- Cook the orzo according to package instructions.

- Coat the bottom of a Dutch oven with olive oil. Add carrots, celery, onion, oregano, Italian seasoning, seasoned salt, salt, and pepper. Saute over medium-high heat until vegetables have softened, 6 to 8 minutes. Add garlic and cook until onion is translucent and garlic scent has lessened slightly, about 4 to 5 minutes.

- Place rotisserie chickens, with juices, in a very large stockpot. Cover with water and bring to a boil. Reduce heat, cover, and simmer for 15 to 20 minutes. Remove chickens and let cool until safe to handle. Remove meat from bones and cut into small pieces.
- Strain stock, if needed, into another container; set aside.
- Combine onions and butter in the stockpot over medium heat. Cook and stir onions until translucent, 5 to 7 minutes. Add garlic and cook for 5 minutes. Stir in carrots and celery. Cook, stirring occasionally, until nearly tender, about 15 minutes. Stir in corn, parsley, and pepper.

A rotisserie chicken is such a great grocery store purchase for meal prep. Not only does it provide a delicious product that saves you time, but you can use all the parts of the chicken in a variety of ways. In this recipe, I'll show you how to make a broth out of the bones and then use that broth and the shredded meat to make a simple yet delicious soup that keeps well in the fridge or freezer. Make sure to store the soup in portions that work for you or your family, so you can easily defrost the amount you need at any one time. I also use my big batch farro recipe to add a grain to the soup without a lot of extra effort.

- For the chicken broth: Add the chicken carcass, thyme, rosemary, oregano, onion, 10 cups cold or room-temperature water, 1 tablespoon salt and 1/4 teaspoon pepper to a 4 1/2-quart Dutch oven or large saucepan. Bring the water to a boil and immediately reduce to a simmer. Simmer until the broth has a rich chicken flavor, about 15 minutes. Strain the mixture, making sure to remove all bones and large pieces; it is okay if some of the dried spices go through your strainer. Either use the broth immediately to make this soup or cool completely, then store in an airtight container in the refrigerator for up to 4 days or in the freezer for 2 to 3 months.
- For the rotisserie chicken, white bean and farro soup: Heat the olive oil in a 4 1/2-quart Dutch oven or large saucepan over medium heat. When the oil is hot, add the parsley and zucchini and cook until the zucchini is softened and just beginning to brown in parts, about 5 minutes; season with salt. Add the escarole, stirring to fold it in evenly with the zucchini to help it cook down. Continue to cook, stirring, until the escarole is completely wilted and any excess water from it has cooked off, about 5 minutes; season with salt.
- Add the chicken broth and bring to a simmer; this will take different amounts of time depending on if you are using broth from the refrigerator or if you are immediately using the broth after making it. Either way, warm the broth through before stirring in the shredded chicken, white beans and farro. Continue to simmer to warm through the last ingredients, about 5 minutes; add salt to taste. Remove from the heat and stir in the lemon juice. Ladle the soup into bowls and garnish with Parmesan.

- Preheat oven to 350°F. Brush 1 side of tortillas with oil; cut in half. Stack halves and cut crosswise into 1/4-inch-wide strips. Spread strips on nonstick baking sheet. Bake until light golden, about 15 minutes. Cool on baking sheet. Sauté garlic, jalapeno and diced yellow onions in the pot before adding broth; Combine broth, water, tomatoes, bay leaf, cumin and red pepper in saucepan; bring to boil. ROTISSERIE CHICKEN MISO SOUP

- Place the miso soup mix on the bottom of a 16-ounce mason jar. Top with the chicken and coleslaw and garnish with sriracha and green onions. Seal jar for transport.
- When ready to eat, open the jar and add 12 ounces boiling water, or to taste, and stir until fully incorporated. Serve immediately.
CHICKEN SOUP FROM ROTISSERIE CHICKEN

