INDONESIAN HONEY GARLIC CHICKEN

Simple Indonesian style honey garlic chicken make in one skillet! The chicken is crispy, the sauce is sticky, sweet, and a little spicy. So good and so easy to make!

6 bone-in skin-on chicken thighs
½ cup honey
¼ cup chicken broth
6 cloves garlic, minced or pressed
2 tablespoons grated ginger
2 tablespoons low sodium soy sauce
2 tablespoons rice vinegar
¼ teaspoon red pepper flakes
parsley, for sprinkling

Steps:

  • Pat down the chicken thighs with a paper towel and sprinkle the chicken breasts with a pinch of salt on both sides.
  • STOVE TOP: Heat a large cast iron skillet over medium high heat. Add the chicken thighs to the skillet facing the skin side down and allow it to sear for 5-7 minutes or until the skin gets nice and crispy. Flip the chicken and continue cooking for 20-28 minutes (flipping every few minutes) or until the chicken cooks completely through.
  • OVEN: Preheat an oven to 450ºF. Position a rack in the center of the oven. Place the chicken thighs with the skin side down in a cast iron skillet (or any oven safe skillet) and roast or 15 minutes. Remove the skillet carefully and flip the chicken over and continue roasting for an additional 10-15 minutes. You'll know the chicken is done when the juice run clear.
  • Make the sauce: in a bowl combine all the remaining ingredients (except parsley). Remove the chicken thighs to a plate. Drip off most of the rendered fat from the chicken, leaving about 1 tablespoon in the pan. Heat the skillet over medium high heat, and pour in prepared sauce. Use a whisk to loosen any brown bit that may have stuck to the bottom -- that stuff is gold! And let the sauce come to boil then, lower the heat and allow to simmer for 5 minutes. I like to leave the sauce a little loose as is will thicken a bit more as it sits, and we love to drizzle the sauce on rice. For a thicker sauce, you can continue simmering for an additional 2-5 minutes.
  • Add the chicken back into the pan and spoon the sauce over the thighs. Sprinkle with parsley before serving.

CHICKEN SATAY (SATE AYAM)

Here is the chicken version of satay, where the peanuts are mixed with candlenuts. The dipping sauce is also used as a marinade to give the meat a more intense flavor. The same sauce can also be used with fish.

For the marinade/sauce:
5 candlenuts or cashews, or 10 blanched almonds
5 cloves garlic
2 fresh chiles, cut into medium chunks
Sea salt
1 tablespoon ground coriander
Finely ground black pepper
1/2 teaspoon cayenne pepper
2 tablespoons vegetable oil
1/2 cup (75 g) raw peanuts, finely ground
1 tablespoon kecap manis (or 1 teaspoon sugar), plus more for the sauce
For the satay:
1 pound 10 ounces (750 g) boneless, skinless dark chicken meat, cut into long strips 1/4-inch (0.5 cm) thick

Steps:

  • Soak 14 medium bamboo skewers for 30 minutes in cold water.
  • To make the marinade: Put the candlenuts, garlic, chilies, and a little salt in a mortar and grind with a pestle until you have a fine paste-you can also do this in a food processor. Transfer to a bowl. Add the coriander, black pepper, and cayenne and mix well.
  • Heat the vegetable oil in a skillet over medium heat. Add the candlenut-garlic mixture and fry until lightly colored, 2 to 3 minutes. Add the peanuts and kecap manis and fry for another couple of minutes. Let cool.
  • Prepare a charcoal fire in an outdoor grill or preheat the broiler to high.
  • To prepare the satay: Marinate the chicken in the sauce for at least 30 minutes or longer, then scrape the marinade off the chicken before threading it equally onto the skewers. Grill or broil for 3 minutes on each side, or until completely cooked through.
  • Meanwhile, scrape the leftover marinade into a small saucepan. Add 1/2 cup (125 ml) water and a little more kecap manis (or a little sugar) and bring to a boil over medium heat. Transfer to a small bowl and serve as a dipping sauce with the grilled chicken.

This was on a recipe card I found in my recipe cabinet. I tweaked it a little, so I'll post it the way I made it. It is spicey, and great on these awful cold nights!

4 chicken breasts, cut into large chunks
1 (270 ml) can low-fat coconut milk
1/2 teaspoon turmeric
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground ginger
2 teaspoons cayenne
3 tablespoons peanut butter
1 tablespoon coriander
1 tablespoon water
2 medium onions, finely chopped
2 garlic cloves, crushed
1 tablespoon olive oil
1 teaspoon grated lemon rind

Steps:

  • Combine turmeric, salt, ginger, pepper, cayenne, peanut butter, coriander, and water. Mix to a paste.
  • Sauté onions & garlic in a little olive oil until tender. Add the peanut butter paste, sauté 2 minutes.
  • Remove from heat. Combine well with chicken. Refrigerate in a covered bowl for at least 1 hour. (I left mine overnight, and the flavors were awesome).
  • In a large pan, bring the coconut to the boil. Add chicken pieces, paste, and lemon rind. Stir until all combined. Reduce the heat and simmer for 20 minutes.
  • Remove the chicken pieces from the pan, and place under the grill until browned. Spoon remaining sauce over the chicken to serve.
  • We served this with a garden salad, but next time I'm thinking of cutting the chicken smaller, and stirring some Singapore noodles through.

