1 1/2 cups unsalted butter, softened
3/4 cup sugar
1 teaspoon vanilla
3 1/2 cups Gold Medal™ all-purpose flour
1 bag (14 oz) caramels, unwrapped
2 tablespoons milk
4 oz semisweet chocolate, chopped
1 tablespoon butter
1 teaspoons coarse (kosher or sea) salt

Steps:

  • Heat oven to 350°F. In large bowl, beat 1 1/2 cups butter with electric mixer on high speed until creamy. Beat in sugar and vanilla. On low speed, beat in flour until blended.
  • Divide dough in half. Between 2 sheets of waxed paper, roll 1 portion of dough to 1/4-inch thickness. Cut with 2 1/2-inch round cookie cutter. On ungreased cookie sheet, place cutouts about 2 inches apart. Repeat with second portion of dough.
  • Bake 12 to 14 minutes or until set and just barely light golden (do not overbake). Remove from cookie sheets to cooling racks; cool completely.
  • In medium microwavable bowl, microwave caramels and milk uncovered on High 2 minutes 30 seconds, stirring every 30 seconds, until melted and smooth. Frost each cookie with about 1 rounded teaspoon caramel mixture.
  • In small microwavable bowl, melt chocolate and 1 tablespoon butter uncovered on High 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth. Drizzle chocolate over caramel on each cookie. Sprinkle generously with salt. Let stand until set.

Shortbread:
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup sugar
Caramel:
1/2 cup (1 stick) unsalted butter, cut into 8 pieces
1/2 cup sugar
2 tablespoons light corn syrup
1 14-oz can sweetened condensed milk
Chocolate:
8 oz chocolate, finely chopped (I used bittersweet)
1 teaspoon light corn syrup
1/2 cup (1 stick) unsalted butter, cut into 8 pieces
Fleur de sel for sprinkling (optional)

Steps:

  • Preheat oven to 325 F. Line a 9x13-inch baking pan with parchment paper. To make the shortbread layer: Whisk the flour, baking powder and salt together in a medium bowl. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until well combined, about 2 minutes. With the mixer on low, gradually add the dry ingredients and beat just until combined. Transfer the dough to the prepared pan and press into an even layer over the bottom (it'll be a fairly thin layer). Bake for 15-18 minutes, or until the crust is golden brown. Transfer the pan to a wire rack and cool completely. To make the caramel layer: Combine the butter, sugar, corn syrup and sweetened condensed milk in a medium saucepan. Set the pan over medium heat. Stir occasionally until the butter is melted. Increase the heat to medium-high, and bring the mixture to a boil. Reduce the heat to medium-low and simmer, whisking constantly, until the mixture thickens and turns a light caramel color. This may take 10 minutes or more, so be patient. Pour the caramel mixture over the cooled shortbread and spread in an even layer. Allow to cool completely, then chill briefly (I stuck mine in the fridge overnight, but you just want to chill enough that it won't melt when you add the warm chocolate in the next step). To make the chocolate layer: Add the chocolate, corn syrup, and butter to a heatproof bowl and set over a pan of simmering water. Heat, stirring occasionally, until everything is melted and the mixture is smooth and glossy. Pour the chocolate over the chilled caramel and spread into an even layer with an offset spatula. Let cool for a few minutes, then sprinkle the top with the fleur de sel (if using). Let the chocolate set completely before slicing and serving.

However, this could be because the Smuckers Salted Caramel sauce is not very salty. So, I would recommend tasting the caramel first (decide if you need the 1/4 teaspoon...

2 cups unsalted butter, softened
1 cup white sugar
1-1/2 cups powdered sugar
1 tablespoon vanilla extract
4 cups all-purpose flour, plus 2 tablespoons
1 (11.5 oz) jar smuckers salted caramel sauce
sea salt

Steps:

  • 1. Preheat oven to 350 degrees. Line a 9x13 baking pan with foil, extending over the sides. Spray the foil liberally with cooking spray and set aside.
  • 2. In a mixing bowl beat together butter and sugar until creamy and fluffy, about 2 minutes. Beat in powdered sugar and vanilla. Lastly, mix in flour (4 cups) until soft dough forms. Press HALF of the dough evenly into the bottom of the prepared pan. Refrigerate the remaining dough.
  • 3. Bake the crust for 15 minutes . Remove from the oven. In a small bowl combine caramel sauce, 1/4 teaspoon sea salt, and remaining 2 Tablespoons of flour. Mix well. Pour evenly over cooked crust.
  • 4. Crumble the refrigerated dough on top of caramel layer. Cover the caramel completely and use ALL of the dough (caramel will bubble up ... pay close attention to the edges). Sprinkle generously with sea salt. (I suggest tasting the caramel sauce to gauge how much additional salt is desired.)
  • 5. Return to oven and continue baking for an additional 25-30 minutes or until golden brown (very light) and the caramel is bubbly. Cool completely before cutting in to squares.

