Mushrooms baked with sour cream and cheese is one of our family favorites. This delicious vegetarian dish can be served alongside a salad as a complete meal.

4 tablespoons vegetable oil, divided
7 cups quartered button mushrooms
1 cup sour cream
1 onion, chopped
salt and ground black pepper to taste
1 ΒΌ cups shredded Gouda cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat 2 tablespoons oil in a skillet over medium heat. Increase heat to high and add mushrooms. Cook and stir until golden brown, 6 to 8 minutes. Do not cook so long so that they begin to release a lot of liquid. Add sour cream, mix well, and transfer mixture to a casserole dish.
  • Heat remaining 2 tablespoons oil in a second skillet over medium heat and cook onion until soft and translucent, 4 to 6 minutes. Distribute onions over mushrooms and season with salt and pepper. Sprinkle with Gouda cheese.
  • Bake in the preheated oven until the cheese has melted and is golden brown, 15 to 20 minutes.

The next time you are looking for something a little different to serve to guests, try this. This looks elegant mounded on a lettuce leaf and served with cucumber or toast rounds.

Number Of Ingredients 8

3 tablespoons butter
3 tablespoons onions, minced
1/2 lb mushroom, finely chopped
1 large garlic clove, minced
1/4 teaspoon nutmeg
1 tablespoon dry vermouth
1 -2 tablespoon mayonnaise
salt and pepper, to taste

Steps:

  • Melt butter in a large skillet and saute onion for about 1 minute. Add mushrooms, garlic, and nutmeg; continue to saute for 4-5 minutes, until very soft.
  • Add vermouth, cook another minute or so, then remove from heat and cool. Stir in mayonnaise, salt and pepper to taste.
  • Chill, covered, until ready to serve.

2 tablespoons butter or 2 tablespoons extra virgin olive oil
1 medium onion, diced
2 garlic cloves, minced
1 lb button mushroom
2 tablespoons fresh lemon juice
3 tablespoons sour cream
salt and pepper
2 tablespoons fresh dill, chopped (to garnish)

Steps:

  • Trim mushrooms--remove tough ends. Cut into a 1/4-inch dice. If you dice them too small, they'll turn pasty.
  • Put butter (or oil) in skillet and turn heat to medium. A minute later, add onion and garlic. Cook till softened, stirring occasionally, about 5 minutes. Add mushrooms. Raise heat to med-high, and cook until lightly browned, about 10 minutes.
  • Remove from heat and stir in lemon juice and sour cream. Season with salt and pepper. Garnish with dill.

1 medium onion, diced
2 garlic cloves, minced
1 pound button mushrooms, trimmed and cut into 1/4-inch dice
2 tablespoons fresh lemon juice
3 tablespoons sour cream
Salt and black pepper to taste
2 tablespoons chopped fresh dill for garnish

Steps:

  • Put the butter in a skillet and turn the heat to medium. A minute later, add the onion and garlic and cook until softened, stirring occasionally, about 5 minutes. Add the mushrooms, raise the heat to medium-high, and cook until lightly browned, 10 minutes or so.
  • Remove from the heat and stir in the lemon juice and sour cream. Season with salt and pepper, then garnish with dill and serve.

From vegelicacy.com. I love mushroom ravioli with cheese sauce so think these would be good also. Like that this is smaller batch. Am unsure of how long this takes to do but think it might take quite awhile. Also think dough might get tough if handled too much. Like the idea of salt and bay leaf in water later. Other places say you can make pelmeni and freeze raw and then cook from frozen state which would be great for busy families.

500 g champignon mushrooms
1 onion
2 cups flour
5 tablespoons oil
2 teaspoons salt, divided
2 bay leaves

Steps:

  • Wash the mushrooms, cut them into small cubes.
  • Peel the onion, cut it finely.
  • Heat the dry skillet over high heat, add the mushrooms, cover with a lid. Once the mushroom moisture is released, take off the lid and cook until the water evaporates.
  • Then add 1 tablespoon oil, onion and saute over low heat for 10 minutes. Turn off the heat and allow to cool.
  • Meanwhile make the dough. In a bowl mix together the flour, 1 teaspoon salt, 3/4 cup of just boiled water and 4 tbsp oil. Knead well until the dough is smooth and elastic.
  • Take about 1/4 of the dough, roll it out into a thin (but not transparent) sheet. Using a small glass, cut into 2.5-inch (6 cm) circles. Take the scraps, add more dough and repeat the procedure until all the dough is cutted into nice circles.
  • Put some filling in the center of each round.
  • Fold over and using your fingers press tighly the edges together to create a half-moon shape.
  • Next, bring the two ends together and pinch them. Make sure there is no holes in your pelmeni. Repeat for all the dough, you will get about 40 pelmeni at the end.
  • Bring a pot of water to boil, salt to taste (1 tsp), add 2 bay leaves. Put the pelmeni into boiling water, and cook, stiring carefully until they all float to the top.
  • After boiling, cook for 5-6 minutes over low heat. Serve with olive oil, sprinkle with black pepper and chopped parsley or dill.

