1 can (15 ounces) black beans, rinsed and drained
2/3 cup dry bread crumbs
1 small tomato, seeded and finely chopped
1 jalapeno pepper, seeded and finely chopped
1 large egg
1 teaspoon minced fresh cilantro
1 garlic clove, minced
1 tablespoon olive oil
4 whole wheat hamburger buns, split
Optional: Reduced-fat sour cream and guacamole

Steps:

  • Place beans in a food processor; cover and process until blended. Transfer to a large bowl. Add the bread crumbs, tomato, jalapeno, egg, cilantro and garlic. Mix until combined. Shape into 4 patties., In a large nonstick skillet, cook patties in oil over medium heat until lightly browned, 4-6 minutes on each side. Serve on buns. If desired, top with sour cream and guacamole.

1 can (15 ounces) black beans, rinsed and drained
3/4 cup panko bread crumbs
1 cup salsa, divided
1 large egg, lightly beaten
2 tablespoons minced fresh cilantro
1 garlic clove, minced
2 teaspoons canola oil
4 whole wheat hamburger buns, split

Steps:

  • In a large bowl, mash beans. Mix in bread crumbs, 1/2 cup salsa, egg, cilantro and garlic. Shape bean mixture into 4 patties; refrigerate 30 minutes., In a large skillet, heat oil over medium heat. Cook burgers 3-5 minutes on each side or until a thermometer reads 160°. Serve on buns with remaining salsa.

Mexican Bean Burgers W/ Lime Yogurt & Salsa image

I am trying to push full forced with my diet to finally reach my 100lbs lost target. So, I am collecting every low fat recipe that looks good to me and this is the latest one. I found it in the April 2009 of BBC good food magazine. The recipe says that the uncooked burgers can be frozen so they would be good to make ahead and have when I need something quick but also healthy.

2 (14 ounce) cans kidney beans, rinsed and draimed
4 ounces breadcrumbs
2 teaspoons mild chili powder
1 bunch fresh cilantro, stalks and leaves chopped
1 egg
7 ounces salsa
1/4 pint low-fat plain yogurt
1/2 lime, juice of
6 whole grain buns

Steps:

  • Heat grill/broiler to high.
  • Tip the beans into a large bowl, then roughly crush with a potato masher.
  • Add the breadcumbs, chili powder, cilantro stalks and half of the leaves, egg and 2 tablespoons salsa.
  • Season to taste and then mix together well with a fork.
  • Divide the mixture into 6, then wet your hands and shape into burgers. If you are freezing them this is the time where the burgers can be frozen.
  • Place on a non-stick baking tray, then grill for 4 to 5 minutes on each side until crisp. If cooking from frozen, bake for 20 to 30 minutes in a 400 degree oven.
  • While the burgers are cooking, mix the remaining cilantro leaves with the yogurt, lime juice and a good grind of black pepper.
  • Split the buns in half and spread the bases with some of the yogurt.
  • Top with any lettuce, onion, etc that you might like and then put a burger on top.
  • Put another dollop of lime yogurt and some salsa on top of burger and put the other half of the bun on top.
  • Serve.

cooking spray
1 1/4 cups chopped peeled mangoes (about 1 medium)
3 tablespoons chopped shallots
1 1/2 tablespoons fresh lime juice
1 avocado, peeled and chopped
1 garlic clove, minced
6 (2 ounce) whole wheat hamburger buns, lightly toasted
6 green leaf lettuce leaves

Steps:

  • Preheat oven to 350°.
  • Place black beans in a medium bowl; mash with a fork. Stir in 1/2 cup finely chopped cilantro and the next 7 ingredients (through egg whites). Shape bean mixture into 6 (1/2-inch-thick) patties. Arrange patties on a baking sheet coated with cooking spray. Bake at 350° for 20 minutes, carefully turning once.
  • Combine remaining 1/4 cup cilantro, mango, and the next 4 ingredients (through minced garlic) in a medium bowl. Place a patty on bottom half of each hamburger bun; top each with 1 lettuce leaf, 1/3 cup salsa, and top half of bun.

Burgers
1 package (10 oz) portobello mushrooms, wiped clean
1 1/4 cups canned black beans, rinsed and drained
1/4 cup chopped green chiles
3 tsp Worcestershire sauce
1 1/2 tsp chili powder
1/2 tsp salt
1/4 tsp onion powder
3/4 cup breadcrumbs
1 egg
Vegetable-oil cooking spray
2 whole-grain pitas, halved
1 avocado, sliced

Steps:

  • Combine salsa ingredients and set aside. In a food processor, chop mushrooms into extra fine pieces. Add beans, chiles, Worcestershire, chili powder, salt, onion powder, breadcrumbs and egg; process until fully combined. Liberally coat a large nonstick pan with cooking spray. 2 x 400g/14oz cans kidney beans, rinsed and drained
100g breadcrumb
2 tsp mild chilli powder
small bunch coriander, stalks and leaves chopped
1 egg
200g tub fresh salsa
150ml low-fat natural yogurt
juice ½ lime
6 wholemeal burger buns, sliced avocado, sliced red onion and salad leaves, to serve

Steps:

  • Heat grill to high. Tip the beans into a large bowl, then roughly crush with a potato masher. Add the breadcrumbs, chilli powder, coriander stalks and ½ the leaves, egg and 2 tbsp salsa, season to taste, then mix together well with a fork.
  • Divide the mixture into 6, then wet your hands and shape into burgers. The burgers can now be frozen. Place on a non-stick baking tray, then grill for 4-5 mins on each side until golden and crisp. To cook from frozen, bake at 200C/fan 180C/gas 6 for 20-30 mins until hot through.
  • While the burgers are cooking, mix the remaining coriander leaves with the yogurt, lime juice and a good grind of black pepper. Split the buns in half and spread the bases with some of the yogurt. Top each with leaves, avocado, onion, a burger, another dollop of the lime yogurt and some salsa, then serve.
