Great-Grandma Maida Dixon made this salad for family gatherings. I think of her every time I make. It's sooo good. It needs to be placed in the refrigerator to allow the flavors to meld. It really is worth the wait.

1 quart sauerkraut, drained
1 onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
1 large carrots, chopped
1 (4 ounce) jar diced pimento peppers, drained
1 teaspoon mustard seed
1 ½ cups white sugar
1 cup vegetable oil
½ cup cider vinegar

Steps:

  • In a large bowl, mix together sauerkraut, onion, celery, green bell pepper, carrot, pimientos, and mustard seed. Set aside this mixture.
  • In a small saucepan, mix together sugar, oil, and vinegar. Bring to a boil. Remove from heat.
  • Pour sugar mixture over salad, cover, and leave it in the refregerator for 2 days before serving.

18 ounces (approx. 3 cups) raw sauerkraut
How to Make Sauerkraut ((it's easy! Click link for recipe tutorial))
2 medium sweet apples (, diced)
1/2 cup finely chopped yellow onion
1 1/2 tablespoons chopped chives
2 tablespoon sunflower oil ((the sunflower oil flavor is an important element, do not substitute with another oil))
1-2 teaspoons honey or cane sugar
salt to taste

Steps:

  • Combine the sauerkraut, apples, onion and chives in a large bowl. Whisk together the oil, honey and salt. Pour over the salad and stir to combine. Add more salt as needed. Cover and refrigerate for at least one hour before serving. Can be served cold or at room temperature.

Besides the hot dogs, hamburgers and Uncle Bob's steamed clams, my aunt always had something new for us to try-like this unusual salad. Like my aunt, you may have to coax others to try it at first...but you'll have a hard time keeping them from taking a second helping.

1 large green pepper, finely chopped
1 medium onion, finely chopped
1 cup finely chopped celery

1 apple - peeled, cored, and grated
2 carrots, grated
¼ cup canola oil
3 tablespoons sugar
1 teaspoon caraway seeds, or more to taste

Steps:

  • Place sauerkraut in a colander and squeeze out all excess liquid using your hands; chop well.
  • Combine sauerkraut, onion, apple, and carrots in a large bowl and mix. Add oil and sugar and toss to combine. Season with caraway seeds, salt, and pepper. Refrigerate 30 minutes before serving.

1 cup grated carrots
1 cup chopped celery
1 cup chopped green pepper

1 large carrot, grated
1/4 cup radish, chopped
1/4 cup celery, chopped

1/2 cup olive oil
1/4 cup white wine vinegar
1 cup sugar, to taste
1 teaspoon celery seed
1 teaspoon dill seed
1 (2 lb) jar sauerkraut, drained
1 small red onion, sliced into thin rings
3 sliced carrots
1 chopped green pepper
2 cups sliced cauliflower
1 (2 ounce) jar pimientos, drained
1 cup cherry tomatoes (or 1 tomato cut into thin wedges)
3 slices bacon, crumbled (or 2 tablespoons bacon bits)

Steps:

  • In a small saucepan combine sugar, vinegar and oil. Bring to a boil over med heat. Reduce to low and simmer dressing for 5 minutes, stirring occasionally. Remove from heat.
  • Stir in celery seed and dill seed.
  • Let cool.
  • In a large salad bowl, combine remaining ingredients (except for tomatoes and bacon). Toss. Pour dressing over. Toss.
  • Cover and chill.
  • Drain salad before serving and add tomatoes and bacon.
  • Toss.

I had this salad at a Labor Day picnic many years ago. I had to leave with the recipe. Trust me even if you don't like sauerkraut you will love this recipe (o.k. like). It's sweet not sour like you would think. It goes great with BBQ. This reminds me of summer.

1 (14 1/2 ounce) can sauerkraut, drained
1 cup grated carrot (*)
1 stalk celery, chopped (*)
1/2 cup chopped pepper, any color (*you can mix in a hot pepper if you choose)
1/2 cup chopped red onion (*)
3/4 cup sugar
1/2 cup vegetable oil or 1 light canola oil

Steps:

  • For the sauerkraut drain and rinse (with water) squeeze excess water out.
  • Taste as you go the more you rinse and the more you squeeze the more tanginess you lose.
  • I usually do this 3 times (we like a little tang).
  • In a large bowl mix sauerkraut, carrots, celery, onion, peppers.
  • Mix well.
  • In a bowl whisk together sugar and oil.
  • Will be grainy looking don't worry.
  • If to thick add a touch more oil.
  • Pour over sauerkraut mixture.
  • Mix well.
  • Cover and chill 8 hours.
  • Note prep time does not include chill time.
  • *You can use as much as you like, any combination works.
  • You can use hot peppers with the green.
  • I have a hard time measuring stuff for salads.
  • I usually chop and dump.
