AIR FRYER SALMON NUGGETS



Air Fryer Salmon Nuggets image

Crispy on the outside, moist and tender on the inside, these salmon nuggets are finished off with a sweet chipotle-maple drizzle. These make a great appetizer and are also tasty served over greens. Try and find center-cut salmon filets that are at least 1-inch thick. I usually buy extra salmon, and trim off the thinner outer edges, saving for another use. I like to use a Misto® sprayer with my own oil, but feel free to use regular cooking spray.

⅓ cup maple syrup
¼ teaspoon ground dried chipotle pepper
1 pinch sea salt
1 ½ cups butter- and garlic-flavored croutons
1 large egg
1 (1 pound) skinless, center-cut salmon fillet, cut into 1 1/2-inch chunks

Steps:

  • Combine maple syrup, chipotle powder, and salt in saucepan and bring to a simmer over medium heat. Reduce heat to low to keep warm.
  • Place croutons in the bowl of a mini food processor; pulse until crushed into fine crumbs. Transfer to a shallow bowl. Whisk egg in a separate bowl.
  • Preheat the air fryer to 390 degrees F (200 degrees C).
  • Sprinkle salmon lightly with sea salt. Lightly dip salmon into egg mixture, letting excess drip off. Coat salmon in crouton breading and shake off extra. Set on a plate and mist lightly with cooking spray.
  • Spray basket of the air fryer with cooking spray. Place salmon nuggets inside, working in batches to avoid overcrowding, if necessary.
  • Cook in the preheated air fryer for 3 minutes. Gently turn salmon pieces, spray lightly with oil, and cook until salmon is cooked throughout, 3 to 4 more minutes. Place on a serving platter and drizzle with warm chipotle-maple syrup. Serve immediately.

8 ounces honey roasted peanuts
1 tablespoon ground black pepper
6 tablespoons butter
1 cup packed brown sugar
⅔ cup bourbon whiskey (such as Jack Daniel's®)
⅓ cup soy sauce
1 tablespoon crushed garlic
1 teaspoon onion powder
1 ½ pounds salmon fillet, skinned
1 serving cooking spray

Steps:

  • Place peanuts in a large resealable bag and pound into fine crumbs with a rolling pin, meat mallet, or flat side of a can. Add pepper; mix well.
  • Melt butter in a nonstick saucepan over medium heat. Add brown sugar, bourbon, soy sauce, garlic, and onion powder. Bring to a boil; cook until sauce thickens and has a syrupy consistency, 20 to 30 minutes. Remove from heat and let cool until it is still hot to the touch but not scalding, about 5 minutes.
  • Cut thinner parts of salmon fillets into strips and place in a small bowl. Coat with a little bit of the sauce. Cut thicker parts of salmon fillets into 1-inch cubes and place in the saucepan; stir to coat with sauce. Let sit until flavors combine, about 10 minutes.
  • Preheat oven to 450 degrees F (230 degrees C). Grease a large glass baking dish with cooking spray.
  • Place strips of salmon on one side of the baking dish and cubes on the other, making sure all pieces are coated with sauce but not overlapping. Sprinkle peanut and black pepper mixture evenly on top.
  • Bake in the preheated oven until strips flake easily with a fork, 5 to 6 minutes. Remove from the dish and continue baking until cubes flake easily with a fork, about 5 minutes more.

This recipe is adapted from one on the Canadian Fishing Company web site. My family likes it better than any of the other salmon loaf or patty recipes I have tried.

1 (7 1/2 ounce) can salmon (or flake up some leftover salmon)
1/4 cup minced onion
1 tablespoon light mayonnaise
1 teaspoon lemon juice
1 cup soft breadcrumbs
1 teaspoon Dijon mustard
1 egg, beaten
1 pinch dried thyme
1 pinch fresh ground pepper
1 tablespoon butter or 1 tablespoon margarine
lemon wedge, to squeeze over nuggets (optional)

Steps:

  • Flake salmon in a mixing bowl.
  • Add all other ingredients except butter& lemon.
  • Shape into 1" balls, then flatten slightly.
  • Heat butter or margarine in a non stick frying pan& swirl to cover bottom of pan.
  • Add nuggets and cook over medium high heat, cooking about 1 1/2 minutes on each side or until lightly browned.

SALMON NUGGETS WITH SWEET POTATO CHIPS

1 large or 2 small sweet potato , cut into chips
2 tsp olive oil , plus a little extra for greasing
50g cornflake
1 medium egg
250g salmon fillet , skinned and deboned
1 tsp sweet paprika
2 tsp cornflour
peas and your favourite sauce, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. On a large baking tray, toss the sweet potato chips in the oil, add seasoning. Spread them out and bake for 25 mins.
  • While the chips cook, prepare the nuggets. Put the cornflakes in a plastic sandwich bag and bash gently with a rolling pin until finely crushed, then tip into a bowl. Beat the egg in another bowl.
  • Cut the salmon fillet into chunky nuggets and season. Mix the paprika into the cornflour and sieve over the fish. Toss to coat on all sides. Dip the floured nuggets into the egg, then the crushed cornflakes, pushing them on firmly to help them stick.
  • Remove the chips from the oven. Push the chips to the edges of the tray, flipping them over as you do, and place the nuggets in the centre. Cook for 8 mins or until the nuggets are cooked through. Serve with peas and your favourite sauce for dipping.

These easy salmon nuggets are perfect for all the family to make and are delicious, especially for a summers day!

a little oil for greasing
1 large egg, beaten
75g breadcrumbs
70g flour
1tsp parsely
500g boneless salmon fillets

Steps:

  • Preheat the oven to 200C/180C fan/gas 6. Grease 1 large baking tray with the oil and leave aside.
  • Get 3 shallow bowls and pour the beaten egg into one. Also add the parsely to the breadcrumbs and stir until fully mixed. Put the flower into another and the beaten egg into the last one.
  • Cut the fish into small chunks, that are about 3cm by 4cm. to do this, put your knife diagonally into the fish, pulling off the skin if there is any. Get one piece of fish. Using your hands, put the fish into the flour. Roll around several time until it is fully covered. Next, take the fish out and put it in the egg, once again covering fully. Take it out and put it in the breadcrumbs and cover. Put your fish onto the greased tray and do this with all your fish chunks.
  • Put your fish into the oven and cook for about 15-20 minuets or until golden brown. Then, they are ready to serve!

- 1 pound (500 g) sweet potatoes, peeled and diced smallish
- 1/2 head of broccoli
- 1 large tin salmon, liquid and bones removed
- 1 teaspoon minced garlic
- 1 heaped tablespoon chopped dill
- 1 egg
- 3-4 tablespoons rice flour
- vegetable oil for frying

Steps:

  • Boil and mash the sweet potatoes. Well steam the broccoli until well cooked - mash the two together in a large bowl. Add the other ingredients, mix well with your hands.
  • Form the mixture into walnut sized balls and press to create a pattie.
  • Heat the oil in a non stick pan. Fry the patties for 3 minutes each side over a medium-high heat.
