SARASOTA'S VERNOR'S SPICY CROCK POT PULLED PORK

From Michigan, and the Vernor's plant is in Flint, MI - so Vernor's was what many people drank. A great ginger ale and the only one for me. Well this was a popular dish back in the day, and honestly it was great. It is easy, spicy and great pulled pork.

Number Of Ingredients 13

4 -5 lbs pork shoulder
3 large onions (1 thick sliced the other 2 thin sliced)
12 ounces vernos ginger ale
1 orange, cut in quarters (lightly squeezed and the rest thrown in the crock pot)
1 bay leaf
3 whole cloves
1 teaspoon salt
1 teaspoon pepper
2 cups barbecue sauce (plain, you can just use a good store bought for this)
1/3 cup honey
3 tablespoons chopped chipoltes in adobo seasoning (to taste, you can go less, is you don't want it spicy)
1 teaspoon minced garlic
3 tablespoons orange juice

Steps:

  • Pork -- Season your pork well with salt and pepper. Add the thick sliced onion on the bottom and then top with the pork. Then top with the thin sliced onions.
  • Add the Vernors, cloves, bay leaves and squeeze the oranges and then throw in the pieces. Cover and cook on low for 10-12 hours until tender.
  • Pull -- The pork is done. Remove and let cool slightly. Then pull apart the pork.
  • Sauce -- A few minutes before I remove my pork, is when I start my BBQ sauce. In a small pot over medium heat add the sauce, honey, garlic, orange juice, chipoltes and about 1 cup of the Vernors broth. Bring to a light boil, reduce to medium and simmer for about 15 minutes. Add a little more Vernors broth, not much and bring to a boil again and reduce until the sauce is rich and thick.
  • Pork -- As the sauce cooks, pull the pork. Add your sauce to your pork and enjoy. If you don't use all your sauce. Just put in a baggie and freeze. This is great just brushed over pork chops or a tenderloin. Don't throw it out.
  • Onions -- Don't forget about all those good onions. Scoop them out and serve on the side to serve on the sandwich.
  • Serve -- Well you know what to do. Your favorite buns, coleslaw and ENJOY!

1 boneless pork shoulder butt roast (3 to 4 pounds)
1 can (15 ounces) tomato sauce
1 bottle (12 ounces) beer or 1-1/2 cups beef broth
1 cup packed brown sugar
1/2 cup honey
1/4 cup tomato paste
3 tablespoons paprika
4 teaspoons garlic powder
1-1/2 teaspoons crushed red pepper flakes
1 teaspoon salt
1 teaspoon cayenne pepper
1 tablespoon hickory liquid smoke, optional
8 Hawaiian sweet hamburger buns, split

Steps:

  • Place roast in a greased 4- or 5-qt. slow cooker. In a large bowl, combine tomato sauce, beer, brown sugar, honey, tomato paste, seasonings and, if desired, liquid smoke; pour over meat. Cook, covered, on low 6-8 hours or until meat is tender., Remove roast. When cool enough to handle, shred meat with two forks. Skim fat from cooking juices. Return meat to slow cooker; heat through., Using tongs, place meat mixture on bun bottoms. Replace tops. Freeze option: Freeze cooled meat mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

2 onions, chopped
2 cloves garlic, minced, or more to taste
1 (14.5 ounce) can diced tomatoes
¾ cup barbeque sauce

Steps:

  • Mix flour, chili powder, paprika, cumin, adobo seasoning, and cayenne pepper in a large bowl. Add pork and toss until coated.
  • Melt butter in a large skillet over medium heat; fry pork in batches until browned on all sides, about 10 minutes. Transfer browned pork to a slow cooker.
  • Cook and stir onion and garlic in the same skillet until vegetables are fragrant, about 1 minute. Stir tomatoes, barbeque sauce, brown sugar, and hot sauce into onion mixture and simmer for 5 minutes. Pour sauce over pork.

1/4 cup brown sugar
2 tsp kosher salt
1 1/2 tsp black pepper
1 tsp ground mustard
1 tsp onion powder
1 tsp smoked paprika
1 tsp garlic powder
1/4 tsp cayenne pepper
3/4 cup chicken broth
1/4 cup apple cider vinegar
1 tbs Worcestershire sauce
1 tsp liquid smoke

Steps:

  • Cut meat into 4-6 equal sized pieces. Trim fat as desired.
  • In a bowl, mix salt, pepper, brown sugar, onion powder, garlic powder, smoked paprika and cayenne pepper and rub all over meat.
  • Add chicken broth, cider vinegar, Worcestershire sauce and liquid smoke to slow cooker and whisk it together. Place meat into slow cooker.

