Number Of Ingredients 8

1-1/4 cups sugar, divided
4 teaspoons grated lemon zest, divided
1 cup butter, softened
2 large egg yolks, room temperature
3/4 teaspoon dried rosemary, crushed
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°. In a small bowl, combine 1/4 cup sugar and 1 teaspoon lemon zest. In a large bowl, beat butter and remaining sugar until light and fluffy. Beat in egg yolks, rosemary and remaining lemon zest. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture., Shape dough into 1-1/4-in. balls; roll in sugar mixture. Place 2 in. apart on parchment-lined baking sheets. Flatten to 1/4-in. thickness with bottom of a glass. Sprinkle tops of cookies with remaining sugar mixture. Bake 12-15 minutes or until edges are golden brown. Cool on pans 2 minutes. Remove to wire racks to cool., Freeze option: Freeze shaped balls of dough on baking sheets until firm. Transfer to resealable plastic freezer bags; return to freezer. Prepare and bake cookies as directed.

Number Of Ingredients 9

4 ounces unsalted butter
1/4 cup sugar
1 teaspoon finely chopped rosemary
2 egg yolks
1 teaspoon vanilla
1 cup flour
1/3 cup corn flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt

Steps:

  • Cream butter, sugar, rosemary, and lemon zest with electric mixer 3 minutes. Beat in egg yolks and vanilla.
  • Whisk together both flours, baking powder and salt in separate bowl.
  • Shape into 2 1-inch wide logs. Wrap in wax paper and chill 2 hours.
  • Preheat oven to 325 degrees. Spray 2 baking sheets with cooking spray. Slice logs into 3/8 inch thick rounds. Press one side of each cookie into sugar. Place sugar side up on baking sheets. Bake 15 minutes, or until golden brown on bottoms. Trasfer to wire racks to cool.

1 cup (2 sticks) unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 egg white, beaten
1 teaspoon pure vanilla extract
2 1/2 cups sifted all-purpose flour
1 tablespoon finely chopped fresh rosemary
3/4 teaspoon coarse salt
1/2 cup fine sanding sugar

Steps:

  • Put butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy, about 2 minutes. Mix in whole egg and vanilla. Reduce speed to low. Add flour, rosemary, and salt, and mix until combined.
  • Halve dough; shape each half into a log. Place each log on a 12-by-16-inch sheet of parchment. Roll in parchment to 1 1/2 inches in diameter, pressing a ruler along edge of parchment at each turn to narrow log. Transfer to paper-towel tubes to hold shape, and freeze until firm, about 1 hour.
  • Preheat oven to 375. Brush each log with egg white; roll in sanding sugar. Cut into 1/4-inch-thick rounds. Space 1 inch apart on baking sheets lined with parchment. Bake until edges are golden, 18 to 20 minutes. Let cool on sheets on wire racks. Store in airtight containers at room temperature up to 3 days.

1 cup unsalted butter
1 cup walnut halves, toasted and chopped small (none larger than pea-sized)
1 tablespoon rosemary, minced
2 cups flour
1/2 teaspoon salt
1/2 cup granulated sugar
1/4 cup confectioner sugar (or another 1/4 cup granulated, if you don't have confectioners)

Steps:

  • Melt the butter in a medium sauce-pan or skillet over medium heat. Swirl occasionally and cook until all foaming has subsided, the butter is dark tan colored with little black specks, and smells fantastically nutty. Transfer to a heat-proof bowl and let it cool to room temperature. Mix the walnuts, rosemary, and all the dry ingredients together in the bowl of a standing mixer fitted with a paddle attachment (or medium-sized bowl with a hand mixer). While beating on medium-speed, add the cooled brown butter in several additions until it's completely incorporated and the dough looks grainy. The dough should hold together when you press some in your fist - if not, add a few teaspoons of cold water until it does. Turn the dough out onto your work surface and shape it into two thick logs about 1 1/2 - 2 inches in diameter. The dough will be pretty crumbly. Wrap the logs tightly in plastic wrap and freeze until hard. When ready to bake, heat the oven to 350°F. Prepare two baking sheets with parchment paper. Take out and unwrap one of the logs. Slice it into 1/4 inch round cookies using a sharp knife and transfer to the cookie sheet. Place cookies about a half inch apart. Bake for 10 minutes, or until lightly browned around the edges. Allow to cool on baking sheet before transferring them to rack.

A sweet take on a usually savory herb! This soft cookie has tons of deep, rich flavors. The rosemary in this is fairly strong, so consider using only 1 teaspoon for a more subtle flavor. Additionally, this is not a super sweet cookie, so consider upping the sugar to 3/4 c. if you have a sweeter taste.

2/3 cup brown sugar (I used dark brown)
2 teaspoons rosemary, finely chopped (fresh rosemary is best)
1 egg
1 teaspoon molasses
1 1/4 cups flour
1/4 teaspoon salt
1/4 teaspoon baking soda

Steps:

  • Preheat oven to 350.
  • Brown the butter my melting in a light-bottomed saucepan (so you can see when the butter turns brown), stirring frequently, until the butter browns and develops a nutty aroma. Set aside to cool.
  • Sift the flour, salt, and baking soda together.
  • In a mixing bowl, mix the brown butter and brown sugar together.
  • Add the rosemary, egg, and molasses.
  • Add the flour mixture.
  • Drop 1 tablespoon of dough onto baking sheets (I use a small 1T cookie scoop).
  • Bake for 7-8 minutes, until the edges begin to brown.

2 cups flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1 cup butter, softened
1 cup sugar
1 large egg
1 tablespoon fresh rosemary, chopped

Steps:

  • Mix together flour, salt, and baking powder.
  • In another bowl, cream butter and sugar with a hand mixer.
  • Add in egg, and beat until well combined.
  • Slowly add the dry ingredients, beating until just combined into a dough (do not overmix).
  • Add chopped rosemary and beat for 20 seconds, until mixed inches
  • Roll dough into a log (or two), wrap in waxed paper, and refrigerate for 4 hours or overnight. The dough can be frozen at this point.

1 c butter (softened)
3/4 c sugar (plus more to roll the cookie log)
1 egg
1 tsp vanilla extract (pure)
2 1/2 c flour (can use almond flour)
1 Tbsp fresh rosemary, chopped really fine
1 Tbsp lemon zest (fresh or jarred)
3/4 tsp course salt (kosher)

Steps:

  • 1. Use a mixer to cream butter and sugar. Mix in extract and egg combine well.
  • 2. Add in the flour, rosemary, lemon and salt. The mixture will be very dense.
  • 3. Divide dough into two balls and roll into logs. Wrap with plastic wrap and freeze. Preheat the oven to 375F. Roll the logs in sugar, cut into 1/4" slices. Place on a silpat mat or parchment paper.
  • 4. Bake 15 minutes or until edges are just lightly gold. They will continue to firm up after you remove them from the oven.
