Steps:
- Preheat oven to 375 degrees F.
- Slice the bread, rub with cut garlic clove and place in a heated dry cast iron grill pan on the stove top. Cook until toasted, about 2 minutes. Flip and toast the other side, about 1 minute more.
- Slather the bread with leftover cranberry sauce, top with crumbled blue cheese. Place in the oven until cheese melts and serve.
PROSCIUTTO BRUSCHETTA

Steps:
- Preheat the broiler.
- Brush the bread on both sides generously with oil and place on a baking sheet. Broil until golden and crispy, 2 minutes per side.
- Remove, let cool slightly, and rub the garlic all over one side of each slice. Place a slice of cheese on each piece of bread, then top each with a slice of prosciutto. Return to the oven until the cheese is melted and golden, 2 minutes.
- Garnish with a basil leaf and serve.

- In a large bowl, combine the first seven ingredients. In another bowl, whisk the oil, vinegar, rosemary, pepper and pepper sauce if desired. Pour over tomato mixture; toss to coat., Place bread slices on an ungreased baking sheet. Broil 3-4 in. from the heat for 1-2 minutes or until golden brown. With a slotted spoon, top each slice with tomato mixture.

BRUSCHETTA WITH GREENS
Steps:
- Preheat a grill or stove-top grill pan.
- Place Italian country loaf on a work surface and slice 8 thick slices. Place bread on a grill pan and grill until the slices are well browned on both sides.
- In a large pot of boiling water, blanch the greens and then drain on paper towels. Set aside.
- Remove the bread slices from the grill. Cut 1 garlic bulb in half and rub 1/2 over both sides of each bread slice.
- Once the blanched greens are dry, place on top of the bread slices. Generously drizzle each slice with olive oil and a dash of gray salt.
