated Gruyere

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions for al dente. Reserve 1 3/4 cups of the pasta cooking water and then drain the pasta; set aside.
  • Heat the oil in a large Dutch oven or saucepot over medium-high heat. Add the sausage and cook until lightly browned, breaking up the meat into small pieces, about 5 minutes. Transfer the browned meat to a plate with a slotted spoon. Add the bell pepper, onion and a pinch of salt to the drippings in the pot and cook, stirring occasionally, until softened and lightly browned, 10 to 12 minutes; transfer to the plate with the sausage.
  • Carefully wipe out the pot, add the half-and-half and cayenne and bring to a simmer over medium heat. Simmer until reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Gradually whisk in the Cheddar and Gruyere, 1 handful at time, until all the cheese is melted and the sauce is smooth. Remove from the heat.
  • Add the cooked pasta and reserved pasta cooking water to the cheese sauce and stir to combine. Stir in the sausage and vegetables; adjust the seasoning with additional salt. Pour into a 9-by-13-inch baking dish and bake until bubbly and lightly browned, about 10 minutes.

6 tablespoons butter, cubed

3/4 teaspoon freshly ground pepper
1/4 teaspoon freshly ground nutmeg
1-1/2 cups panko bread crumbs
1/2 cup grated Parmesan cheese
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. Cook macaroni in a 6-qt. stockpot according to package directions for al dente. Drain; return to pot., In a large saucepan, melt 6 tablespoons butter over medium heat. Stir in flour until smooth; whisk in warmed milk. Bring to a boil, stirring constantly; cook and stir 2-3 minutes or until thickened., Remove from heat; stir in Gruyere and cheddar cheeses, salt, pepper and nutmeg. Add to macaroni, tossing to coat., Transfer to a greased 13x9-in. baking dish. Toss bread crumbs with Parmesan cheese and melted butter; sprinkle over casserole. Bake, uncovered, 30-40 minutes or until bubbly and top is golden brown.
