This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

When my husband's Grandmother died, I was the designated person to bring this to all holiday dinners (even though I'm Irish!) since I learned what to do by watching her. She always used fresh rather than smoked Polish Sausage.

4 lbs Polish sausage, fresh if possible
1/2 lb bacon
1 small yellow onion
2 (27 ounce) jars sauerkraut
1/2 cup brown sugar
3/4 cup water

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Bring sausage to boil and simmer 15 minutes; drain and set aside.
  • Cut bacon into small pieces.
  • Begin browning, then add diced onion.
  • Saute together until bacon is almost crisp.
  • Drain mixture, reserving bacon grease.
  • Drain sauerkraut (do not rinse).
  • Add sauerkraut and brown sugar to bacon mixture.
  • Mix in about 2 Tablespoons reserved bacon grease and water.
  • Place in large casserole dish.
  • Cut Polish sausage into 3" pieces and place on top of sauerkraut.
  • Cover and bake at 325 degrees Fahrenheit for 1 hour 15 minutes, checking sauerkraut mixture halfway through to add more water if sauerkraut appears very dry.
  • Finish baking; remove from oven.
  • Taste sauerkraut and, if desired, adjust flavor by adding salt and pepper, or a little more brown sugar, vinegar or bacon grease to your taste. (Note: In the old days, Busia (Grandma) would soak a cup of yellow peas overnight to soften them and would mix them into the sauerkraut. It was probably to stretch the quantity, but I don't do it anymore!).

1 ⅓ cups all-purpose flour
1 teaspoon salt
3 eggs
⅓ cup water
1 teaspoon vegetable oil
2 slices bacon, diced
½ large onion, chopped
2 tablespoons butter
1 small Gala apple, cored and chopped
2 tablespoons brown sugar
1 (16 ounce) package sauerkraut
1 (16 ounce) package kielbasa sausage, cut into 2-inch pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a metal colander.
  • Whisk together the flour and salt in a bowl. Mix the eggs and water, and pour into the flour mixture. Stir to form a dough.
  • Bring a pot of water to a boil. Place the spaetzle dough into the oiled colander, and set the colander over the pot of water. Use a flexible spatula to push the dough into the boiling water through the holes in the colander. Stir the spaetzle as they boil. When they have floated to the top, they are done (about 5 minutes). Scoop the spaetzle out of the boiling water, and place into an ungreased 9x9-inch baking dish.
  • Place the bacon in a skillet over medium heat, and cook, stirring often, until the bacon is crisp, about 8 minutes. Remove bacon, leaving drippings in pan, and set aside. Cook the onion in the same pan as the bacon until browned, about 10 minutes.
  • In a large skillet, melt the butter over medium heat until foamy, and stir in the apple and brown sugar. Cook and stir until the apple is soft, about 5 minutes. Transfer the cooked bacon, onions, and sauerkraut into the skillet, and cook, stirring often, until the flavors have blended, about 5 minutes. Pour the sauerkraut mixture into the 9x9-inch baking dish on top of the spaetzle.
  • Place the kielbasa pieces into a microwave-safe dish, and cook on full power in a microwave oven until the sausage is hot and has lost its pink color, 2 or 3 minutes. Transfer the sausage to the baking dish.
  • Bake in the preheated oven until bubbling, about 15 minutes.

I need to say up front that this one is a spin-off of Mareesme's: Recipe #199769 -- but I didn't have the proper ingredients for that fine recipe so I changed to smoked sausage and I eliminated the stovetop techniques, so it's all just baking/broiling. Hey, this was GOOD and I credit Mareesme for turning me on to the basic ingredients and some shrewd seasoning with the little touch of brown sugar. 1 lb smoked sausage
6 slices bacon
32 ounces sauerkraut, drained, not rinsed
1/2 medium onion, diced
1 teaspoon brown sugar
1/4 cup water

Steps:

  • Preheat oven to 350-degrees F.
  • Cut the smoked sausage into 6 pieces.
  • In a 9" x 9" ungreased baking dish, layer in half the sauerkraut and then lay out the sausage on top of it. Cover with the remaining sauerkraut.
  • Spread the diced onion over the sauerkraut, lay out the bacon slices across the casserole, and then sprinkle the brown sugar over it. Pour the water over the casserole which will make the sugar dissolve a bit. Cover with aluminum foil and bake on the middle rack for 90 minutes.
  • At the end of the 90 minutes, remove the aluminum foil and, on the same rack, BROIL for 6 minutes. Serve hot along with mashed potatoes.

