4 slices OSCAR MAYER Cotto Salami, halved
1 cup KRAFT Shredded Monterey Jack Cheese or KRAFT Shredded Colby & Montery Jack Cheese
1/4 cup chopped green chiles
4 flour tortillas (6 inch)
1 Tbsp. butter

Steps:

  • Place 2 meat pieces, 1/4 cup cheese and 1 Tbsp. chilies on half of each tortilla; fold tortilla over to enclose filling.
  • Melt butter in large skillet on medium heat. Add 2 of the tortillas; cook 2 to 3 minutes on each side or until tortillas are lightly browned on both sides and cheese is melted. Repeat with remaining 2 tortillas.
  • Cut in half to serve.

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the salami slices on a baking sheet, leaving a bit of space between each slice. Bake until the edges are crispy and stiff, about 10 minutes. Transfer the salami chips to a paper towel-lined plate to remove any excess fat. Serve immediately or store, refrigerated, in an airtight container.

24 (1/8-inch to 1/4-inch) slices Italian dry Genoa salami (about 4 ounces)
1/3 cup sour cream
3 tablespoons thinly sliced fresh basil leaves

Steps:

  • Preheat the oven to 325 degrees F.
  • Line 2 heavy large baking sheets with aluminum foil. Arrange the salami in a single layer over the baking sheets. Bake until the salami slices are amber brown, watching closely to ensure they brown evenly, about 15 minutes. Transfer the salami crisps to a paper towel-lined baking sheet to absorb the excess oil. Set aside to cool.

2 slices rye bread
2 ounces salami (about 6 slices), thinly sliced
1/2 small bunch arugula, trimmed and washed
1 tablespoon cream cheese

Steps:

  • Spread mustard on one slice of bread; top with salami and arugula. Spread cream cheese on the other slice of bread; close sandwich. Serve, or refrigerate, wrapped tightly in wax paper or plastic, up to overnight. Cut in half.

As a last-minute finger food or hors d'oeuvre, these goat cheese stuffed dates can't be beat. The prep time for this easy party snack is just 15 minutes.

3 Tbsp. raw pistachios
4 oz. goat cheese
3 oz. thinly sliced Calabrese or other spicy salami, finely chopped
1 tsp. finely grated lemon zest
24 large dates (about 6 oz.), preferably Medjool, pitted
Honey (for drizzling)

Steps:

  • Toast pistachios in a dry small skillet over medium heat, tossing occasionally, until golden brown, 5-8 minutes. Let cool slightly, then finely chop.
  • Mix goat cheese, salami, and lemon zest in a medium bowl.
  • Slice dates in half lengthwise, taking care not to cut all the way through, and open like a book. Stuff each date with a small scoop of goat cheese mixture.
  • Arrange dates, filling side up, on a large plate or platter. Drizzle honey over and top with pistachios.