2kg pork shoulder, skin removed
1 onion, sliced
2 tsp smoked paprika
½ tsp cinnamon
1 tbsp flour
2 tsp oil
4 garlic cloves, crushed
160ml cloudy apple juice
1 tbsp black treacle
2 tbsp honey
3 tbsp apple cider vinegar
50g onion marmalade
1 fennel bulb, sliced thinly
1 apple, sliced thinly
juice 1 lemon
8 - 10 bread rolls
English mustard
mayonnaise (optional)

Steps:

  • Put the onion slices at the bottom of the slow cooker. In a small bowl mix together 1 tbsp salt with 1 tsp ground black pepper, the smoked paprika and cinnamon. Put the flour onto a plate then rub the spice mixture over the pork.
  • Heat the oil in a large frying pan and roll the spiced pork in the flour before putting it into the pan to sear it on all sides. Once the meat is starting to pick up a golden colour pop it on top of the onion slices in the slow cooker.
  • In a large jug combine all the ingredients for slow cooking the pork then pour over the meat. Pop the lid on and cook on the low setting for 8 hours.
  • When you're ready to serve, take the meat out of the slow cooker leaving the cooking liquor behind. Put the cooked meat on a roasting tray or large shallow bowl and pull it into bite-size chunks and shred with 2 forks. Ladle a little of the cooking juices over the pork and mix together.
  • Toss the fennel and apple slices in the lemon juice and season well then serve along with the pulled pork in bread rolls. Spread the rolls with a little English mustard and mayonnaise if you like.

i made this last week, my first attempt at pulled pork, and it was a winner. i had a spicy carolina style pp sandwich at a native american festival, and got into a chat with the cooks. this was the recipe, from what i can recall as it was told to me. by the way, this is by no means a low fat dish. trying to make it low fat will just not be the same. please enjoy it the way it was meant to be. pork fat rules!

3 tablespoons brown sugar
2 tablespoons paprika
2 teaspoons sea salt
1 teaspoon freshly cracked black pepper
5 lbs pork shoulder
1 cup red wine vinegar
2 tablespoons Worcestershire sauce
2 teaspoons crushed red pepper flakes
2 teaspoons sugar
1 tablespoon spicy brown mustard
1 tablespoon garlic powder
1/2 teaspoon powdered cayenne pepper
2 red onions, quartered
2 yellow onions, quartered

Steps:

  • combine the brown sugar, paprika, salt and pepper, and rub the mixture over the roast. wrap tightly in plastic, and refrigerate a few hours, overnight is best.
  • in a bowl, combine the vinegar, worcestershire sauce, red pepper flakes, sugar, mustard, garlic powder, and cayenne pepper. mix well.
  • place the quartered onions in the bottom of the crock pot. unwrap the roast, and place on top of onions. drizzle most of the vinegar mix over the roast, reserving some to add to the shredded meat at the end.
  • cover and cook on low for 7 to 8 hours, or high for 4 to 5 hours.
  • remove the meat and onions to a cutting board. remove skin and set aside. using two forks (or your fingers, if you have asbestos hands), pull and shred the pork. chop the onions, and mix into the shredded meat. using a fork, remove some of the fat from under the skin, mince, and add to the shredded meat and onions as needed for moisture and flavor.
  • serve on warm buns or crusty hard rolls, with the remaining vinegar mixture on the side.

1 (4 pound) pork shoulder roast
1 cup barbeque sauce
½ cup apple cider vinegar
½ cup chicken broth
¼ cup light brown sugar
1 tablespoon prepared yellow mustard
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
1 extra large onion, chopped
2 large cloves garlic, crushed
1 ½ teaspoons dried thyme
8 hamburger buns, split
2 tablespoons butter, or as needed

Steps:

  • Pour the vegetable oil into the bottom of a slow cooker. Place the pork roast into the slow cooker; pour in the barbecue sauce, apple cider vinegar, and chicken broth. Stir in the brown sugar, yellow mustard, Worcestershire sauce, chili powder, onion, garlic, and thyme. Cover and cook on High until the roast shreds easily with a fork, 5 to 6 hours.
  • Remove the roast from the slow cooker, and shred the meat using two forks. Return the shredded pork to the slow cooker, and stir the meat into the juices.
  • Spread the inside of both halves of hamburger buns with butter. Toast the buns, butter side down, in a skillet over medium heat until golden brown. Spoon pork into the toasted buns.