1/2 cup boiling water
1/4 pound salt pork, in small cubes
1 medium onion, diced
1 tart apple, peeled, cored and diced
2 pounds sauerkraut
2 cups canned tomatoes
Salt and freshly ground black pepper
1 pound Kielbasy, cut into 1/2-inch-thick slices
2 cups cooked meat or game (beef, veal, venison or duck) in one-inch cubes
1 apple, peeled, cored and cut into wedges
1 bay leaf
1 cup dry white wine

Steps:

  • Cover mushrooms with boiling water and set aside to soften.
  • Cook the salt pork in a large, heavy sauce pan until golden brown. Add onions and saute until soft but not brown. Stir in the apple and saute another minute or two.
  • Rinse the sauerkraut in cold water and squeeze very dry. Add sauerkraut to the saucepan and cook for several minutes. Stir in the tomatoes, the mushrooms and their liquid and simmer for 15 minutes.
  • Preheat oven to 350 degrees. Season the sauerkraut mixture with salt and pepper. Spread one-third of the sauerkraut mixture in a large casserole, about 3-quart capacity. Cover with half the meats, both the sausage and the cooked meat. Cover with half remaining sauerkraut, the rest of the meat and then the last of the sauerkraut. Arrange the apple wedges in a pattern on top, place a bay leaf in center and pour the wine over it. Bake covered for 1 1/2 hours.
  • Serve with boiled potatoes and pickles.

  • Place sauerkraut in a colander in the sink and press all the liquid out using the back of a large spoon. Flake sauerkraut into a large bowl and add sausage; mix well. Form sausage mixture into quarter-size balls and arrange on the rack on the prepared baking sheet.

My son was about a year and a half old, my dad was eating leftovers and he barely had enough to satisfy his hunger, and my son indicated that he wanted to eat some of what his granddaddy was eating. Being a good grandfather, he relented and gave into my son's wishes. Being older and FAR more treacherous than my toddler, Dad offered up a bite of the sauerkraut to my son, fully expecting my son to dislike the taste, and thereby saving more of the leftovers to satisfy my father's hunger. Boy, was he wrong! My son was still working on his language skills, and his new favorite food, kraut, was now called "KRAPT!" This is the recipe to the dish my father was eating that night.

2 tablespoons plus 3 teaspoons vegetable oil, such as grapeseed, divided
1 pound baby bok choy, heads trimmed and quartered lengthwise
1 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 Honeycrisp or Gala apple, sliced into 1/4-inch wedges
8 links fresh sausage (about 2 pounds), such as hot or sweet Italian sausage
2 1/2 cups prepared sauerkraut, drained
1/2 cup low-sodium chicken broth
1 tablespoon cider vinegar
1 tablespoon unsalted butter
Grainy Dijon mustard, for serving

Steps:

  • In a large dry skillet over medium heat, lightly toast the caraway seeds until fragrant, 1 to 2 minutes. Scrape out and reserve seeds.
  • Add 1 tablespoon oil to the skillet and heat over medium-high heat. Working in two to three batches, sear bok choy on all sides until lightly browned, 2 to 3 minutes per cut side. Add 1/4 teaspoon salt, 1/8 teaspoon pepper to each batch, and 1 teaspoon oil to sear each subsequent batch of bok choy.
  • Add 1 teaspoon oil to the skillet and sauté apples with 1/4 teaspoon salt and 1/8 teaspoon pepper until softened but still holding their shape, 5 to 7 minutes. Reserve apples.
  • Add remaining tablespoon oil to skillet and sear sausages on all sides until golden brown, 3 to 5 minutes per side. Add toasted caraway seeds, sauerkraut, and broth. Bring to a simmer, reduce heat to medium, cover the skillet, and simmer until sausages are cooked through (150°F for pork sausages, 160°F for poultry sausages), about 10 minutes. Remove cover and fold in reserved bok choy, apples, vinegar, and butter. Cook, tossing, until some of the liquid has evaporated and the bok choy and apples are warm, 3 to 5 minutes. Taste and adjust seasoning. Serve with mustard for dipping.

