This is my aunt Ruby's recipe. It is remarkably easy, and delicious. Among my in-laws, Ruby is famous because of this recipe.

1 unbaked pie shell
3 eggs, beaten
1 1/2 cups sugar
2 tablespoons flour
2 tablespoons white vinegar
1 tablespoon vanilla
1/2 cup margarine, melted

Steps:

  • Preheat oven to 300 degrees F.
  • Mix all ingredients well.
  • Pour into unbaked pie shell.
  • Bake for 55-60 minutes.

1 cup white sugar
2 tablespoons all-purpose flour
2 tablespoons distilled white vinegar
2 eggs, beaten
1 cup water
½ teaspoon lemon extract
1 tablespoon butter

Steps:

  • In a double boiler, combine sugar and flour. Mix well, then whisk in vinegar, eggs, and water. Cook until thickened, stirring constantly. Just before removing from heat, stir in butter or margarine and lemon extract.
  • Pour mixture into baked pastry shell. Chill before serving.

1 prebaked pie shell
3 eggs
3 tablespoons butter
2 tablespoons vinegar
1 1/2 cups hot water
3/4 cup sugar
1/2 cup flour
1 pinch salt
3/4 cup chopped toasted walnuts or 3/4 cup pecans, etc

Steps:

  • Combine sugar, flour, and salt in medium bowl.
  • Beat eggs until very light, then add butter, vinegar, and hot water.
  • Add dry ingredients and blend well.
  • Cook over double boiler, stirring constantly until thick.
  • Add 1/2 cup nuts.
  • Pour into pie shell and sprinkle with remaining nuts.
  • Supposed to be "one of the most delicious pies".

Wow--if you've never tried vinegar pie, don't be put off. This pie is really delicious. It's sort of like lemon, sort of creamy, really good. And cheap to make, less hassle than lemon or lime. From an old, reliable pie cookbook--The Farm Journal Complete Pie Book. This dessert is even faster if you use a ready-to-unroll, refrigerated pie crust.

1 (9 inch) baked pie crusts
3 egg yolks, beaten
1 cup sugar
1/4 teaspoon salt
1 3/4 cups boiling water
1/4 cup cider vinegar
1/4 cup cornstarch
1/4 cup cold water
1 teaspoon lemon extract
3 egg whites (for meringue)

Steps:

  • Place egg yolks in top of double boiler over medium heat. Add sugar and salt. Gradually add boiling water, stirring constantly.
  • Add vinegar and cornstarch dissolved in the cold water. Cook over boiling water til thick and smooth, about 12 minutes. Stir to prevent scorching. Do not undercook or filling will have a raw taste.
  • Remove from heat. Add lemon extract and stir til filling is smooth and blended, scraping sides of saucepan with a spatula.
  • Pour hot filling into pie shell. Top lukewarm filling with meringue: Be sure the 3 egg whites are room temperature. Beat with 1/4 teaspoon cream of tartar, 1/4 teaspoons salt, 1/2 teaspoons vanilla in mixer at medium speed only til frothy.
  • Gradually add 6 tablespoons of sugar, beating at high speed until glossy peaks form.
  • Spread meringue to edges of filling in shell to seal the crust. Mound the rest on top and distribute.
  • Bake in 350°F oven 12-15 minutes, until meringue is lightly browned.
  • Let cool at least 30 minutes before cutting. After 30 minutes, put the pie in the fridge until ready to eat.

Another great recipe from the depression era. My great grandmother made this often as she always had eggs on hand. Today, when we make this pie, everybody thinks it's Lemon Meringue Pie. One taste and you'll love this too!

3 egg yolks, beaten
6 tablespoons vinegar
1/3 cup flour
2 cups water
3 tablespoons butter
1 1/2 teaspoons lemon extract
1 (9 inch) pie shells, baked and cooled

Steps:

  • In medium saucepan mix together sugar, beaten egg yolks, vinegar (cider or white), flour and water.
  • Cook over medium heat stirring constantly until thick.
  • Remove from heat.
  • Add lemon extract and butter.
  • Continue to stir until butter has completely melted.
  • Pour into baked pie crust.
  • Top with meringue, made with left over egg whites, and bake in 350ºF pre-heated oven until golden brown.
  • Let cool and serve.

