PAPPARDELLE IN SAFFRON CREAM

Kosher salt
1 tablespoon unsalted butter
1/2 small shallot, minced
Pinch of saffron threads
2/3 cup heavy cream
Freshly ground pepper
1/4 teaspoon fresh lemon juice
1/4 teaspoon vanilla extract
4 ounces dried pappardelle pasta
2 tablespoons grated parmesan cheese, plus more for topping
2 tablespoons roughly chopped fresh chives
1/2 teaspoon grated lemon zest

Steps:

  • Bring a pot of salted water to a boil. Meanwhile, melt the butter in a medium skillet over medium heat. Add the shallot and saffron and cook, stirring occasionally, until the shallot is softened, about 2 minutes. Add the cream, 1/4 teaspoon salt, and pepper to taste; increase the heat to medium high and simmer until slightly thickened, about 2 minutes. Stir in the lemon juice and vanilla.
  • Add the pasta to the boiling water and cook as the label directs. Remove 1/4 cup cooking water, then drain the pasta and transfer to the skillet with the sauce. Add the reserved cooking water, the parmesan and half of the chives and toss to coat. Serve topped with the lemon zest, remaining chives and more cheese.

Pappardelle And Shiitake Mushrooms In Saffron Cream Sauce image

Salt
2 tablespoons light olive oil
10 large shiitake mushroom caps, cut into thin strips
1 large tomato, cut into small dice
2 yellow bell peppers, cut into thin strips
1 1/2 teaspoons minced garlic
20 ounces pappardelle or large bow-tie pasta
1 1/2 pounds rock shrimp (or other small shrimp), peeled and deveined
1/2 cup white wine
1/4 cup fish stock or bottled clam broth
1/4 cup chicken stock
1 1/2 cups heavy cream
2 large pinches saffron
Freshly ground black pepper
2 tablespoons butter (optional)
3 tablespoons chopped chives (cut into 1/2 inch lengths)

Steps:

  • Place a large stock pot (8-quart or larger) of lightly salted water over high heat, to bring to a boil for the pasta. In a large nonstick or well-seasoned saute pan over medium heat, heat 1 tablespoon olive oil and add mushroom slices. Saute until mushrooms are limp, about 2 minutes. Remove from pan with a slotted spoon, and set aside in a bowl.
  • Add diced tomato to the pan. Saute until heated through, about 1 minute. Remove with a slotted spoon, and place in a bowl.
  • Add 1/2 tablespoon of the remaining oil to the pan. Add yellow peppers, and saute until limp, about 3 minutes. Remove to a bowl. Add garlic to the pan and saute lightly; do not brown. Remove to bowl of peppers. Place pappardelle in pot of boiling water, and cook until al dente, about 8 minutes.
  • While pasta is cooking, add remaining 1/2 tablespoon oil to the saute pan. Increase heat to medium-high, and add shrimp. Saute until shrimp are pink but not fully cooked, about 2 minutes. Remove with a slotted spoon, and place in a bowl.
  • Reduce heat under pan to medium, and add wine, fish stock or clam broth, chicken stock and any juices collected in the bowls of mushrooms, tomatoes, peppers and shrimp. Stir well with a wooden spoon, scraping the bottom of the pan. Add the cream and saffron, and bring to a simmer. Cook, stirring, until sauce thickens and turns yellow from the saffron, about 3 minutes. Add the reserved vegetables and shrimp. Heat through, and add salt and pepper to taste. Add butter, if desired, and stir gently until it has melted. Add chives, reduce heat to very low, and cover pan.
  • Drain pasta well, and transfer to a warm serving bowl. Add saffron cream sauce, and toss gently to mix well. Serve immediately.

1 lb asparagus
1 lb pappardelle pasta
1/4 teaspoon saffron
3 tablespoons butter
1 medium onion
1 cup peas (fresh shelled garden peas)
1 teaspoon orange zest, fresh
1/4 cup orange juice, fresh
salt
parmesan cheese, freshly grated

Steps:

  • Trim and cut the asparagus into 1 inch pieces.
  • Chop the onion to your desired texture.
  • Bring a large pot of water to boil and add the asparagus.
  • Cook until crisp-tender, approximately 3-4 minutes.
  • Remove the asparagus and set aside.
  • Add the pappardelle to the boiling water and cook till al dente.
  • While the pasta is cooking, set a large skillet over medium heat.
  • Add saffron to the skillet and heat till the saffron is fragrant and brittle, approximately 30 seconds.
  • Crush the saffron to a powder with the back of a wooden spoon.
  • Add the butter to the pan, heat till melted.
  • Add the onion and saute till translucent.
  • Stir in peas and orange zest, cook about 2 minutes, till peas are tender.
  • Add the orange juice and asparagus, cook till the asparagus is warmed through.
  • Season to taste with salt.
  • When the pasta is cooked, drain and toss with the asparagus mixture.
  • Serve with the grated Parmesan cheese.

