SALMON MOUSSE TARTLETS
A delightfully classic Salmon Mousse, perfect for hors d'ouevres at your next party.

Steps:
- In your food processor add the Philadelphia Cream Cheese and Salmon (no skin), Mayonnaise, Lemon Juice, Garlic Powder, Paprika, Horseradish, and Black Pepper. Run for a few minutes, until everything is emulsified.
- Place mixture into a bowl and whip for a few more minutes, trying to incorporate air and doubling the volume.
- Spoon mixture into a pastry piping bag and pipe into the shells. Drop on a few Salmon Caviar eggs and a micro sprig of dill to garnish.
SALMON MOUSSE TARTLETS
All I can say about these little beauties is YUMM-O!!!! What a presentation and soooo easy to make it is not even funny....especially if you make the mousse ahead of time. Just throw them in the oven and VOILA!! The mousse can be made a day ahead and stored in the fridge covered. You will need a mini muffin tin and a 2 1/2" round cookie cutter for this recipe.

- Preheat the oven to 425ºF.
- Lightly flour a working space and place the puff pastry sheet on it.
- Using the cookie cutter, cut the pastry into rounds and place into the holes of the mini muffin tin.
- Place in freezer while preparing the mousse.
- Place the salmon, shallot and celery in a food processor; process until smooth.
- Add the lime juice, horseradish, cream, salt and cayenne pepper; process just until smooth. Taste for seasoning.
- Transfer to a small bowl and refrigerate to firm up as well as develop the flavors, about 30 minute.
- Fill rounds in muffin tin about 2/3 full.
- Bake for about 11-15 min or until tarts are puffed up and golden brown.
- Allow them to cool just a little in the tin, they will deflate just a bit.
- Top with the creme fraiche and serve immediately.

BALSAMIC ONION TARTLETS
I recently acquired a copy of Martha Stewart's Hor D'Oeuvres Handbook and became taken with her flair for small bites with beautiful presentation. The onion relish here was inspired by Dancer's Chicken with Balsamic Onions. You can prepare the onions a day or so ahead of time and finish the tarts just before serving. I tend to offer a lot of variety so I keep the batches of each hors d'oeuvre small, but this can be easily doubled. Don't let the preparation time scare you, its mostly simmering time that frees you to attend to other things. These tarts are just wonderful served along with a zesty red wine.

- Under medium to low heat, place olive oil and onions in a skillet and cook for 3 or 4 minutes so that onions begin to soften but not brown.
- Add 1/3 cup of chicken broth to the onions and continue to cook until the liquid evaporates. This should take about 8 to 10 minutes.
- Add thyme and another 1/3 cup of broth, and cook until the liquid evaporates.
- Add the balsamic vinegar and the remaining broth, cooking until liquid evaporates. The final simmer takes about 12-15 minutes.
- The results will be soft and tender onions with a tart sauce that is slightly syrupy but not at all loose.
- To fill the Phyllo cups you can either use a pastry bag with a star tip or a teaspoon. If you are using cream cheese, allow it to soften a bit and mix with a tablesoon of milk.) Place a small amount of the yogurt or cream cheese in the shell filling about 1/3 to 1/2 way to the top. Top each with a spoonful of the onions.
- Bake the tartlets in a pre-heated 350 degree oven for 8 to 10 minutes.
- To garnish, you can pipe little rosettes of yogurt or cream cheese on top and sprinkle with a few fresh thyme leaves.

- In a small skillet, saute leek in butter until tender. Add the garlic; cook 1 minute longer. Stir in the cream, salt, pepper and nutmeg; cook and stir until thickened, 1-2 minutes., Place tart shells on a baking sheet. Slice cheese into 15 pieces; place 1 piece in each tart shell. - Swirl olive oil in bottom of medium nonstick skillet.
- Add onions and sprinkle with 1/2 teaspoon salt.
- Cover and cook over medium-low heat, stirring occasionally, until onions are soft, about 10 minutes.
- Remove cover and cook, stirring often, until onions are golden, 15 to 20 minutes.
- Stir in figs, wine, broth, vinegar and fresh rosemary.
- Increase heat to high and simmer until sauce thickens, about 5 minutes.
- Add salt and pepper to taste.
- Keep warm.
- Preheat oven to 450 degrees.

- Peel strips from cucumbers to create a decorative edge; cut cucumbers into 1/2-in. slices. - Line a 4-cup round mold with plastic wrap. Lay about 1/3 of the salmon over the plastic wrap, overlapping each slice slightly and hanging the ends over the edge, to cover the mold. Chop the remaining salmon into 1/2-inch pieces and set aside. In the bowl of an electric mixer, combine the cream cheese and sour cream until creamy and well combined. Add the hot pepper sauce and salt and stir well. In a small saucepan, heat the lemon juice over very low heat. Pour into a 1/2-cup ramekin and sprinkle with the gelatin, stirring until the gelatin is dissolved. Remove from the heat and stir into the cream cheese mixture. Fold in the chopped smoked salmon and scallions. Spoon 1/3 of the mousse into the mold, top with a layer of avocado slices, then gently spread with 1/2 the salmon roe. Spread 1/3 of the mousse on top of the roe, and top with the remaining avocado slices and roe. Spread the remaining mousse over the top and fold the overhanging salmon strips over to completely enclose the mousse. Cover with the plastic wrap and chill until firm, about 3 hours. To unmold, place the mold in a bowl of warm water for 10 seconds. Unwrap the plastic from the bottom of the mold and invert the mold onto a serving plate. Gently shake to release the mold and unwrap completely. Serve with toasted croutons or crackers.

- 1. Preheat oven to 350 degrees.
- 2. Melt butter in a large skillet over medium heat. Add in the onions and salt, and cook until onions have caramelized, approximately 20 minutes. Remove from heat, add in the vinegar, stir to combine.
- 3. Meanwhile, place salmon cream cheese into a medium bowl, add in the lemon juice and dill, mix to fully combine. Place 1 1/2 teaspoons of salmon mixture into each phyllo shell, then top evenly with caramelized onions. Place tartlets onto a large baking sheet.
- 4. Place tartlets into preheated oven and cook for 5 - 7 minutes until heated through. Garnish with chopped fresh dill. Serve immediately.