6 slices bacon, coarsley chopped
1 medium onion, chopped
1 (22 -27 ounce) can sauerkraut, drained
2 carrots, thinly sliced
2 teaspoons brown sugar
3/4 cup chicken broth
1/2 cup dry white wine
4 -6 peppercorns
4 -6 juniper berries
2 -3 whole cloves
1 bay leaf, broken up
1 sprig parsley
2 -3 bratwursts
4 small pork chops
4 -8 smoked link sausage
2 potatoes, peeled and cut into bite sized pieces

Steps:

  • In a large skillet or electric frying pan, cook bacon until it just begins to brown. Pour off fat, then add onion. Saute until onion is transparent.
  • Stir in sauerkraut, carrots, brown sugar, chicken broth and wine.
  • Tie up spices and herbs in a small bag of cheesecloth. Bury in the center of the sauerkraut mixture. Cover and simmer 10 minutes.
  • Diagonally score 1 side of each bratwurst. In a separate skillet brown the bratwurst and pork chops.
  • After the sauerkraut mixture has simmered 10 minutes, add potatoes, working them down into the mixture. Top with browned bratwurst and pork chops. Cover and simmer 15 minutes.
  • Add smoked sausages. Simmer, covered another 15 minutes.
  • Remove pouch of seasonings before serving.

1 jar(s) (32oz) northern beans
1 can(s) (28 oz) sauerkraut, well drained
1 pkg hillshire farms or ekrich smoked or polish sausage, cut into coin like slices.
3 Tbsp ketchup
1 1/2 c brown sugar
5 slice uncooked bacon

Steps:

  • 1. In a small roaster combine all ingredients, except bacon. Bake covered at 350° for 2 hours. After baking for 2 hours, place bacon slices on top and bake covered for 1 more hour. Remove cover for the last 20 minutes of baking so bacon can crisp up a bit. ENJOY!

This is my aunt's recipe. I've made it for many potlucks, and I'm always asked to bring it for church dinners. Even people who normally don't eat sauerkraut enjoy this dish.

1-1/2 pounds bulk Italian sausage
1 small onion, chopped
2 cans (one 16 ounces, one 8 ounces) sauerkraut, undrained
1-1/2 teaspoons brown sugar
3/4 teaspoon poultry seasoning
7 to 8 medium potatoes
1/3 cup milk
Pinch pepper
1/2 teaspoon salt, optional
2 tablespoons butter
Paprika and chopped fresh parsley, optional

Steps:

  • In a large skillet, cook sausage and onion until sausage is no longer pink; drain. Add sauerkraut, brown sugar and poultry seasoning; cover and simmer for 1 hour. Transfer to an ungreased 13-in. x 9-in. baking dish. , Meanwhile, cook potatoes until tender; drain and mash slightly. Add milk, pepper and salt if desired; mash until smooth. Spread evenly over sausage mixture; dot with butter. , Bake at 350° for 20-25 minutes or until potatoes are lightly browned. Garnish with paprika and parsley if desired.

1 tablespoon olive oil
1 large onion, sliced
1 teaspoon caraway seeds
1 1/2 cups (packed) well-drained sauerkraut from jar,1 tablespoon sauerkraut juice reserved
1 1/2 cups (packed) shredded Swiss cheese
1 16-ounce purchased fully baked thick pizza crust
3 tablespoons Dijon mustard
8 ounces fully cooked kielbasa sausage, thinly sliced into rounds

Steps:

  • Preheat oven to 425¡F. Heat oil in heavy large skillet over medium-high heat. Add onion and caraway seeds and sauté until onion just begins to brown, about 7 minutes. Transfer onion mixture to large bowl. Mix in sauerkraut and 1 tablespoon sauerkraut juice. Cool to lukewarm, then mix in cheese. Season generously with pepper.
  • Place pizza crust on baking sheet. Spread with Dijon mustard and top with sausage, then sauerkraut mixture.
  • Bake pizza until cheese melts, topping begins to brown and crust is crisp, about 15 minutes. Transfer pizza to work surface; cut into wedges and serve.

1 (14 ounce) Polish sausage
24 ounces sauerkraut
1 Granny Smith apples, peeled and diced
1 small sweet onion, chopped small
1/2 teaspoon caraway seed
1 tablespoon oil

Steps:

  • Add oil to medium skillet. Over medium heat sauté apples, onions and caraway seeds until onion turn opaque. About 10-12 minutes.
  • Dice sausage into 1/2 inch pieces and add to skillet. Stir well. Heat for 8 -10 minutes or until sausage is warm.
  • Drain sauerkraut well. Add sauerkraut and stir well. Cover and turn down heat to low.
  • Cook on low for 10 minutes. Stir to prevent burning. Serve hot with a little shot of mustard on the side. Enjoy.