- In a large soup pot (or cast-iron Dutch oven) over medium-high heat, place the prepared chicken carcass (I usually break the carcass into smaller pieces to fit into the pot easier). Add chicken stock and enough water to completely cover the chicken carcass. Bring the water just to a boil and then reduce heat to a slow simmer. Let simmer approximately 60 to 90 minutes. The key to a good stock is to bring water to a boil just once at the beginning and then cook at just barely a simmer for the remainder of the cooking time, as long slow cooking is best to extract all the subtle flavors. After cooking, remove the pot from the heat. Remove and discard the chicken bones and any meat pieces (since you have cooked the mixture for a long time, there is no nutritional value left). Strain the remaining liquid to remove smaller particles in the stock (pour the liquid through a fine mesh sieve place over a large pot). Be careful as the stock will be hot! In a large soup pot (or cast-iron Dutch oven) over medium-high heat, place the prepared chicken stock. Bring just to a boil and then reduce heat to medium. Add onion, garlic, carrots, celery, bell pepper, and mushrooms. Add salt and pepper to taste. Cook the vegetables until slightly soft. Increase heat to high and bring to a boil. Add dried egg noodles and cook approximately 20 minutes or until noodles are tender (any type of pasta can be used). After noodles are cooked, reduce heat to low, taste and season soup with additional salt and pepper (if needed). Add the chopped cooked chicken and the cilantro leaves. Let soup simmer until chicken meat is warm.

- Place the trivet into the Instant Pot, and add chicken carcass, garlic cloves and celery leaves, if using. Pour in water
- Place lid on pot, set vent to sealing, and Pressure Cook for 60 minutes on high. Do a quick release, and when pin drops, carefully remove lid and lift trivet and carcass out of pot. Discard carcass. Place a mesh strainer over a large bowl, and carefully pour chicken stock into bowl.
- Hit Sauté on the Instant Pot, and sauté chopped carrots, celery and onions until slightly soft. Hit Cancel
- Pour chicken stock into Instant Pot, and add orzo pasta, if using. Add garlic powder. Place lid on pot, set vent to sealing, and Pressure Cook for 4 minutes
- When pot beeps, do a quick release. When pin drops, carefully remove lid, and stir in cooked chicken. Add sea salt and pepper to taste, if desired

- Mash 2 cans of the navy or great northern beans and set aside. (this is used to thicken soup).
- Heat diced onion in olive oil over medium heat until translucent.
- Add garlic, cumin, coriander, chili powder, salt and pepper to onion mixture.
- Stir in chicken stock.
- Add mashed beans, and blend.
- Add remaining beans, taco seasoning, rotel, lime juice, 1 minced jalapeno and simmer 20 minutes.

- Bring the broth to a simmer in the large stock pot. While you wait for the broth and water to heat up, separate the rotisserie chicken meat from the skin and bones, setting the meat aside for later. Add the skin (optional) and bones to the broth, bring it back up to a simmer and allow it to simmer for about an hour.
- Strain broth through a colander into a large container; reserve broth and discard skin and bones. Return kettle to burner set on medium-high.
- Add oil, then onions, carrots and celery and seasonings. Sauté until soft, about 8 to 10 minutes. Add chicken, broth and sauce. Bring to a simmer. (Can be refrigerated up to 3 days in advance. Return to a simmer before adding the extras of your choice.) If you refrigerate it, any grease will congeal on the top and you can remove it. But, leave a little...adds flavor!
- Add the broth and bring the mixture back up to a simmer.
- Add your favorite noodles, simmering until they reach the desired tenderness.
- Chop the chicken and add it to the cooking noodles.
- Season with salt and pepper to taste.

- Skin and de-bone chicken(s), reserve skins and wings. Pull apart and/or cut up chicken into large pieces and place in pot with skin and wings.
- Add Water, chopped onion, carrots, celery, Bay leaves and thyme. Bring to boil.
- Add chicken base and bouillon.
- Salt and pepper to taste.
- Add noodles about 30 minutes before serving.
- Remove chicken skins, wings and Bay leaves. If desired thicken with corn starch.
