Number Of Ingredients 6

1 C butter or oleo
½ C confectioners' sugar
1 Tbl water
1 tsp vanilla extract
2 ¼ C sifted flour
¾ C finely chopped nuts

Steps:

  • Preheat oven 400; Cream butter and sugar till light and fluffy. Add water and vanilla. Gradually add flour, nuts beating well Roll into 1 inch balls. Place 1 inch apart on ungreased cookie sheet Bake at 400 for 10 min. till light brown on bottom Cool on wire racks about 10 min Then roll in 1 cup of confectioners' sugar. When completely cool, roll again in sugar.

1 C. soft butter
1/2 C. sugar
2 t. vanilla
2 C. sifted flour
2 C. ground pecans
1 C. whole dates, cut up

Steps:

  • Cream butter and sugar. Add vanilla and mix. Add flour and mix. Blend in pecans and dates. Roll by teaspoon size into balls. Refrigerate 1-2 hours. Bake in a 350 degree oven on a greased cookie sheet for 20 minutes. WATCH! Remove from pan and roll in powdered sugar. Sprinkle again with powdered sugar after cookies have cooled.

This takes awhile and is a labor of love but oh so worth it. These are the kind of cookie i look forward to every Christmas. YUM! (i can't remember how many this makes, so the servings are a guesstimate, as are the cooking times!)

1 cup butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups flour
1/2 teaspoon salt
1 -2 cup walnuts or 1 -2 cup almonds, very finely chopped
powdered sugar

Steps:

  • Beat together butter and 1 cup powdered sugar until thouroughly mixed.
  • add vanilla and almond extracts.
  • stir in flour, salt, and nuts.
  • Roll into balls.
  • Bake at 350 until done but NOT brown. (sorry, i don't know the exact time!).
  • Roll in powdered sugar while hot.
  • Roll again when cold.

My mom has been making these for Christmas ever since I can remember! It's just not Christmas until I make them.

2 c butter, softened
4 c all purpose flour
4 c walnuts, chopped
1 c sugar
4 tsp vanilla extract
1 tsp salt

Steps:

  • 1. Cream the butter, sugar, and vanilla til fluffy and light.
  • 2. Mix together flour and salt, and add to creamed mixture. Stir in the nuts.
  • 3. Shape into 1" balls and place 1 1/2" apart on cookie sheet. Bake for 20 min at 325 degrees.
  • 4. Cool on cookie rack and then roll in powdered sugar.

1/4 c shortening
2 1/4 c sifted flour
1/2 tsp salt
1/2 tsp vanilla extract
1 c nuts
powered sugar for coating

Steps:

  • 1. Preheat oven to 400 degrees. Mix together all ingredients well.
  • 2. Make balls about the size of small walnuts. Bake for 14-17 minutes.
  • 3. Roll in powdered sugar while still warm.
