RUSSIAN TEA BALLS (MEXICAN WEDDING CAKES)
Steps:
- Preheat oven 400; Cream butter and sugar till light and fluffy. Add water and vanilla. Gradually add flour, nuts beating well Roll into 1 inch balls. Place 1 inch apart on ungreased cookie sheet Bake at 400 for 10 min. till light brown on bottom Cool on wire racks about 10 min Then roll in 1 cup of confectioners' sugar. When completely cool, roll again in sugar.
DATE PECAN BALLS (RUSSIAN TEA CAKES)
Steps:
- Cream butter and sugar. Add vanilla and mix. Add flour and mix. Blend in pecans and dates. Roll by teaspoon size into balls. Refrigerate 1-2 hours. Bake in a 350 degree oven on a greased cookie sheet for 20 minutes. WATCH! Remove from pan and roll in powdered sugar. Sprinkle again with powdered sugar after cookies have cooled.

This takes awhile and is a labor of love but oh so worth it. These are the kind of cookie i look forward to every Christmas. YUM! (i can't remember how many this makes, so the servings are a guesstimate, as are the cooking times!)

- Beat together butter and 1 cup powdered sugar until thouroughly mixed.
- add vanilla and almond extracts.
- stir in flour, salt, and nuts.
- Roll into balls.
- Bake at 350 until done but NOT brown. (sorry, i don't know the exact time!).
- Roll in powdered sugar while hot.
- Roll again when cold.

- 1. Cream the butter, sugar, and vanilla til fluffy and light.
- 2. Mix together flour and salt, and add to creamed mixture. Stir in the nuts.
- 3. Shape into 1" balls and place 1 1/2" apart on cookie sheet. Bake for 20 min at 325 degrees.
- 4. Cool on cookie rack and then roll in powdered sugar.

We put the nuts in a food processor until it is like a flour because someone in the family does not like nuts....
