APPLE DUMPLINGS WITH CARAMEL SAUCE
Of all my autumn recipes, apple dumplings are a hands-down favorite. I found this treat years ago in an Amish cookbook. A rich, homemade caramel sauce tops it off. -Lois Stache, Brillion, WI

- In a small bowl, combine the flour, sugar, baking powder and salt; cut in cold butter until crumbly. Gradually add milk, tossing with a fork until dough forms a ball; divide dough in half. Cover and refrigerate for 1 hour or until easy to handle., On a well-floured surface, roll each portion of dough into an 8-in. square. Cut apples in half horizontally; place an apple bottom on each square. Place brown sugar and cinnamon in the core of each bottom; dot each with 2 teaspoons butter. Replace apple tops., Gently bring up corners of pastry to center; pinch edges to seal. Place in a greased 8-in. baking dish. Bake, uncovered, at 350° for 15 minutes., Meanwhile, in a small saucepan, combine flour and water until smooth. Add the sugars, butter and salt. Bring to a boil; cook and stir until smooth and blended. Pour over dumplings. , Bake 35-40 minutes longer or until apples are tender and pastry is golden brown. Serve warm.

When our apples become ripe, it's not unusual for me to make as many as 30 of these fruity dumplings! I've relied on the recipe for more than 50 years.

- In a large bowl, combine the flour, 2 teaspoons sugar and salt; cut in shortening until crumbly. In a small bowl, combine 1 egg, water and vinegar; gradually add to crumb mixture, tossing with a fork until dough forms a ball. Divide into seven portions. , On a lightly floured surface, roll each portion into a 7-in. square. Place an apple on each pastry square; place 1 tablespoon butter in the center of each. Combine cinnamon and remaining sugar; sprinkle over apples., Bring up corners of pastry to center; pinch edges to seal. Beat remaining egg; brush over pastry. Place in a greased 13-in. x 9-in. baking dish. Bake at 350° for 15 minutes., Meanwhile, in a large saucepan, combine the sauce ingredients. Bring to a boil; cook and stir until smooth and blended. Pour over apples. Bake 35-40 minutes longer or until apples are tender and pastry is golden brown, basting occasionally with sauce. Serve warm.

Steps:
- Sift flour and salt into basin, rub in butter, add sugar.
- Add combined milk and vanilla, mix well.
- Combine all sauce ingredients in large saucepan, stir constantly until boiling, reduce heat.
- Drop tablespoons of dumpling dough into simmering sauce.
- Cover, simmer 20 minutes.
- Serve with whipped cream.

CARAMEL DUMPLINGS
This is my favourite dessert to make! I think it's from a Women's Weekly cookbook of the early 80s. I don't use the salt, but leaving it there as it's part of the original recipe. Perfect in the cold weather but I love them any time but in the worst heat of summer. They're fantastic on their own but can be served with ice cream. If I'm having a craving and have no brown sugar I'll use white sugar - not quite the same but when you have a craving it's almost perfect.

Steps:
- Rub white sugar and butter together.
- Add flour, salt, vanilla and milk and mix through until it's a doughy consistency.
- In a saucepan, melt the butter.
- Add brown sugar, salt and water.
- Bring to boil and ensure all the sugar is melted.
- Drop tablespoonfulls of the dough mixture into the sauce.
- Cover and simmer for 15 minutes.

- Preheat oven to 350°. Roll out each biscuit into a 3-in. circle. In a small bowl, mix sweet potatoes and 3/4 teaspoon cinnamon. Place 1 tablespoon sweet potato mixture on one side of each circle. Fold dough over filling. Press edges with a fork to seal. Transfer to a greased 13x9-in. baking pan, overlapping slightly., In a small heavy saucepan, combine sugars, water, butter and remaining cinnamon. - For the sauce, melt the margarine in a casserole dish on top of the stove.
- Add brown sugar and boiling water.
- Bring to a boil.
- Remove from heat.
- Mix all of the dumpling ingredients together.

CARAMEL DUMPLINGS
Steps:
- Preheat the oven to 180C / 350F.
- Sift 1 cup of flour into a large mixing bowl. Using your fingertips, rub 1 tablespoon of butter into the flour until it resembles breadcrumbs.
- In a separate bowl, beat 1 egg & 1 tablespoon of milk together then stir into the flour mixture until just combined.
- Roll the dough into tablespoon-sized balls & place them into an oven proof dish.
- Place 2 tablespoons of butter into a saucepan on medium-high heat. Once melted add 2 cups of water and 1 & ½ cups of brown sugar into the saucepan. Cook, stirring, until sugar dissolves and syrup is smooth. Bring to the boil and remove from heat.
- Pour the syrup on top of the dumplings & bake for 15 minutes or until the dumplings are puffed & cooked through.
- Serve with ice cream or cream.

MICROWAVED CARAMEL DUMPLINGS
An alternative way of making these when you don't want to use the stove top or oven. Watch times of cooking....I used a 1200wt Microwave.

- To make dumplings: Rub butter into the flour and then add sugar, milk& vanilla essence.
- Mix well and set aside while making the sauce.
- To make the sauce: Place butter, water& brown sugar in a 2L microwave safe casserole dish and cook on high for 6 mins.
- Drop Tablespoons of batter mix into the hot sauce and cook on Medium for 6 mins.
- Leave to stand in hot sauce for another 5 mins.
- Serve with whipped cream&/or vanilla ice-cream.

- In a medium bowl, stir together the flour and confectioners' sugar. Make a well in the center. Combine the melted butter, egg and milk; pour into the well. Use a knife to stir until just combined. Set the dumpling mixture aside.
- In a large saucepan, over medium-high heat, mix together the water, golden syrup, brown sugar and lemon juice until well blended. Add the remaining 1/4 cup of butter, and bring the mixture to a boil. Once the mixture is boiling, carefully drop heaping tablespoons of the dumpling mix into the sauce. Reduce heat to low, cover and cook for 10 minutes, or until the dumplings have risen and cooked through. Ladle syrup over the dumplings occasionally while cooking.