2 garlic cloves, chopped
1 habanero pepper, seeded and chopped
1 tablespoon galangal, peeled and chopped
1 lemongrass, peeled and chopped
1/2 teaspoon ground turmeric
4 macadamia nuts, chopped
1 tablespoon peanut oil
2 tablespoons fish sauce
2 teaspoons palm sugar or 2 teaspoons brown sugar
1 (8 ounce) can tomato sauce
1/2 cup fresh cilantro, chopped
1 lime, juice of
2 lbs chicken breasts, cooked and shredded
3 cups cooked brown rice

Steps:

  • Using a mortar & pestle (or a food processor), grind the shallots, garlic, habanero pepper, galangal, lemon grass, turmeric, and macadamia nuts into a paste.
  • Heat the oil in a wok over medium-high heat, then stir in the spice paste and fry until fragrant, about 1 minute. Add the fish sauce and sugar and stir for 3-4 minutes, or until the paste starts to brown.
  • Add the tomato sauce, cilantro, and lime sauce and cook for 8 more minutes, stirring often.
  • Stir in the shredded chicken, and cook until heated through, Serve over brown rice.

2 tablespoons canola oil
1 cup sliced fresh mushrooms

1 pound chicken thighs, cut into 1/2-inch pieces
¾ teaspoon salt
1 pinch ground white pepper
1 tablespoon sunflower seed oil
24 wooden skewers
1 cup water
5 tablespoons peanut butter
2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon brown sugar
2 cloves garlic, minced
½ teaspoon salt
1 tablespoon lime juice

Steps:

  • Combine chicken thighs, 3/4 teaspoon salt, white pepper, and sunflower seed oil in a bowl. Cover and refrigerate for 1 to 2 hours.
  • Soak wooden skewers in water to prevent burning during cooking.
  • Bring water, peanut butter, kecap manis, brown sugar, garlic, and 1/2 teaspoon salt to a boil in a small saucepan; stir to combine. Remove from heat and add lime juice.

1 cup uncooked long grain white rice
2 cups water
1 pound fresh green beans, trimmed and snapped
2 teaspoons olive oil
1 pound skinless, boneless chicken breast halves - cut into chunks
¾ cup low-sodium chicken broth
⅓ cup smooth peanut butter
2 teaspoons honey
1 tablespoon low sodium soy sauce
1 teaspoon red chile paste
2 tablespoons lemon juice
3 green onions, thinly sliced
2 tablespoons chopped peanuts

Steps:

  • Bring the rice and water to boil in a pot. Reduce heat to low, cover, and simmer 20 minutes.
  • Place green beans in a pot fitted with a steamer basket over boiling water, and steam 10 minutes, or until tender but crisp.
  • Heat the oil in a skillet, and cook the chicken 5 minutes on each side, or until juices run clear.

1 tablespoon vegetable oil
3 lbs bone-in chicken breasts
2 onions, sliced
4 cloves garlic, minced
1 tablespoon minced ginger
1 teaspoon ground coriander
1 teaspoon turmeric
8 almonds, blanched and peeled
1 (14 ounce) can unsweetened coconut milk
1 stalk lemongrass, bruised and cut into 2 inch pieces (may sub 1 tbsp. lemon zest)
1 1/2 teaspoons soy sauce
1 teaspoon brown sugar
1 tablespoon hot chili sauce (I used sambal oelek)
hot cooked rice (I like jasmine rice)

Steps:

  • Brown chicken in oil in skillet over med/high heat.
  • Place chicken in crockpot with lemongrass (or lemon zest).
  • Drain all oil except 1 tbsp from pan.
  • Over medium heat, cook onions until soft.
  • Add ginger, garlic, almonds, coriander, and turmeric, cooking until spices are fragrant.
  • Stir in coconut milk.
  • Pour mixture in food processor or blender and process until smooth.
  • Pour puree over chicken in the crockpot.
  • Cover crockpot and cook on low for 6-8 hours or on high for 3-4 hours or until chicken is cooked through.
  • Using a slotted spoon, gather lemongrass from crockpot, and discard.
  • Stir together soy sauce, brown sugar, and sambal oelek in a small bowl and add to chicken.
  • Serve chicken with steamed jasmine rice, if desired.
