Altdeutscher Sauerkraut-Kuchen (German Sauerkraut Pie) image

A traditional German recipe that may be an acquired taste for some. This is similar to a quiche, but less eggy. If you can't find bacon you can dice, I think diced Canadian bacon or cooked dice ham would also be nice in this. TIP: If you use kitchen shears to chop up your sauerkraut before adding it to the recipe, it will be easier to cut the pie.

2 cups thick german bacon, diced (Speck) or 2 cups thick bacon, diced into cubes
1 large onion, diced ((about 1 cup))
1 teaspoon caraway seed, (or less to taste) (optional)
1 (2 cup) can german style sauerkraut, drained well,rinsed if desired
1 cup sour cream
2 large eggs
2 cups white hard cheese, grated ((such as Swiss or Gruyere))
1 9 inch prepared pie pastry dough, unbaked

Steps:

  • Line a deep dish pie plate with enough pastry to make a crust on the bottom and sides and set aside.
  • Cook diced Speck or bacon in a skillet; drain fat, reserving 1 tsp in which to saute the onions.
  • Sprinkle diced bacon, caraway seeds, and sauteed onions in pie plate.
  • Combine the remaining ingredients (sauerkraut, sour cream, eggs, and grated cheese) and pour into the pan as if you were filling a quiche.
  • Bake at 325-350 F (or 175 C) for about 45 minutes or until a knife inserted near the center comes out clean, not gloppy.
  • Let cool slightly before serving.

1/4 cup white sugar
1/4 cup light brown sugar
3 eggs
2 1/2 cups milk
3/4 cup sauerkraut (chopped and well drained)
1 1/2 teaspoons vanilla extract
1/8 teaspoon salt
1 pie shell (9 inch)
1 dash cinnamon
1 dash nutmeg
1 cup whipped cream

Steps:

  • Preheat the oven to 425 degrees F.
  • In a large bowl, mix milk, well drained chopped sauerkraut, brown and white sugars, eggs, vanilla, salt, cinnamon, and nutmeg.
  • Pour mixture into 9 inch pie shell.
  • Bake at 425 degrees F for about 30 - 35 minutes or until a knife inserted into filling about half way between edge and center, comes out clean.
  • Serve topped with a tablespoon or two of whipped cream.

Found this recipe in an old cookbook about 20 years ago. It had no name of contributor. It was called, simply, Old Sauerkraut Dish. My family,mostly, likes Sauerkraut and even the ones who didn't liked this!It was easy and cheap and became a fast "go to" dish. Great because the kids could easily make it, if need be.

3 lb lean ground beef
3 can(s) sauerkraut, very well drained
6 c prepared mashed potatoes
1 c diced onions
1 tsp salt, or to taste
1/2 tsp pepper, or to taste
1/2 tsp garlic, or to taste
3 c frozen corn, or can divide lg bag, still frozen
3 c shredded cheese, your pick

Steps:

  • 1. Pre-heat oven to 350, and spray 2 casseroles , a 9x13 and 9x9 with non stick spray. Set aside.
  • 2. Brown ground beef with chopped onion and seasonings. Drain and divide between the 2 casserole dishes.
  • 3. Top with frozen corn, then add the layer of sauerkraut again divided into the pans.
  • 4. Mix 1 cup of cheese into the potatoes. If the potatoes are not seasoned, season with salt and pepper and garlic. You can use instant mashed potatoes, I often do.
  • 5. Spread the potatoes, onto both dishes and top with remaining cheese.
  • 6. Bake until bubbly and cheese is well melted. Serve with salad of choice for a hearty meal. Seldom had any leftovers. : < ((

Mom made this when we were kids. My sister and I still make it, for our families. Makes great use of leftover mashed potatoes. This is a recipe we have never measured, just by site, it is only 3 layers and easy!

1 -2 lb hamburger (or 1/2 beef & 1/2 deer)
1/2 onion, diced
27 ounces sauerkraut, rinse if you like
3 -4 cups prepared mashed potatoes, left-over's
1 teaspoon salt
1 teaspoon fresh ground pepper
2 teaspoons celery salt

Steps:

  • Brown hamburger, drain if needed.
  • add onion, saute lightly.
  • Mix in spices if you wish or do your own spice thing.
  • take off burner.
  • open Kraut and drain if you wish.
  • spread sauerkraut top of hamburger, ya it is like raking hay, use your hands,do not over fill there is potatoes yet to go.
  • Spread Mashed potatoes over the top, and to the edges, to "seal in", this will bubble. Cut with wet knife in center to vent steam.
  • Add butter or marg on top if you wish.
  • Bake 350 for about 45 min, or until top browns.
  • Sis likes hers with bo-Mondy? this is a spice, Brother likes his with cheddar or mozzarella cheese melted on top.
  • This is a one pan clean up, but you can do it in a deep cass. dish also.
  • All ingredients depend on your pan size. This is easy to "make bigger", as more company comes in the door.

