ORANGE SALSA:
1/4 cup orange juice
2 tablespoons olive oil
2 tablespoons McCormick® Perfect Pinch® Salt Free Southwest Sweet 'n Smoky Seasoning, divided
2 tablespoons packed brown sugar, divided
1 pound salmon fillets
2 cans (11 ounces each) mandarin oranges, drained and cut into 1/2-inch pieces
2 tablespoons red bell pepper, finely chopped
1 tablespoon fresh cilantro, chopped
1/2 teaspoon McCormick® Perfect Pinch® Salt Free Southwest Sweet 'n Smoky Seasoning

Steps:

  • For the Salmon, mix juice, oil and 1 tablespoon each Seasoning and sugar in small bowl. Place salmon in large resealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor. Meanwhile, for the Salsa, mix all ingredients in medium bowl until well blended. Cover. Refrigerate until ready to serve. Preheat oven to 400°F. Mix remaining 1 tablespoon each Seasoning and sugar in small bowl. Remove salmon from marinade. Discard any remaining marinade. Rub salmon evenly with seasoning mixture Bake 10 to 15 minutes or until fish flakes easily with a fork. Serve with Orange Salsa.

1 large tomato, seeded and chopped
1 medium ripe avocado, peeled and chopped
1 small onion, chopped
1/2 cup minced fresh cilantro
1-1/2 teaspoons olive oil
1 garlic clove, minced
2 tablespoons plus 2 teaspoons balsamic vinaigrette, divided
4 salmon fillets (4 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine the tomato, avocado, onion, cilantro, oil, garlic and 2 tablespoons vinaigrette. Chill until serving., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Sprinkle salmon with salt and pepper. Place salmon skin side down on grill rack. Grill, covered, over medium heat for 7-9 minutes or until the salmon flakes easily with a fork. Brush with remaining vinaigrette. Serve with salsa.

1-1/2 teaspoons Paprika
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
1/4 teaspoon salt
1/2 teaspoon Oregano
1/4 teaspoon Thyme
1/4 teaspoon Fine Grind Black Pepper
1/8 teaspoon Cayenne Pepper
1-1/2 teaspoons brown sugar
1 pound salmon fillet
2 teaspoons Mazola® Corn Oil
2 cups (19.5 ounce jar) grapefruit sections OR 3 fresh grapefruits, peeled and sectioned
1/3 cup chopped green onion
1/4 cup chopped red bell pepper
1/4 cup chopped fresh cilantro
1 jalapeno pepper, diced

Steps:

  • 1. Preheat oven to 375°F. 2. Combine paprika, onion and garlic powder, salt, oregano, thyme, black pepper, cayenne pepper and brown sugar in a small bowl. 3. Cut salmon into 4 portions and brush with oil. Distribute the rub over the salmon generously coating all surfaces. Place salmon on a shallow baking pan with sides. 4. Bake for 15 to 20 minutes, until fish flakes easily. 5. Coarsely chop grapefruit into bite size pieces. Combine all salsa ingredients and serve with salmon. Grapefruit salsa can be made ahead and refrigerated until ready to serve.
