I thought back to my "oh so very poor days" when we would cook a box of pasta, drown it in Italian dressing, and eat it as a meal. When I went looking for a decent Italian dressing to put on it for "old times...

Number Of Ingredients 10

12 oz tri-color rotini pasta
1 c mayonnaise
1/2 c mediterranean italian dressing (or greek dressing)
1/2 tsp sea salt (optional)
1/4 tsp black pepper
1/2 c crushed caesar croutons
3/4 c kalamata (greek) olives sliced
4 oz feta cheese crumbled
1/4 c onion (red or sweet), diced (optional)
1/4 c red bell pepper, diced (optional)

Steps:

  • 1. Prepare 1 12 ounce box of tri-color Rotini pasta per package directions or to desired firmness. I suggest cooking to al dente. Drain in colander, rinse with cold water and set aside.
  • 2. Meanwhile, whisk together the mayonnaise, Mediterranean dressing (I use the Wish Bone brand), the optional sea salt (Feta cheese is salty enough for most people), and black pepper until smooth and creamy. If you can't find the Mediterranean dressing, use an oil based good quality bottled Greek dressing. I have made this using both types of bottled dressings and personally think the Mediterranean Italian gives it a better overall flavor.
  • 3. Place 1/2 cup of Caesar croutons in a plastic storage bag and either "beat them up" or use a rolling pin to crush them. I've found it's not worth the effort of pulling out the food processor for this small task. Stir the crushed croutons into the creamy mixture.
  • 4. Mix in the drained and cooled pasta, Kalamata olives, and crumbled Feta cheese ensuring that the pasta is well coated. If the mixture looks runny, don't fret; the pasta and crushed croutons will absorb the excess liquid. Adding an additional 1/4 cup of crushed croutons would help as well. I've added as much as 1 full cup and found that the next day leftovers were too dry with that amount added. Just keep in mind- the longer this pasta salad sits in the refrigerator while the flavors are mingling, more of the liquid will be absorbed.
  • 5. Stir in the optional diced onion and red peppers. Add additional crumbled Feta cheese to the top for garnish if desired and refrigerate for 1-2 hours prior to serving. If the salad is "too runny", try adding an additional 1/4 to 1/2 cup of crushed croutons.
  • 6. Eat and enjoy! I don't like peppers so I don't use them, but I do love the onions for their texture and taste.

1 (12 ounce) box whole wheat rotini pasta
¼ cup apple cider vinegar
¼ cup olive oil
¼ cup crumbled feta cheese, or to taste
6 leaves fresh basil, chopped
salt and ground black pepper to taste
1 bunch asparagus, trimmed and chopped
3 tomatoes, chopped
2 large carrots, chopped
1 bunch green onions
4 cloves garlic, minced

Steps:

  • Bring a large pot with lightly salted water to a rolling boil. Cook rotini at a boil until the pasta is cooked yet slightly firm to the bite, about 8 minutes; drain.
  • Rinse the pasta with cold water until completely chilled; drain completely.
  • While the pasta cooks, whisk the apple cider vinegar and olive oil together in a large bowl until blended. Stir feta cheese, basil, salt, and black pepper into the vinaigrette.
  • Fold the asparagus, tomatoes, carrots, green onions, and garlic into the vinaigrette to coat evenly.
  • Stir the cooled pasta into the vegetable mixture; toss until evenly mixed.

1 package (1 pound) tricolor spiral pasta
2 medium carrots, shredded
1 large red onion, chopped
1 medium green pepper, chopped
1/2 teaspoon celery seed or 2 celery ribs, chopped
1 can (14 ounces) sweetened condensed milk
1 cup vinegar
1 cup mayonnaise
3/4 cup sugar
1 teaspoon salt
1/2 to 1 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Rinse in cold water and drain; place in a large bowl. Add carrots, onion, green pepper and celery seed. In another bowl, combine the remaining ingredients. Pour over pasta mixture and toss to coat. Cover and refrigerate for 8 hours or overnight.

