It's well known that Russians have some basic cooking rules: 1) Try to use sour cream everywhere you can, and 2) Never throw anything away. This is a combination recipe of those two rules, a no cook dessert (or even breakfast) which is super delicious, creating a really yummy sauce without cooking at all! I make this when I have leftover strawberries that are a bit soft but still edible. Kids go insane over this!

20 average-sized strawberries, chopped
1/2 cup sour cream
1 tablespoon sugar

Steps:

  • Mix all ingredients together well.
  • Wait a minute or so before serving so that the sour cream sauce will be slightly pinkish from the juice created by the strawberries and sugar.
  • Enjoy!
  • Note: This will NOT work with any other berry, so strawberries only!

1 envelope unflavored gelatin
1/2 cup cold water
1 cup heavy whipping cream
3/4 cup sugar
1 cup sour cream
1/2 teaspoon vanilla extract
1 package (10 ounces) frozen sweetened raspberries, thawed
Fresh raspberries and mint sprigs, optional

Steps:

  • In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Bring to a boil; cook and stir until gelatin is dissolved. Remove from the heat; set aside. , In another saucepan, heat whipping cream and sugar over medium heat until sugar is dissolved and mixture is lukewarm. Remove from the heat; stir in gelatin mixture until completely dissolved. Cover and refrigerate until slightly thickened, about 30 minutes., Stir in sour cream and vanilla. In each of four parfait glasses, place a scant 1/4 cupful of cream mixture; top each with a rounded tablespoonful of raspberries. Repeat layers. Top each with scant 1/4 cup of cream mixture. , Cover and refrigerate for 3 hours or until set. Just before serving, garnish with fresh raspberries and mint if desired.

In Russia the jam is prepared so that the fruit remains whole because Russians seldom spread their jam on bread or toast but prefer to eat it from a dish with a teaspoon at evening tea. Number Of Ingredients 4

1 pound(s) fresh strawberries
1/2 cup(s) grain alcohol or gin
4 cup(s) sugar
1 cup(s) water

Steps:

  • Snip the leaves off the top of the strawberry without taking out the attached stem. Spread the berries out on a flat pan or dish. Sprinkle with the alcohol or gin, then with 1 cup of the sugar. Let the dish stand in the refrigerator overnight.
  • Make a syrup the next day of the remaining sugar and the water and bring to a boil several times. Skim and cook until the syrup runs smoothly off the back of a spoon.
  • Drop the berries into the syrup. Quickly boil up three times, taking the the pan off the heat after each boiling. Then cook slowly over a gentle heat until a skin begins to form on the syrup. Cool. Put in jars and seal.
