This Easy Salmon Cracker Spread is loaded onto RITZ Crackers for the perfect appetizer for Game Day! This delicious salmon spread is made with fresh salmon, dill, cream cheese and mayonnaise...it's so good!

1 lb. fresh or frozen salmon, or you can substitute (3) 5 oz. cans of canned salmon
2-3 tablespoons fresh dill, chopped
2 oz. cream cheese at room temperature
1/4 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons lemon juice
1 teaspoon lemon zest
RITZ Crackers for serving

Steps:

  • If using fresh salmon, preheat the oven to 400 degrees.
  • Season the salmon lightly with salt and pepper, place on a foil lined baking sheet and bake for 12 minuets until the fish flakes apart.
  • Remove the skin from the bottom and place into a medium sized bowl to cool.
  • Flake the salmon with a fork or your hands, then add the cream cheese, mayonnaise, dill, salt and pepper, lemon juice and zest.
  • Stir to combine then cover with plastic wrap and chill until ready to serve.

You'll find that this spread is unbelievably flavorful, but only uses two ingredients. Serve as an appetizer, or serve the crackers along with salad and fruit for a complete summertime dinner. It's also a great way to use leftover baked salmon (basic recipe included at the end).

8 ounces salmon, cooked and cooled
5 ounces boursin cheese (low fat versions also available)

Steps:

  • Prep: Use two forks to gently flake apart cooked salmon. Soften Boursin Cheese slightly in microwave (10 seconds).
  • Blend Boursin Cheese and flaked salmon. Serve with crackers.
  • Basic salmon cooking instructions: brush salmon with olive oil - then sprinkle with rub (Salmon Rub or Old Bay Seasoning). Bake 10-12 minutes at 425 degrees - remove from oven when you see dots of white coming from inside - these are the cooked protein solids and at this point, it's almost OVER-done.

1 tablespoon mayonnaise
½ teaspoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic

⅛ teaspoon ground black pepper
¼ teaspoon dried dill weed
6 ounces flaked smoked salmon
