SALMON LOAF
During the Depression, Mom's tasty salmon loaf was a welcome change from the usual meat loaf everyone made to stretch a meal. I still like a lot of the make-do meals of those days, but this loaf is one of my favorites. -Dorothy Bateman, Carver, Massachusetts

CHEF JOHN'S SALMON LOAF
Canned salmon is a great, inexpensive source of proteins and omegas, and you may have stocked up on a few cans but not known what to do with them. This tasty shelter-in-place salmon loaf is so good for you! While salmon right out of the can may not be the most appealing thing to look at, this salmon loaf is so delicious that we can surely forgive some of its visual shortcomings. Remember, looks are less important than personality (and taste!) and this easy salmon loaf is proof of that. Serve with your favorite tartar sauce, cocktail sauce, or hot, white cream sauce.

BETTY CROCKER'S SALMON LOAF
A family favorite from way back, the recipe can be found in one of Mom's OLDEST Betty Crocker cookbooks under the title of, "Seafood Loaf." Mom always made it with salmon, and we always cleaned our plates when she made it. What's best is this makes a LOT of loaf for a big family. You can use canned tuna, but our favorite was always canned salmon.

SALMON & CRAB LOAF
A fairly cheap and very easy main dish, which I made this way because I get so tired of the same old methods and ingredients. Instead of breadcrumbs I used butternut, which goes well with all fish. The butternut can be substituted with the same amount of sweet potato. Remember you don't have to peel butternut -- what a job that is! Slice in two and bake in the oven, the peel becomes soft, and the flesh can be scooped out. I used pre-prepared butternut chunks. Do adjust seasonings to taste, but it really does need a tangy mayonnaise. The ingredients are in almost all pantry cupboards! Cooking time includes roasting the butternut.

Steps:
- Heat oven to 350 deg F/180 deg Celsius.
- Toss the butternut with the oil, then roast until soft, about 30 minutes (If using halved butternuts, bake until soft, then scoop out enough flesh to weigh 3 1/2 oz/100g. The 7 oz/200 g raw weight does shrink down to about 3 1/2 oz/100g when roasted, anyway).
- Grease a bread tin of about 8 x 4 inches and about 3 inches deep with butter.
- Drain the salmon and put in a large bowl. Remove crabsticks from coverings, and cut into the salmon, in thin rounds. Add the roasted butternut.
- Add all the seasonings, from the ginger down to the sesame oil, and mix it all well with a fork, breaking up the butternut pieces.
- Put the 3 tablespoons mayonnaise and 2 eggs in a bowl and whisk well. Add to the fish mixture.
- Mix the whole caboodle well, until you have a slightly coarse mixture and all the ingredients have been well combined.
- Scrape into the greased bread tin and smooth the top. If you like, sprinkle over breadcrumbs so the top doesn't dry out too much.
- Bake about 1 - 1 1/4 hour, until firm.
- Turn out carefully on a platter. Serve garnished with pickled cucumber or gherkins, extra mayonnaise, fried tomatoes, mashed potatoes, a green vegetable, and a salad. Use a serrated knife for slicing, or the slices might crumble.

SALMON LOAF WITH CUCUMBER SAUCE
A tasty salmon loaf served with a warm cucumber sauce. Serve it with salad or vegetable dishes. What's leftover is delicious for lunch next day in a sandwich with baby spinach leaves or freshly sliced cucumber. Adapted from a recipe I've had in my files for years. Steps:
- Preheat the oven at 325ºF.
- Combine the salmon with the butter.
- Add salt (to taste), lemon juice, grated onion, grated garlic, parsley and dill.
- Soak the breadcrumbs in milk.
- Add the beaten eggs.
- Add the Parmesan.
- Stir the breadcrumb mixture into the salmon mixture.
- If the mixture seems too dry at this point, add a little of the reserved brine (about a teaspoon at a time) or if you have more lemon juice available, a little more lemon juice (a teaspoon at a time).
- Spoon the mixture into a lightly greased 9x5x3-inch loaf pan.
- Bake at 325°F for 45 minutes, or until cooked.
- THE SAUCE: grate the cucumber.
- Melt the butter in a pan over a medium-low heat.
- Blend in the flour.
- Gradually add the milk, stirring constantly, until the sauce is thickened and bubbly.
- Add the grated cucumber and paprika.
- Stir to blend.
- Serve with the salmon loaf and your favourite salad or vegetable side dishes.
- Chef's notes: This loaf can be made with red or pink salmon. Red is tastier. For the health-conscious, use the salt-reduced or salt-free varieties. And omit - or reduce - the salt in the recipe. I made this again recently, after MarieAlice's review - I hadn't made it for years and years. And not being very good at following recipes exactly whether they be mine or someone else's, I just HAD TO make some changes. I added several grated baby carrots (they are just so sweet and flavoursome at the moment) and several tablespoons of wheat germ. Then in order to retain the moistness, I added some extra lemon juice. And I discovered also that this is one of those recipes that is tastier cold!
