- To make sauce: In a small mixing bowl combine satay sauce ingredients mixing well.
- To make burger: In a large mixing bowl, combine mince, egg white, stock powder, garlic, ginger, Thai seasoning, and lemongrass. Use your hands to combine mixture well. Divide into 6 round shaped burger patties. In a large non-stick frypan that has been generously coated with cooking spray, fry burgers until cooked on both sides.
- To assemble: Cut rolls in half, grill until toasted brown. Place salad on base of bun then top with burger and a sixth of the satay sauce, place lid on top.

- Prepare cucumber relish first by dissolving sugar in vinegar.
- Add remaining ingredients and stir well.
- Allow to sit at room temperature for at least half an hour.
- Prepare satay sauce by mixing all ingredients until smooth; set aside.
- To prepare burgers, whisk together peanut butter with Tabasco and chicken broth until blended.
- Check ground chicken to be sure it isn't very wet; if it is, blot it with paper toweling.
- In another bowl, stir up chicken with garlic, cilantro, mint, and salt, squeezing mixture with your hands to incorporate ingredients.
- Stir peanut butter mixture into chicken mixture and blend until smooth.
- Form into four thick patties.
- Cook patties on grill or in skillet for about 4 minutes on each side or until cooked through.
- Serve burgers on either buns or warmed flour tortillas, with satay sauce and spicy cucumber relish.

BAKED SATAY BURGERS
Thailand's most famous dish, satay, gets a clever makeover as an all-American burger in this fusion recipe.

- Divide chicken into 4 equal portions; gently pat each portion into burger-shaped patty, handling the meat as little as possible. Place patties in large resealable food-storage plastic bag.
- In small bowl, stir marinade ingredients with whisk. Pour marinade over patties. Seal bag and turn to coat. Refrigerate at least 30 minutes to marinate.
- Meanwhile, in another small bowl, mix sauce ingredients. Cover; refrigerate until serving time.
- Heat oven to 375°F. Line cookie sheet with nonstick foil (or line with regular foil and spray the foil with cooking spray). Remove patties from marinade; place on cookie sheet. Bake 30 minutes, turning once, until meat thermometer inserted in center of patties reads at least 165°F.
- Serve burgers on flatbreads with lettuce. Drizzle with sauce.