1 ¼ pounds lobster tails (4 or 5 medium-size tails)
Simmering liquid (see below)
1 pound dried pappardelle pasta
2 tablespoons unsalted butter
2 shallots, minced
2 garlic cloves, minced
A pinch of red pepper flakes
1 cup white wine
½ teaspoon saffron
¼ teaspoon salt, plus salt to taste
1 cup heavy cream
Freshly ground pepper
2 tablespoons minced flat leaf parsley
Ingredients for simmering liquid
2 quarts water
2 cups white wine
3 teaspoons salt
1 onion, peeled and quartered
1 medium leek, white part only, cleaned and quartered
1 carrot, peeled and cut into 2-inch segments

Steps:

  • Instructions for simmering liquid Combine all the ingredients, except the lobster, in a large pot and bring to a boil over high heat. Reduce heat to medium-low and simmer for 30 minutes. Drain the liquid through a fine-mesh sieve and discard the solids. Return the liquid to the pot and bring it to a simmer again. Prepare a large bowl of ice water and set aside. Place the lobster in the simmering liquid and cook until they turn pink, about 5 minutes. Strain the lobster in a colander and discard the cooking liquid. Place in the ice water bath for 3 to 5 minutes to chill, adding more ice if necessary to cool. When the lobster tails are cool enough to handle, use the point of a paring knife to score the underside of each tail and cut a line lengthwise along the middle of each tail. Crack the tails open and pull out the meat. Chop it into small chunks about ¼ to ½-inch in diameter and set aside. Instructions for pasta In a large pot, bring 4 quarts of lightly salted water to a boil over high heat. Add the pasta and stir it a bit as it softens. Reduce heat slightly, but keep it high enough to maintain a boil without splattering the stove. Cook until the noodles are tender but still firm, 8 to 9 minutes. Drain in a colander and shake dry. (Do not rinse.) Leave the noodles in the colander and set aside. Instructions for sauce While the pasta is cooking, melt the butter over medium heat in a large sauté pan or deep-sided skillet. Add the shallots and sauté for 1 minute. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds. Add the lobster broth, wine, saffron and ¼ teaspoon salt. Raise heat to high and bring to a boil. Lower to medium-high and let simmer until the liquid has reduced by half, 8 to 10 minutes. Add the cream and continue to simmer, stirring occasionally, until the sauce thickens, about 4 minutes. Add the lobster chunks and cook for another 2 minutes. Remove from heat and serve immediately.

4 saffron strands
4 sun-dried tomatoes (chopped)
1 teaspoon thyme (fresh chopped)
12 shrimp (fresh heads on)
8 ounces baby calamari
8 ounces white fish fillets (such as monk fish skinless fillets, you can substitute other dense white fish)
3 tablespoons garlic (crushed)
2 onions (small quatered)
1 small fennel bulb (trimmed and sliced)
2/3 cup white wine
8 ounces pappardelle pasta
2 tablespoons parsley (fresh chopped to garnish)
salt and pepper

Steps:

  • Put the saffron threads, sun dried tomatoes and thyme into a bowl with 1/4 cup boiling hot water. Soak for 30 minutes.
  • Wash the shrimp and carefully remove and discard the shells, but leave the heads and tails intact. Pull the head from each squid and discard the quill. Cut the tentacles from the head and rinse under cold water. Pull off and discard the outer skin and cut the flesh into 1/4 inch rings. Cut the monkfish into 1" cubes. Set aside.
  • Put the garlic, onions and fennel into a pan with the wine. Cover and simmer for 5 minutes until tender. Stir occassionally.
  • Stir in the monkfish and the saffron mixture. Cover and cook 3 more mins, then stir in the shrimp and the squid. Cover and cook gently (do not overcook) for 1- 2 minutes.
  • Meanwhile, cook the pasta in a large saucepan of boiling, salted water according to the instructions until just under el dente. Drain throughly.
  • Divide the pasta among four serving dishes and top with the sauce, sprinkle with parsley and serve immediately.
