1/2 cup onion, chopped
1 tablespoon olive oil
8 ounces green chilies, chopped
1/2 cup fresh cilantro leaves
1 jalapeno, seeded
2 teaspoons red currant jelly
1 teaspoon chicken bouillon granule
1 teaspoon Worcestershire sauce
1 garlic clove, peeled
1/2 teaspoon seasoning salt
1/4 teaspoon dried oregano
salt and pepper
1/2 cup shredded monterey jack cheese (optional)
4 New York strip steaks (about 1 inch and 7oz each)

Steps:

  • In small saucepan, saute onion in oil until tender. Transfer to blender or food processor adding chilies, cilantro, jalapeno, jelly bouillon, worcestershire, garlic, seasoned salt and oregano, process until smooth.
  • Return mixture to saucepan and bring to boil. Reduce heat and allow to simmer, uncovered for 10 minutes. Set aside and keep warm.
  • Sprinkle steaks with salt and pepper, then broil 4-6 inches from heat for 4-8 minutes or until reaches desired doneness.
  • Serve with sauce and sprinkle with cheese if desired.

3 tablespoons chili powder (for heat, chipotle or ancho)
2 tablespoons ground coriander
2 tablespoons cumin
1 tablespoon ground fennel
1 teaspoon salt

Steps:

  • Mix and store in airtight container.
  • To use: put desired meat into a freezer bag. Add generous amount (like 1-2 tablespoons per chicken breast). Rub into meat well. You can then freeze and take out when desired.

2 boneless beef top loin steaks (8 ounces each)
1 garlic clove, halved
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
1/4 cup sherry or beef broth
1/4 teaspoon Worcestershire sauce
2 tablespoons chopped green onion

Steps:

  • Rub steaks with garlic and sprinkle with salt and pepper; set aside. Melt butter in a large skillet. Add the sherry or broth, Worcestershire sauce and onion. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., Add the steaks and cook over medium heat for 3-7 minutes on each side or until the meat reaches desired doneness (for medium-rare, a thermometer should read 135°, medium, 140°, medium-well, 145°).

1/2 cup Old El Paso™ Thick 'n Chunky salsa
1/2 cup Progresso™ black beans, drained, rinsed (from 15- or 19-oz can)
2 tablespoons finely chopped red onions
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 1/2 teaspoons chili powder
4 beef boneless New York strip steaks (1 1/2 pounds)
2 teaspoons chopped fresh oregano leaves or 1/2 teaspoon dried oregano leaves

Steps:

  • Mix salsa, beans, onion, cilantro, lime juice and 1/2 teaspoon of the chili powder. Cover and refrigerate while preparing beef.
  • Set oven control to broil.
  • Sprinkle both sides of beef with remaining 1 teaspoon chili powder and the oregano; gently press into beef. Place beef on rack in broiler pan. Broil with tops 4 to 6 inches from heat 6 minutes; turn. Broil 2 to 5 minutes longer for medium doneness. Serve with salsa.

2 pounds ground beef
1 onion, chopped
2 (1 ounce) packets taco seasoning mix
2 (1 ounce) packets ranch dressing mix
2 (16 ounce) cans shoepeg corn
2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
1 (15 ounce) can red kidney beans
1 (15 ounce) can black beans
1 (15 ounce) can pinto beans
1 (14.5 ounce) can chicken broth
1 (14.5 ounce) can diced tomatoes

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir taco seasoning mix and ranch dressing mix into the ground beef; add shoepeg corn, diced tomatoes with green chile peppers, red kidney beans, black beans, pinto beans, chicken broth, and diced tomatoes.
