- In a small saucepan, combine the brown sugar, butter, cream and maple syrup. Cook and stir over medium heat until sauce is smooth, 4-5 minutes. Stir in bananas; heat through. Remove from the heat; stir in extract. Serve with ice cream.

- Plump the raisins by soaking them in the rum for at least 30 minutes, and as much as overnight.
- Put all of the ingredients in a blender or food processor and puree.
- Divide between two tall glasses and serve at once.

- To prepare the syrup: Combine SPLENDA® Granulated Sweetener and brown sugar in a small saucepan and whisk in the rum and water. Place over high heat and bring to a boil; let boil approximately 30 seconds, making sure the sugars have dissolved. Remove from the heat and add vanilla, cinnamon sticks and the raisins. Let cool while preparing waffles.
- To prepare waffles: Sift together the first five ingredients into a large mixing bowl. Mix in the pecans.
- Separate eggs. Beat the egg yolks in a medium mixing bowl. Add the buttermilk, melted butter and mashed bananas. Stir in the dry ingredients until just moistened; do not beat.
- Whip the egg whites until stiff peaks form. Fold egg whites gently into the batter. Pour the batter into a preheated lightly oiled or nonstick waffle iron and cook until golden brown but still moist inside, about 5 minutes.
- Remove the cinnamon sticks from the rum raisin syrup and pour syrup over warm waffles.

- In a medium saucepan, combine rum, raisins, and sugar. Bring to a boil over medium-high, remove from heat, and let cool completely, 30 minutes.
- In a food processor, combine bananas and condensed milk and process until smooth, 2 minutes. In a large bowl, using an electric mixer, beat cream on high until stiff peaks form, 2 to 3 minutes. With a rubber spatula, gently fold banana mixture into whipped cream. Fold in rum-raisin mixture. Pour into a 5-by-9-inch loaf pan, cover with plastic, and freeze until firm, about 8 hours (or covered, up to 1 week).