1 1/2 cups milk
1 package granular yeast
1 1/2 cups unbleached white flour
1/2 cup buckwheat flour
1/2 teaspoon salt
1 teaspoon sugar
4 eggs, separated
1/4 pound unsalted butter, melted
6 ounces red caviar
2 cups sour cream

Steps:

  • Scald the milk and set aside.
  • Dissolve the yeast in one-fourth cup warm water.
  • Sift the white flour into a bowl, add the buckwheat flour, salt and sugar.
  • Beat the egg yolks until thick. When the milk has cooled to lukewarm, add the yolks and three tablespoons of the melted butter. Add the yeast. Mix well and pour into the flour. Mix thoroughly, removing any lumps. Set aside in a warm place lightly covered with a towel for about two hours, or until doubled in bulk.
  • Whip the egg whites until they stand in stiff peaks and fold them into the batter.
  • Lightly butter a small frying pan. Pour in just enough of the pancake mixture to coat the bottom of the pan. When the mixture begins to bubble, turn the pancake over and cook lightly on the other side. Wrap the pancakes in a napkin and keep them warm in the oven while you cook the others. Serve in a pile, wrapped in a napkin.
  • Serve the caviar, the sour cream and the remaining melted butter in small bowls on the table. Each person puts a pancake on a plate, butters it, adds sour cream and caviar, and rolls it like a crepe.

1 teaspoon vinegar
1 large onion, minced
5 tablespoons tomato paste
2 tablespoons vegetable oil
1 bell pepper, seeded & minced
1 teaspoon powdered sugar
salt & pepper

Steps:

  • Bake eggplant, allow to cool, skin, & mince finely.
  • Saute onion & pepper in 1 tb of oil until onion is browned.
  • Add adding remaining oil.
  • Add tomato paste, stir well & simmer for 5-mins.
  • Add vinegar, sugar, salt & pepper & ceggplant.
  • Stir well & cook slowly for 30-mins on a low-heat.
  • If necessary you may add more oil to prevent mixture from sticking & thus burning.
  • Remove from heat, cool to room temp, then refrigerate.
  • Serve cold on thinly sliced black bread with butter & freshly chopped onion if desired.

Number Of Ingredients 8

1 tablespoon extra virgin olive oil
4 green onions, green parts only, chopped fine (scallions)
1/2 lb portabella mushroom, cut in 1 1/2-inch cubes (or use baby portobellos, also known as cremini)
5 medium garlic cloves, coarsely chopped
1/2 teaspoon fresh thyme leave, chopped
2 teaspoons fresh lemon juice
4 teaspoons balsamic vinegar
1/4 teaspoon fresh ground black pepper

Steps:

  • In a large saucepan over medium heat, warm up 1 teaspoons of olive oil and saute the green onion for 2 minutes. Set aside.
  • Heat the remaining oil. Add mushrooms, garlic, and thyme; saute until tender. Don't overcrowd the pan, or mushrooms will be poached. Work in 2 batches.
  • Move the green onions and mushrooms to a food processor. Use the pulse button, and process until coarsely chopped(not mushy!). Don't overprocess.
  • Return the mushrooms to the pan. Add lemon juice, vinegar, and pepper. Saute over medium high heat until the liquid has evaporated, 1-2 minutes.
  • Serve in a small crock as a spread for toast, pita crisps, veggies, lettuce, etc. Enjoy!

BLINI WITH MUSHROOM CAVIAR

In Russian kitchens, mushroom caviar is made with cooked mushrooms and lots of sour cream. I use canned tomatoes in this version, and the result makes a savory topping for blini (and for latke, I found, as I tested the recipe during Chanukah). Make sure to finely chop the mushrooms.

2 tablespoons extra virgin olive oil
2 shallots, minced
1 pound mushrooms, trimmed and finely chopped
2 garlic cloves, minced
Salt
freshly ground pepper
1 14-ounce can chopped tomatoes, with juice
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh dill
1 batch buckwheat or cornmeal blini

Steps:

  • Heat the olive oil in a large, heavy nonstick skillet over medium heat. Add the shallot. Cook, stirring, until tender, three to five minutes. Add the mushrooms. Cook, stirring, until they begin to sweat, and add the garlic, salt and pepper. Cook, stirring often over medium heat, for five minutes until the mushrooms are tender and fragrant. Add the tomatoes, and bring to a simmer. Cover, reduce the heat and simmer for 30 minutes. Stir in the lemon juice, and taste and adjust the seasonings. There should be very little liquid in the pan. If there is, continue to simmer uncovered until most of the liquid has evaporated. Stir in the dill, and serve.
