Number Of Ingredients 14

1 1/2 Tbsp. coriander seeds (toasted and ground)
1 Tbsp. olive oil or canola oil
1 1/2 pounds sirloin* (trimmed with no fat)
salt and pepper
1 large onion (chopped)
3 large garlic cloves (minced)
3 cups crushed tomatoes*
6 cups chicken stock
1 tsp. oregano
1 pound potatoes (cut into ½" cubes)
3 cups roasted, peeled, chopped New Mexico mild to medium green chile*
Salt to taste
Flour tortillas (as a side)

Steps:

  • To toast the coriander, heat a heavy skillet on the stovetop. Add the coriander seeds, shaking the skillet often until the seeds become aromatic and lightly brown. Transfer to a mortar and pestle and grind. Set aside.
  • Heat the oil in a large Dutch oven medium high heat. Lightly salt and pepper both sides of the sirloin. Add to the Dutch oven and sear on both sides. Transfer to plate.
  • Reduce the heat to medium. Add the onion and garlic. Saute' for about 2 minutes.
  • Add the tomatoes, ground coriander, oregano, stock, potatoes and green chile.
  • Cut the meat into bite size cubes and transfer back into the pot along with any juices that have accumulated on the plate.
  • Bring to a boil and reduce to a simmer. Simmer for 45 minutes or until the potatoes are tender.
  • Taste and add salt if needed. (If you use canned tomatoes, you'll probably do not need to add salt.)
  • Serve with warm flour tortillas.

2 tablespoons canola oil
2 1/2 lbs beef stew meat, boneless
2 medium onions, chopped
5 garlic cloves, minced
1 green pepper, chopped
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1 bay leaf
1 tablespoon sugar
salt and pepper, to taste
1 (10 1/2 ounce) can condensed beef broth, undiluted
1 (10 ounce) can diced tomatoes with green chilies, mild, undrained
2 (4 ounce) cans chopped mild green chilies
1 cup beer (or water)
1 (15 ounce) can pinto beans, rinsed and drained
2 -3 medium potatoes, peeled and chopped
1/2 cup minced fresh cilantro
shredded monterey jack and cheddar cheese blend
sour cream (optional)
flour tortilla, warmed

Steps:

  • In a Dutch oven, heat oil over medium-high heat, brown beef on all sides. Add in onions, garlic and bell pepper and saute until tender. Add in cumin, oregano, bay leaf ,salt and pepper. Cook and stir for 2 -3 minutes. Next add in sugar, beef broth, diced tomatoes with green chiles, chopped green chiles and beer. Bring to a boil ; reduce heat. Cover and simmer 1-1/2 hours, stirring occasionally. Next, add in the pinto beans, potatoes and cilantro. Cover and simmer another 30 minutes or until meat and potatoes are tender. If you would like a thicker stew , remove the lid at this time and keep cooking and stirring on simmer until desired consistency.
  • Ladle into bowls and top with shredded cheeses, sour cream and more cilantro if desired. Serve with a basket of warm flour tortillas. Enjoy!

6 ounces Hatch chile peppers, halved and seeded
3 tablespoons corn oil
1 cup chopped onion
2 teaspoons minced garlic
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon salt

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Line a baking sheet with aluminum foil. Place chile peppers cut-side down on baking sheet.
  • Broil in the preheated oven until skin is heavily blistered and turning black, about 4 minutes per side.
  • Transfer chile peppers to a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 15 minutes. Peel and chop the chile peppers.
  • Heat oil in a saucepan over medium heat. Add onion; cook and stir until browned, about 5 minutes. Add garlic; cook until fragrant, about 2 minutes. Stir in flour until mixture thickens. 2 pounds ground beef
1 medium onion, chopped
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (15 ounces each) black beans, rinsed and drained
2 cans (15 ounces each) pinto beans, rinsed and drained
3 cans (7 ounces each) white or shoepeg corn, drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chiles
1 can (11-1/2 ounces) V8 juice
2 envelopes ranch salad dressing mix
2 envelopes taco seasoning
Optional: Sour cream, shredded cheddar cheese and corn chips

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5- or 6-qt. slow cooker. Stir in the beans, corn, tomatoes, juice, salad dressing mix and taco seasoning. , Cover and cook on high for 4-6 hours or until heated through. 1 tablespoon vegetable oil
2 pounds cubed beef stew meat
1 onion, chopped
1 (10 ounce) can diced tomatoes with green chile peppers
1 ½ cups beef broth
1 (4 ounce) can chopped green chile peppers
1 teaspoon garlic salt
1 teaspoon ground cumin
salt to taste
ground black pepper to taste
2 large potatoes, peeled and cubed

Steps:

  • In a large pot over medium heat, heat the oil and brown the stew meat and the onions until onions are translucent; about 5 minutes
  • Pour in the diced tomatoes with chiles, beef broth and chile peppers. Stir in the garlic salt and cumin. Salt and pepper to taste.
  • Bring to a boil, reduce heat and simmer for 1 hour. Add a little more beef broth or water if needed during simmering.
  • Stir in cubed potatoes to the mixture and simmer for an additional 30 minutes or until potatoes are tender.

1 beef eye round roast (2 to 3 pounds), cut into 1/2-inch cubes

1 pound beef tenderloin, cubed
1 pound boneless pork loin, cubed
¼ cup masa harina
1 tablespoon olive oil
1 red onion, chopped
3 cups chopped fresh tomatoes
2 cups diced green chile peppers
2 cups low-sodium beef broth
1 tablespoon ground cumin
1 large potato, cubed
3 cloves garlic, minced
2 teaspoons chopped fresh oregano
2 teaspoons chopped fresh cilantro
1 dash cayenne pepper
salt to taste
ground white pepper to taste

Steps:

  • Place the beef tenderloin cubes, pork loin cubes, and masa harina in a plastic bag, and shake to coat the meat. Heat the olive oil in a large skillet over medium-high heat, and cook and stir the meat cubes until evenly browned, about 10 minutes.

This is my DD's recipe that she shared with me when she was living in Santa Fe. I am sure that every family in New Mexico has their own favorite version, but this is my favorite. It can also be cooked in a crockpot, but I like the texture of the stew, cooked on top of the stove.

1 1/2 lbs pork or 1 1/2 lbs beef, cubed
2 tablespoons flour
4 tablespoons oil
1 cup green chili (frozen; fresh roasted, peeled and chopped; or 1 cup canned...according to your personal heat prefere)
4 potatoes, cubed
2 onions, cubed
2 cloves garlic, minced
2 quarts chicken stock
water (if needed)
1 teaspoon salt
fresh ground pepper

Steps:

  • Sprinkle the pork with flour to lightly coat.
  • In a large pot (I use a Dutch oven), brown the meat in oil.
  • Add chiles, chicken stock, vegetables, salt& pepper, and water if needed.
  • Bring to a boil, lower heat to medium low.
  • Cover and simmer until meat and vegetables are done, and the stew is slightly thickened (about 3 hours).
  • You may cook in a crockpot for 6-8 hours.
  • Serve with flour tortillas.

  • Heat a large skillet over medium-high heat. Cook and stir beef and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