3 sticks unsalted butter, plus more for the pan
1 cup granulated sugar
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 cup packed light brown sugar
3 tablespoons light corn syrup
2 tablespoons heavy cream
1 teaspoon instant espresso powder
1/4 teaspoon kosher salt
1/2 teaspoon cider vinegar
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish, then line with parchment paper, leaving an overhang on 2 sides; butter the parchment.
  • Beat 2 1/2 sticks butter, the granulated sugar and 1 teaspoon vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Reduce the mixer speed to low; add the flour and beat until just incorporated.
  • Transfer the dough to the prepared baking dish and set a piece of plastic wrap directly on the surface. Press into an even layer, then peel off the plastic. Bake until golden brown, 30 to 35 minutes. Transfer to a rack to cool slightly, then remove from the pan using the parchment. Cut into triangles.
  • Make the caramel: Combine the remaining 1/2 stick butter, the brown sugar, corn syrup, heavy cream, espresso powder and kosher salt in a small saucepan over medium heat. Cook, stirring occasionally, until a candy thermometer registers 235 degrees F, about 6 minutes. Remove from the heat and stir in the remaining 1 teaspoon vanilla and the vinegar. Let cool 5 minutes, then drizzle over the shortbread. Sprinkle with sea salt.

1 14-ounce can sweetened condensed milk
kosher salt
3 sticks butter (3/4 pound), unsalted, room temperature
1 cup sugar, plus extra
1 teaspoon vanilla
3 1/2 cups flour
1/4 teaspoon salt

Steps:

  • Preheat the oven to 425 degrees. Pour the milk into a pie plate, stir in 1/4 teaspooon kosher salt, and cover it tightly with foil. Put the pie plate in a big roasting pan, and fill the pan halfway up the pie plate with hot water. Bake for 1 to 1 1/4 hours, adding more water if necessary. Let cool, then whisk until smooth. Meanwhile, make the cookies.Set the oven at 350 degrees. The butter has to be room temp for this to work well, so what I did was set the butter out first thing in the morning, make the caramel, then about 15 minutes before that was done, I made the cookies. Cream the butter and sugar in a mixer. Add the vanilla. Mix the salt with the flour, then add the dry ingredients a little at a time and mix until the dough comes together. I formed the dough into square logs (though you can make it into a plate shape and roll it out; I just hate doing cut-out cookies). Wrap in plastic wrap and refrigerate 30 minutes. Slice or cut the dough into 1/4 to 1/2 inch thick cookies (mine were like 1/3 an inch). They don't spread much, so you can get quite a few on an ungreased cookie sheet. Sprinkle with reserved sugar. Bake for 20-24 minutes, switching the cookie sheets halfway through to get even cooking. Keep an eye on them because they go from perfect to burned fast. Put wax paper under your cooling rack. Remove cookies from the oven, place on the cooling racks. Heat the caramel for 30 seconds in the microwave, then put it in a Ziploc bag and snip one end (to make a homemade pastry bag). Drizzle cookies with caramel, then sprinkle with kosher salt.

Steps:

  • Make the caramel. Place sugar in heavy bottom pan on gentle heat, melt and cook until dark amber brown. Add sea salt and pour immediately onto a sheet of silicone paper to cool. When cold and brittle smash up into small pieces or whizz in a blender - not to fine powder to ensure there are plenty of pieces in the mix.
  • Add flour, sugar, softened butter to mixer bowl and mix until just coming together. Add caramel pieces. Now add a dash of double cream to bring the mixture together to a cookie dough consistency.
  • Chill for half an hour (not absolutely necessary) and roll out to preferred thickness. Cut into rounds, place on non stick baking sheet and bake at 170 for 10 - 15 mins until golden.
  • Remove and allow biscuits to cool on the sheet until the can be safely transferred to a cooling rack. Makes around 40 biscuits (depending on preferred thickness)
