Sauce Provençal image

Transport your guests to the sunny south of France with this flavorful sauce redolent of garlic, herbs, tomatoes, and white wine. Ladle it over grilled or sautéed fish, chicken, or vegetables, or try it with succulent slices of roast lamb.

1 tablespoon olive oil
3 tablespoons minced shallots
1 clove garlic, minced
1 teaspoon dried Herbes de Provence
4 tablespoons dry white wine
1 1/2 ounces Jus de Poulet Lié Gold® (or Demi-Glace de Veau Gold®, Demi-Glace Gold® or Veggie-Glace Gold®)
3/4 cup hot water
1/2 medium tomato, peeled, seeded and chopped (about 1/2 cup)
2 teaspoons chopped fresh chervil
2 teaspoons chopped fresh parsley
Salt and ground black pepper

Steps:

  • Heat the olive oil in a saucepan over medium heat.  Add the shallots, garlic and Herbes de Provence to the pan and sauté for 1 to 2 minutes or until the shallots are translucent.
  • Add the wine, bring the mixture to a boil, and cook until the wine is reduced to 2 tablespoons.
  • Add the Jus de Poulet Lié Gold®and water and whisk until the Jus de Poulet Lié Gold® is dissolved. Bring the mixture to simmer and add the tomatoes, chervil, and parsley.  Simmer for 1-2 minutes and season with salt and pepper to taste.

An easy French espagnole sauce that you can indulge in.

50g butter
1 large can of whole peeled tomatoes
1/2 cup of chicken stock (low sodium)
2 large garlic cloves
2 teaspoons of olive oil
variety of dried herbs of provence (eg. thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf)
teaspoon of freshly grated pepper
pinch of salt
Pinch of espelette pepper or cayenne pepper
1/2 cup of finely chopped onions
3/4 cup of liquid crème fraiche (heavy cream)

Steps:

  • Peel the garlic and crush in a mortar and pestle.
  • Chop the tomatoes into small pieces.
  • Melt the butter in a saucepan at low heat.
  • Sauté the garlic (and onions) in the saucepan until they turn lightly translucent.
  • Add the tomatoes, herbs, and olive oil into the saucepan and cook for around 10 minutes at medium temperature.
  • Add the optional heavy cream and stir in. Let cook for another 10 minutes.
  • Season to your liking with salt and pepper and whisk until it is well blended.
  • Serve while warm.

Provençale sauce is a fragrant tomato sauce made with sautéed onions, garlic, capers, olives, and herbes de Provence.

1 quart tomato sauce
3/4 cup finely chopped onions
2 cups tomato concassé
1 clove garlic, minced
2 teaspoons Herbes de Provence
2 tablespoons capers
2 tablespoons chopped black olives
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Gather the ingredients.
  • In a heavy-bottomed saucepan, sauté onions until they're translucent, about 5 minutes.​
  • Add tomato concassé, garlic, and herbes de Provence. Continue to sauté until tomatoes are soft, about 10 minutes.​
  • Add tomato sauce, capers, and olives; and bring to a simmer and reduce for about 10 minutes.​
  • Season with salt and pepper, and serve right away.

PROVENCAL SAUCE RECIPE

1 tablespoon olive oil
3 tablespoons shallots (finely chopped )
¼ cup white wine (dry)
1 clove garlic (finely minced)
1 teaspoon herbs de Provence
1 cup chicken demi glace
½ cup tomatoes (peeled, seeded, and chopped)
2 teaspoons fresh chervil (finely chopped)
2 teaspoons fresh parsley (finely chopped)
salt & white pepper (to taste)

Steps:

  • Heat up a saucepan over medium heat and when hot, add the olive oil, then sauté the shallots and garlic for 2 minutes until the shallots become translucent.
  • Add the wine plus herbs de Provence and cook until the wine is reduced by half.
  • Add the chicken based demi glace or meat based demi glace if you can't find it. You can also use chicken stock that has been reduced by half. Bring this to a boil and then lower heat to a simmer.
  • Add the chopped tomatoes, chervil, parsley and some salt & white pepper. Cook for a couple more minutes, taste and adjust seasonings.
  • When the sauce is thick enough to coat the back of a spoon, it is ready to serve.

SAUCE DE PROVENCE



Sauce De Provence image

This is a sauce that my friend Karen taught me how to cook. It's lovely with shrimp, chicken, or scallops, but it's critical to cook the meat separately from the sauce and them combine it at the last moment. My family will turn themselves inside out to help peel shrimp if I even mention this dish, so I'm always willing to make it. The tomatoes are important in this dish and I would never substitute canned. I don't make this if the tomatoes aren't great. If you choose not to use the Tuaca (or apple brandy), substitute with apple juice concentrate. Serve it over rice for a perfect meal.

3 tablespoons butter (unsalted)
2 onions (large, cut into strips)
2 lbs tomatoes (ripe and flavorful, large dice)
1 cup chicken stock (rich, thick stock)
cayenne (small pinch) (optional)
1/4 cup apple brandy (preferably tuaca)
4 sprigs fresh thyme
salt and pepper, to taste
2 tablespoons olive oil
2 lbs chicken (boneless, in bite sized chunks) or 2 lbs scallops

Steps:

  • Melt the butter in a heavy bottomed sauce pan and saute the onions carefully until translucent.
  • Add the tomatoes. (I do not peel or seed these, but you should if you prefer to add this step.) Simmer until the tomatoes have melted into the onions.
  • Add the chicken stock. Add a careful pinch of cayenne, if you are using this.
  • Allow to simmer until the sauce thickens. Add the sprigs of thyme. Season with salt and pepper to taste. Do not proceed to the next step until the sauce has thickened.
  • In a separate frying pan, heat the oil until hot, add the meat until it is just cooked. (Do not overcook the shrimp or the scallops!).
  • Mix the shrimp, scallops, or chicken in with the tomatoes and serve over perfectly cooked rice. (We always use the plain version of my Fat Rice.).

This is my version of Herbs de Provence after looking at many different recipes. This goes great in salads, fish, chicken, beef and pork. The fragrance is amazing!

1 tablespoon fennel seed
2 tablespoons dried savory
2 tablespoons dried thyme

1 tablespoon dried oregano
1 tablespoon dried tarragon

Steps:

  • Grind rosemary and fennel seed in a spice grinder; transfer to a mixing bowl. Stir savory, thyme, basil, marjoram, lavender, parsley, oregano, tarragon, and bay powder with the rosemary and fennel. Store in an air-tight container between uses.