16 ounces garden rotini pasta
1 1/2 lbs chicken breast tenders
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 large red onion, chopped
1 cup sliced mushrooms
3 large tomatoes, chopped
7 ounces sliced black olives
14 ounces quartered artichoke hearts
1 1/2 cups Italian dressing, of choice
1 cup crumbled feta cheese
2 tablespoons dried parsley
garlic salt
black pepper
Mrs. Dash seasoning mix

Steps:

  • Cook pasta according to package directions. Drain, rinse and set aside.
  • While the pasta is cooking, cook the chicken breast tenders. Garlic salt, pepper and Mrs. Dash on both sides of the tenders and sautee them in olive oil until done on medium high heat (about 6 minute per side). Remove from pan and let cool.You can chop some of the veggies while the chicken is cooking. Once cool the chicken tenders can be shredded or chopped - your preference.
  • Once all veggies are chopped, chicken is cooked, and pasta is cooked and drained, add all ingredients together except for the tomatoes, and toss with Italian dressing.
  • Place in the refrigerator until salad is cool. Add the tomatoes before serving so they don't get smushy.
  • Serve with a crusty garlic bread and Enjoy!
  • "Cook" time is chill time.

1 lb tri-color rotini pasta, cooked and drained
1 (3 inch) piece salami, diced
1 whole pepperoni, diced
1 (3 inch) piece provolone cheese or 1 (3 inch) piece monterey jack cheese, diced
1 green pepper, washed and diced
2 -3 tomatoes, washed and diced
mushroom (optional)
artichoke (optional)
olive (optional)
3/4 cup canola oil or 3/4 cup vegetable oil
1/2 cup white vinegar
1 tablespoon oregano
1 tablespoon salt
1 teaspoon pepper

Steps:

  • In a large salad bowl, put together all the above salad ingredients.
  • Make the salad dressing at least 2 hours (preferably the night before).
  • Mix all the ingredients together and let them"set".
  • This makes more dressing than you need so put only what you need on the salad and toss thoroughly.

1 lb garden rotini pasta, cooked al dente'
2 large shallots, chopped
2 c irish cheddar cheese,cubed or cheese of your choice
2 stalk(s) celery, chopped or more if desired
4 medium roma tomatoes- rough chopped
8 oz jar roasted red peppers, drained & chopped
1 1/2-2 Tbsp fresh horseradish (from refrigerated section
1 jar(s) garlic vinaigrette dressing 12 ounces, (1 1/2 cups)

1 Tbsp granulated garlic (not garlic salt)
3-4 clove fresh garlic, minced

  • 1. These are some of the main ingredients for the salad. Cook pasta until Al Dente, according to directions on package. Then rinse drain an set aside till needed.
  • 2. Chop veggies and cube cheese and set aside till needed.
  • 3. Add the Vinaigrette and fresh horseradish to a large bowl and whisk together until blended.
  • 4. Add in the chopped vegetables, celery, shallots, minced garlic cloves and cubed cheese, then stir to blend together.
  • 5. Add in the chopped tomatoes and roasted red peppers and stir to mix together.

Full of colorful, crunchy vegetables and bursting with flavor, this looks really pretty on a buffet table. By the time I was in middle school, I knew that rotini and vegetables in the kitchen was the sign that we were headed to a potluck soon. This was and is my mom's go-to recipe for PTA meetings, school plays, recitals, and baby and bridal showers.

Yield makes 6 servings

Number Of Ingredients 9

1 pound dried rotini or farfalle
1 to 2 tablespoons extra-virgin olive oil (optional)
1 pint cherry or grape tomatoes
1/2 large red onion, thinly sliced
1 green bell pepper, cored, seeded, and coarsely chopped
1 4-ounce can sliced mushrooms, well drained
2 teaspoons dry salad seasoning
1/2 cup Balsamic Vinaigrette (page 159) or bottled Italian salad dressing
1/4 cup grated Parmesan cheese, or to taste

Steps:

  • Bring a large pot of salted water to a boil over high heat. Stir in the pasta and cook until al dente, about 8 minutes or according to the package directions. Drain the pasta and rinse with cold water to stop the cooking. Drain very well and transfer to a large mixing bowl. If the pasta will need to sit on its own for a little while, add 1 to 2 tablespoons olive oil, if desired, to prevent sticking, and toss to coat.
  • Place the pasta in a large bowl. Add the tomatoes, red onion, bell pepper, mushrooms, salad seasoning, and dressing.
  • Toss gently until well mixed and coated with dressing. Sprinkle over the Parmesan cheese and serve.