1 cup shortening
¼ teaspoon salt
1 egg
¼ cup cold water
1 tablespoon distilled white vinegar

Steps:

  • Combine flour and salt in a large bowl. Cut in shortening until it resembles coarse crumbs.
  • Mix egg, water, and vinegar together in a separate bowl. Pour into flour all at once and blend with a fork until dough forms into a ball. Divide into 3 equal-sized rounds.
  • Wrap with plastic and chill in a refrigerator until ready to prepare.

2 cups sugar
3 tablespoons all-purpose flour
1/4 to 1/2 teaspoon ground nutmeg
Pastry for double-crust pie
1/2 cup butter, cubed
2/3 cup white vinegar
1 quart hot water

Steps:

  • Preheat oven to 450°. Whisk together sugar, flour and nutmeg; set aside. On a lightly floured surface, roll one-third of pie dough to a 1/8-in.-thick circle; cut into 2x1-in. strips. Layer a deep 12-in. enamel-coated cast-iron skillet or ovenproof casserole with half the strips; sprinkle with half the sugar mixture. Dot with half the butter. Repeat sugar and butter layers., Roll remaining two-thirds of pie dough to a 1/8-in.-thick circle. Place over filling, pressing against sides of skillet or casserole. Cut a slit in top. Add vinegar to hot water; slowly pour vinegar mixture through slit. Liquid may bubble up through crust; this is normal. To catch spills, line an oven rack with foil., Bake until crust is golden brown, about 1 hour. Cover edge loosely with foil during the last 15-20 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack.

RUBY RED GRAPEFRUIT PIE

A Bonnie Beck and I were talking about how we love "Pucker Power" recipes and I was hunting for my key lime recipe when I ran across my ruby red recipe so I figured I would might as well add this too...I hope everyone enjoy this recipe...anyone out there that loves grapefruit as much as my family does will absolutely love...

4 large grapefruit, sectioned ruby red peeled
1 c cane sugar
2 Tbsp cornstarch
1 3/4 c grapefruit juice ruby red
1/8 tsp sea salt
1 pkg gelatin, raspberry (3-oz)
1 pie shell, baked (9-inch)
RECIPE FOR PIE SHELL ( THIS MAKE 2 CUT IN 1/2 AND FREEZE 1/2)
3 c all purpose flour
1 tsp sea salt
1 1/2 c butter, cracked
1 large egg, beaten
5+ Tbsp cold water (add more as needed)
1 Tbsp vinegar white distilled

Steps:

  • 1. Make Crust 2 hours ahead.......or night before I prefer night before....Combine flour and salt in large bowl, add cracked butter cut in with pastry cutter or knives, gradually working butter in till mixture resembles pebbles. This should take about 6 minutes.
  • 2. Lightly beat egg with fork, then add it to mixture next, add water in a Tbsp at a time working it in with your hands or a wooden spoon all the while, add in the vinegar and work in with spoon or hands..
  • 3. Work till just combined if dough is tacky add a little flour to it and work it through. Then remove half the dough from the bowl place in a large plastic freezer bag (do not seal) flatten it out slightly with your rolling pin. After you have flattened out where you want it you can put it in the freezer for later use. (this is a great recipe for these ready to go pie shells)
  • 4. Repeat the steps for the second one and put it in the frig over night or for 1-2 hour before you roll it out and bake in a Preheated oven of 400* 10-12 minutes. Set a side to cool
  • 5. The best part (what goes inside) Peel and section the ruby reds set a side. Combine sugar, cornstarch, juice, salt in a saucepan. Bring to a boil on medium heat cook till clear and thickened, stirring often. Remove from heat. Stir in the Gelatin. Cool until thickened. Spoon a small amount of the mixture into the pie shell. Top with ruby red. Cover with the remaining gelatin mixture. Any remaining ruby red use to decorate the top with if you like you can also decorate with a sprig of sweet mint. Let chill 4 hours or til set.
