1 cup mayonnaise
1 tbsp salt
1 tbsp sugar
1 tbsp white vinegar
1 tsp ground black pepper
2 cooked beets
3 medium carrots
1 lb dry smoked sausage
1/2 onion
1/2 cabbage
3 garlic cloves

Steps:

  • Boil the beets until they are fully cooked and gather the rest of your ingredients.
  • Combine the mayonnaise, salt, sugar, vinegar and pepper in a large bowl. Whisk until creamy and set it aside.
  • Clean and peel carrots, beets, onion. Dice up the sausage.
  • By hand or using a food processor, slice the cabbage, carrots, and beets into thin strips. Dice the onions. Place the veggies in a bowl with the dressing ingredients (if you are prepping the salad ahead of time, keep the veggies and dressing stored in separate containers).
  • Press the garlic cloves into the salad.
  • Stir to combine and serve right away!

I made this salad for our Easter dinner. It's quite good and loaded with healthy ingredients. I got the recipe from my sisters' mama-in-law. It's so simple to throw together. You can easily adjust the size of the salad because it has equal parts of all the main ingredients. It's made with shredded raw potato that is fried till golden brown and crunchy. It's incredibly fast and easy to make if you use a food processor with a grater attachment.

1/3 medium red cabbage (thinly sliced (1 cup))
1 medium beet (grated (1 cup))
3 medium carrots (grated (1 cup))
1 cup frozen peas (thawed)
1 medium potato (peeled and grated (1 cup))
1/4 cup onion (finely diced)
1 clove garlic (minced)
1/2 to 3/4 cup mayo
Salt and Pepper to taste if needed

Steps:

  • Heat some olive oil until a piece of raw potato sizzles in it. Grate the potatoes and add about 1/4 cup bunches at a time. Fry them until golden brown and crunchy. When potatoes finished frying, place them on paper towel and let them cool before adding them in the mixing bowl.
  • Mince 1 clove of garlic and mix it with 1/2 cup of mayo for the dressing.
  • Place all of the ingredients separately in a large salad bowl until ready to serve.
  • Before serving, mix all of the ingredients together (add more mayo, salt and pepper to taste if needed). Enjoy!

2 tablespoons olive oil

Steps:

  • Grate the beets on the large holes of a box grater into a large bowl. Add the cabbage and set aside.
  • Heat the caraway seeds in a small skillet over medium heat, swirling, until toasted and fragrant, 1 to 2 minutes. Add the oil, vinegar and sugar and stir until the sugar melts. Pour over the beet mixture. Season with salt and pepper. Sprinkle the chives over top.

2 medium beets (or 3 smaller)
1/2 medium red onion
1½-2 cups sauerkraut
1/2 cup green peas (frozen and thawed)
1 large avocado
3 tbsp oil (neutral tasting)
3 tbsp apple cider vinegar (or lemon juice)
1/2 tsp sea salt
pinch black papper

Steps:

  • To steam beets, place in a steamer about 2-3 inches of water. Bring to a boil over high heat.
  • Cut the beetroots into quarters (after peeling), cover and turn down heat to medium. Steam for 15-20 minutes until you can easily pierce the beet pieces to the middle.
  • You can also do this step 1-2 days in advance and assemble a quick beetroot salad with sauerkraut in mere minutes.
  • Dice the beets into small, even cubes. Place them in a large bowl.
  • Then mix in the oil (any neutral taste oil like avocado, sunflower or grapeseed) apple cider vinegar, salt and pepper (which males the vinaigrette dressing). Toss to coat the beets, this will prevent them from bleeding too much red color.
  • Then cube the avocado and add to the bowl along with the onion, peas, and sauerkraut.
  • Gently toss. Taste, add more acidity by adding vinegar, sauerkraut or sauerkraut juice, and salt if needed. The beetroot salad may be garnished with freshly chopped dill or parsley.

¼ cup vegetable oil
2 tablespoons champagne vinegar
salt to taste
3 green onions, chopped

Steps:

  • Bring a large pot of water to a boil, and cook beets until tender, about 30 minutes. Bring a separate pot of water to a boil and cook potatoes and carrots until tender, about 20 minutes. Drain vegetables, cool, and remove skins. Dice and place in a large bowl.

3 whole russet potatoes
2 large carrots, peeled
2 beets, washed with tops and bottoms removed
½ yellow onion, chopped
1 (12 ounce) jar herring fillets, packed in oil
6 tablespoons mayonnaise
salt and ground black pepper to taste

Steps:

  • Bring a large pot of water to a boil. Cook the potatoes, carrots, and beets in the boiling water until cooked but still firm, 15 to 20 minutes for the potatoes, 25 to 30 minutes for the carrots, and 40 minutes for the beets. Allow each to cool to the touch before further handling. Remove and discard the skins from the potatoes and beets. Shred the potatoes, carrots, and beets, keeping them separate.
  • Arrange about half the onion and half the herring fillets in a layer in the bottom of a bowl. Cover the layer with about half of the grated potatoes, then a layer of about half the carrot, and finally about half the beet. Spread about 3 tablespoons of mayonnaise over the salad; season with salt and pepper. Repeat the layers in the same order to finish building the salad. 1 ½ cups thinly sliced potatoes
1 cup thinly sliced beets
4 cups vegetable stock or water
2 tablespoons butter
1 ½ cups chopped onions
1 teaspoon caraway seed
2 teaspoons salt
1 celery stalk, chopped
1 large carrot, sliced
3 cups coarsely chopped red cabbage
black pepper to taste
¼ teaspoon fresh dill weed
1 tablespoon cider vinegar
1 tablespoon honey
1 cup tomato puree
sour cream, for topping

Steps:

  • Place sliced potatoes and beets in a medium saucepan over high heat; cover with stock, and boil until vegetables are tender. Remove potatoes and beets with a slotted spoon, and reserve stock.
  • Melt butter in a large skillet over medium heat. Stir in onions, caraway seeds, and salt; cook until onions become soft and translucent. Then stir in celery, carrots, and cabbage. Mix in reserved stock; cook, covered, until all vegetables are tender, about 10 minutes.
  • Add potatoes and beets to the skillet. Season with black pepper and dill weed. Stir in cider vinegar, honey, and tomato puree. Cover, reduce heat to medium low, and simmer at least 30 minutes. Serve topped with sour cream, extra dill weed, and chopped fresh tomatoes.