1 can(s) sauerkraut, rinsed thoroughly
1 c shredded coconut
1 c half and half
3 eggs
1 1/2 c dark brown sugar
2 Tbsp vanillla
1 tsp almond extract
1 1/2 Tbsp special dark cocoa powder
1 c dark chocolate chips
2 Tbsp cornstarch
1 tsp cinnamon
1/2 tsp allspice, ground
TOPPING
2 Tbsp demerara sugar
holiday sprinkles, optional
CRUST
1 cinnamon coconut pie crust

Steps:

  • 1. Mix all filling ingredients in a mixing bowl, mixing completely. Set aside.

1 puff pie crust
1 cup cream or 1 cup milk
1 1/2 lbs cooked sauerkraut, drained dry
3 tablespoons tomato sauce
1 lb kielbasa or 1 lb bacon, lightly fried
par-boiled diced potato (optional)
1 tablespoon paprika
1 pinch fresh ground pepper
1 egg yolk

Steps:

  • Prepare your dough.
  • Grease a casserole dish, which you line with appro.
  • 2/3 of the dough.
  • Arrange layers of cooked kraut,& frankfurters, or bacon.
  • (you can even add slightly cooked diced potatoes& add).
  • Mix together the cream, tomato sauce, and paprika.
  • This you pour over the pie filling.
  • Roll the remaining dough over and prick with a fork.
  • Or if you prefer, you can also cut strips and basket-weave a pattern on top.
  • Brush this pastry with the egg yolk then Bake it in the oven at 350* for 1 hr.

2 large baking potatoes, peeled and shredded, squeezed dry
1 cup sauerkraut, squeezed dry
2 teaspoons caraway seeds
4 eggs
1 cup heavy cream
8 slices of cooked bacon, crumbled
salt and pepper to taste
1 9-inch pie crust

Steps:

  • Preheat oven to 350. Mix potatoes, sauerkraut, and caraway seeds in a large bowl. In a small bowl, mix eggs, cream and salt and pepper. Pour the egg mixture into the potato and sauerkraut bowl and mix. Poor into pie shell. Place pie shell on cookie sheet and bake for 35 minutes.

3 c mini marshmallows
1 c heavy cream
1/4 c granulated sugar
2 tsp cornstarch
1 tsp pure vanilla extract
3 large eggs
4 Tbsp kahlua
1 small can sauerkraut, drained ,rinsed and cut up fine
1/4 tsp cinnamon
1 pinch nutmeg
1 8 or 9 inch pre-made graham cracker pie crust

Steps:

  • 1. In a large heavy bottom saucepan put in the marshmallows, cream, sugar and vanilla. Stir over low heat until marshmallows have melted.Beat eggs and add the cornstarch to the eggs. Place 3 or 4 tablespoons of the marshmallow mixture to the egg mixture and stir so eggs do not curdle. Now add this to the marshmallow mixture and stir well. Remove for the heat.
  • 2. Add the sauerkraut, Kahlua, and cinnamon. Blend together. Pour into pie shell and bake at 425^ for 10 minutes. Sprinkle nutmeg on top of pie. Turn temperature down to 350^ and bake for 20 more minutes or until silver knife inserted in the center comes out clean. Cool on wire rack.

  • Drain kraut and rinse with cold water -- squeeze dry.
  • Cream butter, sugar and add flour, cornmeal, eggs, milk, vanilla and lemon juice. Beat well and pour into two unbaked 9" pie crusts --

I made this tonight and it is a great way to make kraut. I served it with a side of sweet corn. MMMM! It goes together quickly especially if you have frozen mashed potatoes or leftover mashed potatoes. I hope you enjoy it. If you like kraut you will!

2 c sauerkraut, drained
1/4 c diced sweet onion
1 lb keilbasa
4-6 c potatoes, mashed
8 Tbsp grated parmesean, divided

Steps:

  • 1. Drain sauerkraut and mix chopped onions or dehydrated onions if you prefer with kraut. Put in a lightly greased casserole dish.
  • 2. Slice sausage and place on top of kraut and onion.
  • 3. Prepare mashed potatoes. OR To save time, one could use the prepared frozen mashed potatoes made as directed. Add 2 Tablespoons grated parmesean cheese and mix well. Put on top of sausage. Sprinkle potatoes with 5 tbsp. parmesean.
  • 4. Bake at 400 degrees for 35-45 minutes uncovered or until nice golden brown. Serve with additional butter melted on top if desired. We did and it was to die for!
