2 cups Romaine lettuce
2 cups cherry tomatoes
1 cup grated hard Swiss cheese
1 1/2 cups slivered toasted almonds
1/3 cup grated Parmesan cheese
1 cup crouton
1/2 cup chopped cooked bacon
DRESSING
3 tablespoons lemon juice
1/2 cup extra virgin olive oil
3 cloves garlic minced
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Lightly toast almonds. Toss lettuce, tomatoes, Swiss cheese, almonds, Parmesan cheese, croutons, and bacon together and set aside. Prepare dressing by blending lemon juice, salt, oil, garlic, and pepper together at high speed in a blender or food processor. Pour over salad, toss, and serve immediately. TIP: Bacon can quickly and easily be cooked in a microwave by laying pieces atop a paper towel on a microwave-safe plate. Cover with another paper towel and cook on high for 2 or 3 minutes, depending on how much bacon you are cooking. Cook until it reaches preferred doneness, checking frequently.

Salad:
2 heads Romaine lettuce, torn into bite-size pieces
2 cups cherry tomatoes, halved
1 cup coarsely grated Swiss cheese
2/3 cup slivered almonds, toasted
1/4 lb. bacon, cooked and diced
1/3 cup grated Parmesan cheese
1 cup croutons
Salt and Pepper
Dressing:
Juice of 1 lemon
3 cloves garlic, crushed
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup vegetable oil

Steps:

  • In a salad bowl, combine lettuce, tomatoes, Swiss cheese, almonds, and bacon. Toss with dressing. Add Parmesan cheese, salt and pepper to taste, and garnish with croutons. Combine lemon juice, garlic, salt and pepper. Beating continuously with a fork, slowly add vegetable oil in a stream. Let stand for 3 hours.

Signature dish of the Restaurant Franziskanerplatz in Vienna, Austria. Recipe from a clipping in my grandmother's recipe box. The recipe recommends grilling the tenderloins to just rare but you don't have to.

2 (8 ounce) beef tenderloin steaks, 1 1/2 inch thick
2 tablespoons butter
1/8 teaspoon salt
1/8 teaspoon white pepper
1/4 teaspoon cayenne
1 teaspoon Dijon mustard
1 tablespoon parsley, chopped
1 teaspoon sherry wine
2 teaspoons Worcestershire sauce
1 ounce cognac
1 tablespoon ketchup
2 tablespoons whipping cream
4 mushrooms, sliced (sauteed in following ingredient)
1 teaspoon butter

Steps:

  • Grill the steak to your desired doneness.
  • Put butter, salt, white pepper, cayenne, mustard, chopped parsley, sherry and Worcestershire sauce into a pan and heat.
  • When butter has fully melted and sauce has been stirred, add the steak, pour over with the cognac and flambe.
  • When cognac has burned off, remove the steak and cut into 3 slices per steak. Keep warm.
  • Mix ketchup and whipping cream then fold in to the sauce along with the sauteed mushrooms. Stir well and bring to just under a boil.
  • Plate the steak and pour sauce over. Serve with French fried potatoes and peas.
